Number Of Ingredients 9

1 c chocolate chips
1 stick unsalted butter, melted
1 c chopped pecans
1 tsp vanilla
1/2 c all-purpose flour
1/2 c white sugar
1/2 c brown sugar
2 eggs
1 refrigerated pie crust

Steps:

  • 1. Preheat oven to 350
  • 2. Pour warm butter over chocolate chips & stir.
  • 3. Blend rest of ingredients together and stir into chocolate chip mixture.
  • 4. Pour into unbaked pie shell and bake for 40 minutes or until toothpick comes out clean.

This pie is best if under-baked and a bit gooey like a brownie inside. This is a very rich pie, so small slices are advised.

½ cup butter, melted
¾ cup chocolate chips
½ cup all-purpose flour
½ cup brown sugar
½ cup white sugar
2 eggs, beaten
1 teaspoon vanilla extract
1 cup chopped pecans
½ cup flaked coconut
¼ cup chocolate chips
1 (9 inch) deep dish pie crust

Steps:

  • Preheat oven to 350 degrees F (175 degrees C.)
  • In a large bowl, pour warm melted butter over 3/4 cup chocolate chips. Stir until smooth. Mix together flour, brown sugar, and white sugar, then stir into chocolate mixture. Stir in eggs and vanilla. Fold in pecans, coconut, and 1/4 cup chocolate chips. Pour into pie crust.
  • Bake in preheated oven for 35 to 40 minutes. Top should be set, and may crack slightly, but the pie is best if under-baked.

HEAVENLY PINEAPPLE PIE

Number Of Ingredients 9

1 (9-inch) pie crust
1 (20-ounce) can crushed pineapple with juice
pineapple juice and water to make 1 cup
2/3 cup sugar, divided
1 envelope unflavored gelatin
1/4 teaspoon salt
4 large eggs, separated
2 tablespoons lemon juice
1/2 teaspoon lemon peel

Steps:

  • Prepare, bake, and cool pie crust. Drain and save juice from pineapple, pressing out excess juice with back of spoon. Add water to measure 1 cup. Mix 1/3 cup sugar with gelatin and salt in small saucepan. Beat egg yolks with 1 cup pineapple juice. Stir into gelatin-sugar mixture. Cook over very low heat, stirring constantly, about 10 minutes, until mix coats a spoon. Remove from heat. Stir in drained pineapple, lemon juice, and lemon rind. Cool until mix begins to jell. Beat egg whites to soft peaks. Gradually beat in remaining sugar (1/3 cup), beating to a stiff meringue. Gently fold into pineapple mix. Spoon into shell. Chill until firm. Fun Fact: In colonial times, pineapples were recognized as a symbol for hospitality. Sea captains would bring this exotic fruit home from their journeys and mount it on the fence post to indicate they were at home and available to receive visitors.

OLD-FASHIONED COLD BREAD PUDDING

4 eggs
4 cups milk, divided
1 1/2 cups sugar
2 teaspoons vanilla extract
6 - 8 cold biscuits
1/2 stick butter or margarine
1/2 teaspoon nutmeg

Steps:

  • Preheat oven to 350°. Beat eggs with 1 cup milk. Add sugar, and beat to dissolve. Then add remaining milk and vanilla. Beat well. Pour in greased 9x13-inch dish. Crumble biscuits into it; lightly press into milk. Dot with butter or margarine and sprinkle nutmeg over all. Bake at 350° for 50-60 minutes until as brown as you like it. Note: Can be baked in 2 medium-size baking pans, or halved for 1 medium-size pan.
