2 lb green beans, trimmed
8 tablespoons unsalted butter, 1 stick, divided
2 medium white onions, thinly sliced
1 ½ lb cremini mushroom, sliced and stemmed
5 cloves garlic, sliced
3 tablespoons all purpose flour
1 cup milk
½ cup heavy cream
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
1 cup chicken broth, or vegetable broth
½ cup grated parmesan cheese
1 cup fried onion

Steps:

  • Preheat the oven to 400˚F (200˚C).
  • In a large pot of salted boiling water, blanch the green beans for 3 minutes, until tender and bright green. Drain and transfer to a 9x13-inch (23x33 cm) baking dish.
  • Melt 4 tablespoons of butter in a large pan over high heat. Add the onions and cook for 8 minutes, until softened and translucent.
  • Add the mushrooms and cook for 5 minutes, until browned. Add the garlic and cook just until fragrant, about 1 minute.
  • Transfer the vegetable mixture to the casserole dish with the green beans. Wipe out the pan.
  • Melt the remaining 4 tablespoons of butter in the same pan. Add the flour and stir to combine. Cook until a golden brown roux forms, for 5 minutes.
  • Add the milk, heavy cream, salt, pepper, chicken broth, and Parmesan cheese, and stir to combine. Reduce the heat to medium-low and cook until the sauce is thickened, about 10 minutes.
  • Pour the sauce evenly over the vegetables in the casserole dish and toss until everything is well coated. Cover with foil.
  • Bake for 20 minutes, then remove the foil and bake for another 10 minutes.
  • Top the casserole with the fried onions, then serve.

1 (16 ounce) package frozen whole green beans, thawed
4 slices bacon
½ medium onion, chopped
½ red bell pepper, seeded and diced
¼ cup dry white wine or vermouth
¼ cup milk
2 tablespoons butter
1 (10.75 ounce) can condensed cream of mushroom soup
1 tablespoon soy sauce
salt and pepper to taste
½ cup shredded mozzarella cheese
½ cup canned French fried onions

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C).
  • Fry bacon in a skillet over medium-high heat until crisp. Drain on paper towels, crumble, and set aside. Drain most of the bacon grease from the pan, and place over medium heat. Add the onions and bell pepper; cook and stir until tender. Stir in the wine, scraping all of the bits of bacon from the bottom of the pan.
  • Mix in the butter, milk, soup, and soy sauce. Season with salt and pepper. Stir in the green beans and bacon until evenly coated. Fold in cheese, then transfer to a 9x13 inch baking dish. Sprinkle with French fried onions.

2 tablespoons olive oil, plus more for drizzling
½ medium yellow onion, diced
12 oz mushroom, chopped
2 cloves garlic, minced
1 tablespoon soy sauce
3 tablespoons all-purpose flour
salt, to taste
pepper, to taste
2 cups non-dairy milk
1 ¼ cups fried onion, divided

Steps:

  • Preheat the oven to 375°F (190°C).
  • Bring a small pot of water to a boil, then place a strainer over the top. Add the green beans to the strainer, cover, and steam for 10-15 minutes, or until fork-tender. Set aside.

½ lb green beans, trimmed and halved crosswise
1 tablespoon unsalted butter
4 oz button mushroom, sliced
½ teaspoon ground black pepper
2 cloves garlic, minced
1 tablespoon all purpose flour, plus more for dusting
⅓ cup vegetable broth
½ cup heavy cream
1 cup shredded cheddar cheese
1 tube store-bought crescent roll dough
¾ cup french fried onion

Steps:

  • Preheat the oven to 400°F (200°C). Grease a 12-cup muffin tin with nonstick spray.
  • Bring a large pot of salted water to a boil. Prepare an ice bath in a large bowl and set nearby.
  • Add the green beans to the boiling water and cook for 4 minutes, until bright green and slightly tender. Drain the green beans, then transfer to the ice bath. Let cool, then drain and set aside.

  • In a medium bowl, mix together green beans, soup, and French fried onions.
  • Spray down a medium-sized baking sheet with nonstick cooking spray and arrange onion rings so that they are all 1.5-2 inches (4-5 cm) apart.
  • Using a spoon or spatula, scoop soup/green bean mixture into the middle of each onion ring, making sure to fill each ring evenly before placing another onion ring on top and repeating the process. 2 1/2 cups condensed mushroom soup
1 cup French-fried onions
2 cups chopped green beans
3/4 cup cheddar cheese
1/2 cup milk
salt, to taste
pepper, to taste

Steps:

  • Preheat oven to 350?F/180?C.
  • 2. Place RITZ crackers and ½ cup french fried onions in food processor. Reserve 3 crackers and the other ½ cup of french fried onions. Pulse the mixture to form a fine crumb.
  • 3. Add ½ cup of mushroom soup, pulse until combined. The texture should be pliable. If too dry add more soup, if too wet add more crackers.
  • 4. Take a spoonful of the mixture and mold it into a muffin tin.
