⅓ cup light brown sugar

Steps:

  • In a medium saucepan, combine the ketchup, Worcestershire, apple cider vinegar, mustard, brown sugar, molasses, paprika, garlic powder, and cayenne whisk to combine.
  • Bring to a boil over medium heat, then simmer for 10 minutes, stirring occasionally, until thickened.
  • Serve warm or store in an airtight container in the refrigerator for up to 2 weeks

2 tablespoons vegetable oil
½ cup finely chopped yellow onion
2 cloves garlic, minced
1½ cups ketchup
½ cup water
¼ cup packed light brown sugar
3 tablespoons molasses
2 tablespoons apple cider vinegar
1 tablespoon Worcestershire sauce
1 tablespoon chili powder
½ teaspoon smoked paprika
½ teaspoon ground cumin

Steps:

  • In a medium saucepan, heat the oil over medium-low heat. Add the onion and cook, stirring frequently until soft, about 4 minutes. Add the garlic and cook 1 minute more. Add the ketchup, water, brown sugar, molasses, cider vinegar, Worcestershire sauce, chili powder, smoked paprika, and cumin; stir to combine and bring to a simmer. Cook, stirring occasionally, until slightly thickened, about 15 minutes. At this point, the sauce is ready to serve, but if you'd like to make it completely smooth, transfer it to a blender and blend until smooth.

2 cups ketchup
½ cup brown sugar
¼ cup molasses
½ cup apple cider vinegar
1 teaspoon worcestershire sauce
1 tablespoon kosher salt
2 teaspoons black pepper
2 teaspoons smoked paprika
½ cup dark brown sugar
3 tablespoons kosher salt
2 teaspoons black pepper
1 ½ tablespoons cumin
1 ½ tablespoons onion powder
1 ½ tablespoons paprika
1 ½ tablespoons cayenne
2 teaspoons ground mustard
1 ½ tablespoons garlic powder
4 lb baby back ribs
4 cups wood chips

Steps:

  • Make the smoke bombs: Add the wood chips to a bowl and cover with water. Let soak for 1 hour, then drain. Place 1 cup of the damp wood chips on a piece of aluminum foil and fold into a packet. Poke multiple holes in the top with a toothpick or fork. Repeat with the remaining wood chips, creating 4 packets total.
  • Make the sauce: Add the ketchup, brown sugar, molasses, apple cider vinegar, Worcestershire, salt, pepper, and smoked paprika to a small pot over medium heat, whisking to combine. Once the sauce begins to boil, reduce heat to low and simmer for 15 minutes. Remove from the heat and let cool to room temperature.
  • Make the rub: In a medium bowl, whisk together the brown sugar, salt, pepper, cumin, onion powder, paprika, cayenne, ground mustard, and garlic powder.
  • On a large cutting board, pat the ribs dry with paper towels. If necessary, remove the membrane on the bone-side of the ribs by using a paring knife to gently loosen and pulling it up in one sheet.
  • Generously season the ribs all over with the dry rub.
  • Wrap the ribs in aluminum foil until completely covered.
  • Preheat the grill to 300°F (150°C) with the lid closed.
  • Place the foil-wrapped ribs over indirect heat and close the lid. Cook for 2½ hours, until the meat is tender and starting to pull away from the bone, flipping every 30 minutes.
  • Remove the ribs from the grill and let rest for 10 minutes. Meanwhile, carefully remove the grates and place the smoke bombs over the flames. Close the lid and let smoke build up for 10 minutes.
  • Unwrap the ribs and discard the foil.
  • Baste one side of the ribs with the sauce and place directly on the grill, sauce side down. Baste the other side, now facing up. Continue to flip and baste every 5 minutes for 15 minutes total.
  • Remove the ribs from the grill and serve with extra barbecue sauce.
  • Enjoy!

This is the best barbecue sauce, and trust me I have experimented with hundreds of different combinations over the years, this is even better than any of the popular bottled sauces! ---plan ahead this sauce must be made one day in advance to allow the flavors to blend and intensify, don't even think about using it the same day it is made, this sauce will take on a whole different flavor when simmered for 1 hour and left overnight in the fridge--- the ingredients can easily be doubled but keep the garlic amount no more than 2 tablespoons, and for the best flavor use only Heinz ketchup and a good quality brand of yellow mustard, I use French's mustard it really will make a difference in the taste, please do not omit the liquid smoke --- yield is only estimated as the sauce will reduce after simmering for 1 hour or more ---*NOTE* for a smoother low fat sauce omit the oil, onion and fresh garlic, then in the saucepan mix all remaining ingredients together and add in 1 teaspoon each garlic powder and onion powder then simmer for 1 hour -----you will love this sauce!

12 cups barbecue sauce, plus more for basting and serving
9 racks baby-back ribs (each 7 ribs), cut into 3- and 4-rib sections
3 whole chickens (4 pounds each), each cut into 6 pieces

Steps:

  • Heat ovens to 325 degrees and 350 degrees. Coat the bottoms of two large roasting pans with enough sauce to cover. Add chicken to one pan and ribs to the other. Coat chicken and ribs with remaining sauce.
  • Bake ribs at 325 degrees until cooked through, about 1 hour. Bake chicken at 350 degrees until cooked through, 1 1/4 to 1 1/2 hours.
  • Prepare a charcoal or gas grill. Place chicken and ribs on grill, discarding remaining sauce in roasting pans. Grill chicken and ribs, turning and basting frequently with more sauce until well browned and heated through, 10 to 15 minutes.

1 cup sugar
1/2 cup vinegar
1 teaspoon soy sauce (optional)
6 chicken breasts (or ribs)

Steps:

  • Fry chicken.
  • Dip fully cooked chicken in sauce and coat well.
