2 (11 ounce) cans mandarin oranges
green grapes (as many as you like) or bing cherry (as many as you like)
1 (16 ounce) package mini marshmallows
1 (8 ounce) carton sour cream
coconut, to your liking

Steps:

  • Drain fruit well.
  • In a bowl that can be covered, put fruit and marshmallows; carefully fold in sour cream.
  • Sprinkle with coconut.
  • Let stand in refrigerator 24 hours before serving.

This is a wonderful salad that is easily adaptable, and can be served as a salad with a holiday meal or as a dessert. The original recipe called for canned fruit cocktail, but I have modified it from that. I'm also allergic to pineapple, so I either pick it out or substitute more of the other fruits instead. All the fruits are really to taste. I could eat myself sick on this stuff, it is so good.

1 cup whipping cream, whipped
1 (3 ounce) box instant vanilla pudding
1 3/4 cups milk
1 (8 ounce) can mandarin oranges, drained DRY (very important)
1 (20 ounce) can pineapple chunks, drained DRY
1 cup green grape, halved
1 cup red grapes, halved
1/2 cup maraschino cherry
1/2 cup marshmallows

Steps:

  • The canned fruit needs to be completely dry, so recommend starting this 2 days in advance - draining the fruit overnight on the first day.
  • On the day before you need the salad, whip the cream. You can sweeten it with a bit of sugar if desired, but it's not needed.
  • Mix the pudding mix and milk together until thick.
  • Fold the whipped cream and pudding together.
  • Fold the fruits and marshmallows into the cream and pudding mixture.
  • Refrigerate overnight.

1 (20-ounce) can crushed pineapple
2 (15-ounce) cans mandarin oranges
3 eggs
2 tablespoons flour
3/4 cup sugar
3 tablespoons lemon juice
1 cup miniature marshmallows
2 bananas (peeled and sliced)
3/4 cup heavy cream (whipped)

Steps:

  • Gather the ingredients.
  • Drain the juices from the canned fruits and set the fruit aside. Pour the juices into a glass measuring cup. Add enough water to the combined juices, if necessary, to measure 1 1/2 cups.
  • Combine the eggs, flour, sugar, and the juice mixture in a heavy saucepan and beat very well with a wire whisk . You want to beat enough that the mixture is foamy.
  • Cook the custard over medium heat, stirring it constantly with a wire whisk, until thick and boiling. You want to make sure that the mixture is thick enough so the salad will be thick.
  • Remove the saucepan from the heat, stir in the lemon juice with a wire whisk, cover, and chill the custard in the refrigerator until cold, about 4 to 5 hours.
  • When the custard is cold, fold in the well-drained fruits, marshmallows, and the sliced bananas.
  • Gently fold in the whipped cream.
  • Pour the salad into a serving bowl and cover. Chill for 24 hours.
  • Serve and enjoy.

This old-fashioned fruit salad can be made any time of year. Cool, creamy, and fluffy, you'd never guess it's made with canned fruit. The combination of fruit gives it a tropical feel. Sweet and creamy, the homemade custard is the perfect base for this fruit salad. Marshmallows soak all the goodness from the custard sauce....

1 can(s) Dole pineapple chunks in 100% pineapple juice drain and reserve 4 tablespoons of syrup (20 oz)
6 slightly beaten egg yolks (remember to separate egg yolk from whites) beat yolks with a fork
4 Tbsp sugar
4 Tbsp apple cider vinegar
2 Tbsp butter or margarine (I always use Blue Bonnet margarine)
2 dash(es) salt
1 can(s) Delmonte 100% juice fruit cocktail, drained (15 oz)
1 can(s) Dole tropical mixed fruit in passion fruit, drained (15.25 oz)
4 c tiny marshmallows
2 c prepared Dream Whip topping (1 packet makes 2 cups see directions below)
INGREDIENTS FOR WHIPPED TOPPING
1 pkg Dream Whip
1/2 c cold milk
1/2 tsp vanilla extract

Steps:

  • 1. Drain pineapple chunks in a colander over a small bowl and reserve 4 tablespoons of pineapple syrup.
  • 2. To make custard for fruit salad: In a small heavy saucepan, combine reserved pineapple syrup, egg yolks, sugar, vinegar, butter or margarine, and salt. *Note: as a rule, I used apple cider vinegar*
  • 3. Cook and stir over low heat, whisking or stirring constantly, for about 6 minutes or until the mixture thickens slightly and coats a metal spoon. It may take a little longer than 6 minutes, but when it coats the spoon it is ready. (Yes you will smell the vinegar, but don't worry, the custard will taste delicious). Cool to room temperature.
  • 4. In a 3 quart bowl, combine pineapple chunks, fruit cocktail, mixed fruit, and marshmallows.
  • 5. Pour custard over; mix fruit mixture gently. (I generally make this up in a glass rectangular baking pan.)
  • 6. In a large bowl, to make the whipped cream do the following: Mix 1 envelope of Dream Whip, 1/2 cup cold milk, and 1/2 teaspoon vanilla. Beat on low speed until blended. Then beat on high speed for 4 minutes until topping thickens and form peaks.
  • 7. Fold whipped cream into fruit mixture. Cover with some Saran Wrap and refrigerate 24 hours or overnight. Makes 10 to 12 servings.

2 eggs
1/4 cup fresh lemon juice ((from 2-3 lemons, see note 1))
1/4 cup granulated sugar
1 cup heavy cream
1 cup red seedless grapes (halved)
1 cup canned cherries (drained (see note 2))
1 cup canned pineapple (chunks, drained and cut into bite-sized pieces)
1 cup mandarin oranges (drained)
1 cup mini marshmallows ((see note 3))
1 banana (sliced)

Steps:

  • In the bottom of a double boiler, bring 1 inch water to simmer. Combine eggs, lemon juice, and sugar in top of double boiler and cook until thickened, about 10 to 12 minutes. Remove from heat and cool completely.
  • Using a standing mixer or electric hand mixer, whip heavy cream until stiff peaks form. Fold in cooled custard sauce until combined.
  • In a large bowl, add grapes, pineapple, oranges, cherries, marshmallows, and banana. Pour cream sauce over and stir to combine. Refrigerate at least 8 hours or up to 24 hours before serving.

1 (12 ounce) package small shaped pasta
2 (20 ounce) cans pineapple tidbits (drain and reserve juice)
1 lemon, juice of
2 eggs
2 tablespoons flour
1/2 teaspoon salt
1 cup sugar
1 cup drained fruit cocktail (reserve juice)
1 (8 ounce) container Cool Whip
1 (16 ounce) package colored miniature marshmallows

Steps:

  • Cook macaroni per package directions to al dente; drain, rinse and cool.
  • Combine juice of fruit cocktail, lemon, 2 cups pineapple juice, eggs, flour and salt.
  • Boil over medium heat, stirring constantly until thickened.
  • Pour this mixture over the cooled pasta, stir, and store covered in the refrigerator overnight.

1 medium white onion
1/3 cup white sugar

1 navel orange, peeled, sectioned and cut in half
1 cup seedless green grapes, cut in half
1/2 cup slivered almonds

Steps:

  • Drain pineapple, reserving 3/4 cup liquid. Pour reserved liquid into 1-qt. microwaveable measuring cup. Add sugar, lemon juice, cornstarch and egg yolk; mix well.
  • Microwave on HIGH 2 to 4 min. or until thickened, stirring every minute. Pour into large bowl; cool.

4 tablespoons sugar
2 tablespoons butter
2 cups mandarin oranges, cut up (canned is fine, make sure to drain first)
1 cup whipped cream (or Cool Whip if you prefer)
2 cups pineapple, cubed & drained
1 (14 ounce) can fruit cocktail
2 cups mini marshmallows (the colored ones are prettier)
1/2 cup maraschino cherry

Steps:

  • Mix eggs, vinegar and sugar in the top of double boiler, heat, stirring constantly until smooth and thick.
  • Remove from heat, add butter, stirring until incorporated.

2 can(s) mandarin oranges
3 Tbsp tang breakfast drink
2 large bananas, in small chunks
1 large red apple
1 large green apple
1 can(s) fruit cocktail, drained
1 can(s) pears, drained and chopped
1 can(s) peaches, drained and chopped
1 jar(s) mangos, chopped (or 1 fresh mango)
other fruit as desired

Steps:

  • 1. Drain pineapple and mandarin oranges into large measuring cup and stir in Tang until dissolved. If you cannot find pineapple tidbits, use pineapple chunks. It will be better if you cut them in half, but that is not required. I prefer using the fruit in its juice rather than in syrup.
  • 2. Peel and chop apples, bananas, and any other fresh fruit like peaches or pears that you are using. Put them into the tang/juice mixture.
  • 3. Drain any canned fruit that you are using and add it to the mixture. Strawberries, seedless grapes, kiwis, plums, and any type of melon is great in this.
  • 4. Stir all the fruit and then store in airtight container. This will keep very well in the refrigerator for several days. Kids love this. It is one of the dishes I make for friends when there is a death or other problem. It's perfect for those situations.

3 tablespoons instant Tang orange drink
1 (3 1/2 ounce) box instant vanilla pudding
2 (12 ounce) cans tropical fruit salad, drained
2 bananas

Steps:

  • Mix together Pineapple Chunks (with juice), Tang, and Instant Vanilla Pudding until incorporated.
  • Drain juice from canned Tropical Fruit and add fruit to Pineapple mixture.
  • Cool mixture until ready to serve (juice will thicken.).
  • Slice bananas (just before serving) and mix ingredients together.
  • Serve from bowl or from individual champagne glasses with a sprig of mint for decoration.
