RO-TEL MEATLOAF
Spicy!! I have made this recipe with ground chicken, turkey and meat loaf mixture and it has been delicious with all and any of them. I usually substitute dried minced onion for fresh because I hate the taste and I hate chopping onions!!!!

Steps:
- Preheat oven to 375 degrees.
- Mix all ingredients well in a large bowl.
- Pack into an ungreased 8 1/2 by 4 1/2 by 2 1/2 inch loaf pan.
- Bake for 1 hour.
- Drain off all extra pan juices.
- Let sit for 5 minutes then serve.
- I like to serve this with steamed tortillas, brown rice and a green salad.

SPICY MEXICAN MEATLOAF
I cut down on preperation time by mixing this together in my KitchenAid stand mixer. To serve, cut into one inch slices and top with Pico de Gallo.

Steps:
- Finely chop onion and bell pepper.
- Mix together all ingredients.
- Mold into a casserole dish leaving channels on the side for the fat to drain.
- Cook uncovered at 350 degrees for 1 hour 30 minutes.
- Drain off fat.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Heat butter in a large heavy skillet over medium heat; cook and stir onion, green onions, carrot, celery, and garlic until fragrant, about 5 minutes. Cover skillet with a lid and cook, stirring occasionally, until carrot is tender, about 5 more minutes. Stir 1/3 cup ketchup, Worcestershire sauce, salt, and pepper into vegetable mixture; cook until warmed through, about 1 minute.
- Mix ground beef, sausage, vegetable mixture, bread crumbs, parsley, and eggs in a large bowl; form into a loaf and place in a rectangular baking pan with 2-inch high sides. Cover loaf with remaining 1/3 cup ketchup.
- Bake in the preheated oven until no longer pink in the center, about 1 hour. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

- Preheat oven to 375. Combine all ingredients, except chili sauce. Spread into ungreased loaf pan and bake 1 hour. Drain and spoon chili sauce over. Bake 15 more minutes.

- 1. Preheat oven to 375 degrees. Lightly spray pan with non stick cooking spray. In a large bowl, Mix Ground Beef, Rotel, Egg (slightly beaten), bread crumbs/quick oats, and onion. In Meatloaf Pan, mold 1/2 mixture & place into pan, making sure ends are sealed.
- 2. Once first half of meatloaf is in place, arrange string cheese sticks on top of this half; pressed into meatloaf. Mold and place the remaining meatloaf mixture on top, making sure sides & end are sealed. Layer Ketchup on top, then place in the oven for one hour.
THE MOST EASY AND DELISH MEATLOAF EVER!
This meatloaf only calls for a few easy ingredients, no chopping whatsoever! If you wish to add ketchup on top, remove the meatloaf at 50 minutes, add ketchup, then return to oven for the remaining 10 minutes.
