EASY TAMALE CASSEROLE

My mom liked to make the Hamburger Helper® version of this recipe. When I moved to another state, I could not find it, so I came up with this. Memories of home. My hubby likes for me to spice this up sometimes, so I will use a 14-ounce can of tomatoes and green chiles in it or just use a Mexican-style cornbread mix sometimes.

1 pound ground beef
½ teaspoon salt
½ teaspoon ground black pepper
1 small onion, chopped
2 (15 ounce) cans pinto beans, rinsed and drained
2 (15 ounce) cans crushed tomatoes
1 (15 ounce) can cream-style corn
1 (6 ounce) box cornbread mix
1 egg, lightly beaten
1 cup shredded Cheddar cheese

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Heat a cast-iron skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. Season beef with salt and pepper.
  • Stir onion into the ground beef; cook and stir for 1 minute and immediately remove skillet from heat.
  • Stir pinto beans and crushed tomatoes into the beef mixture.
  • Beat cream-style corn, cornbread mix, and egg together in a bowl until smooth; spread over the top of the ground beef mixture in the skillet. Sprinkle Cheddar cheese over the corn mixture.
  • Bake in preheated oven until the cheese is melted and the cornbread is set in the middle, about 25 minutes.

This is similar enough to swiss steak to be comforting, but different enough not to be boring. I often substitute freshly minced garlic for the garlic powder. Serve with mashed potatoes and a green vegetable; I prefer green beans with this.

1/2 cup all-purpose flour
2 teaspoons salt
1 teaspoon freshly ground black pepper
1 tablespoon mustard powder
2 lbs sirloin steaks
3 tablespoons vegetable oil
2 cups sliced mushrooms
1 onion, peeled and sliced
1 cup red wine
1/4 cup packed brown sugar
2 teaspoons Worcestershire sauce
1 teaspoon garlic powder
1 (19 ounce) can tomatoes, undrained

Steps:

  • Preheat oven to 325F degrees.
  • In a small dish, combine flour, salt, pepper and dry mustard; transfer to a plastic bag.
  • Cut steak into strips, larger than for stir fry, and place in a large bowl; pour just enough of the red wine onto meat to moisten; reserve remaining wine.
  • In a large skillet over medium-high heat, heat oil.
  • Shake steak strips in flour mixture, then brown floured meat in hot oil; place browned strips in a large casserole dish; you may need more oil to brown all your beef.
  • When done, pour any meat juice/red wine left in bowl steak was in onto browned meat.
  • Add remaining ingredients, including reserved red wine, to casserole and stir to combine.
  • Cover tightly and bake for 1-1/2 to 2 hours, or until steak is tender.

700 g topside steak, cubed
flour
salt and pepper
2 slices bacon, rind removed
4 tamarillos, sliced
3 medium onions, sliced
3 medium potatoes, sliced
1 tablespoon butter

Steps:

  • Toss cubes of steak in a mixture of flour and salt and pepper.
  • Place in a casserole and cover with the bacon.
  • Cover with a layer of tamarillos, a layer of onions, then a layer of potatoes.
  • Cover tightly and bake at 180 degrees Celsius (350 degrees Fahrenheit) for 2 hours.
  • About 30 minutes before the end of cooking remove the lid and dot the potatoes with butter.

1 can (15.5 oz.) black beans, rinsed
1/2 cup chopped fresh cilantro
1 cup BREAKSTONE'S or KNUDSEN Sour Cream, divided
12 corn tortillas (6 inch)
1 pkg. (8 oz.) KRAFT Shredded Mild Cheddar Cheese with a TOUCH OF PHILADELPHIA, divided

Steps:

  • Heat oven to 375ºF.
  • Brown meat with onions and chili powder in large skillet on medium heat. Remove from heat; stir in salsa, beans, cilantro and 3/4 cup sour cream.
  • Spray 2-qt. round casserole with cooking spray. Place 3 tortillas in prepared dish, overlapping as necessary to completely cover bottom of dish; top with layers of 1-1/2 cups meat mixture and 1/2 cup cheese. Repeat layers twice; top with remaining tortillas. Cover.
  • Bake 45 min. or until heated through, uncovering and topping with remaining cheese after 30 min. Remove from oven. Let stand 5 min. before cutting into wedges. Serve topped with remaining sour cream.

This recipe originally calls for tongue, but my mom use to substitute with top sirloin. It's probably my most favorite way to cook steak. It tastes really good served with rice.

3 lbs top sirloin steaks
3 eggs
2 cups flour
2 tablespoons olive oil
1 teaspoon crushed red pepper flakes
salt

vegetable oil (for frying)
2 large finely chopped onions
1 (15 ounce) can tomato sauce
4 cups water
1 tablespoon vegetable oil
salt
pepper

Steps:

  • Begin by cutting meat in to pieces a bit bigger then the palm of your hand. Make sure meat is a little bit thin (you don't want piece to be thick).
  • Place meat in pot (without oil) and put on medium heat. Meat will begin to cook by releasing water, stir once in a while to keep it even. Remove meat once the water has almost all went away.
  • Place meat in a clean bowl, add olive oil. crushed red peppers, and salt and pepper to taste.
  • Meanwhile make sauce by sautéing onions and oil in pot. When onions begin to brown, add tomato sauce, water, and salt and pepper. Simmer until sauce is reduced to half.
  • Heat oil for frying. Whisk eggs in bowl, place meat in eggs, then in flour, then fry until golden brown.
  • Begin stacking in small casserole dish by placing alternate layers of sauce and meat in casserole dish. Making sure to put sauce first, you should get about 3 layers of meat.
  • Bake in oven at 400 degrees for 1 hour.
  • Serve with rice.

  • Boil rice, drain, and rinse with cool water.

600 g beef round steak (4 small steaks)
2 tablespoons cornflour
1/2 tablespoon Vegeta, natur (or similar spice mixture)
2 tablespoons olive oil
1/2 tablespoon dried thyme
1 bay leaf
350 g onions, sliced
2 garlic cloves, crushed
1 tablespoon flour
400 ml beef stock, from 1/2 cube

Steps:

  • Coat each steak with corn flour mixed with Vegeta Natur. Brown the meat in 1 tablespoon of olive oil in a large frying pan. Transfer the meat to an ovenproof casserole dish with a well fitting lid.
  • Sprinkle the thyme over the meat and add the bay leaf.
  • Heat the remaining oil in the frying pan and fry the onions and the garlic until they turn a rich brown.
  • Stir in the flour and slowly add the stock, constantly stirring to make a smooth sauce.
  • Pour this over the meat and cover. Cook in the oven 160˚C for about 2 hours. Do not remove the lid before the cooking time is over.
  • Serve with mashed potatoes and green vegetables of your choice.

creole seasoning
3 tablespoons oil
1 onion, chopped
1 cup uncooked rice
1 (14 ounce) can beef broth
1 1/3 cups water
1 tablespoon dried parsley flakes
1/2 teaspoon garlic powder
1/4 teaspoon salt
2 tablespoons Worcestershire sauce
1 green bell pepper, julienned
1 red sweet bell pepper, julienned

Steps:

  • Trim fat off edges of steak and cut into serving size pieces.
  • Season with creole seasoning.

2 lbs beef round tip steaks
2 tablespoons olive oil, divided
2 garlic cloves, minced-divided
1 cup sliced onion
1 cup sliced bell pepper
4 slices provolone cheese
salt and pepper

Steps:

  • Preheat oven to 425°F
  • Partially freeze the steak to make slicing easier. Slice as thinly as possible.
  • In a skillet, heat 1 tbsp olive over medium high heat. Add garlic, onions, and peppers. Salt and pepper to taste.
  • Saute onions until translucent. Remove from skillet and set aside.
  • In skillet heat the other tbsp of olive oil. Add remaining garlic, then add the sliced beef. Add salt and pepper to taste.

1/2 teaspoon pepper
2 pounds boneless round steak, cut into 1/2-inch cubes
2 tablespoons vegetable oil
1 cup water
1/2 cup low-sodium beef broth
1 garlic clove, minced
1 tablespoon dried minced onion
1/2 teaspoon dried thyme
1/4 teaspoon dried rosemary, crushed
2 cups sliced fresh mushrooms
2 cups frozen peas, thawed
3 cups mashed potatoes (with added milk)
1 tablespoon butter, melted

Steps:

  • Preheat oven to 350°. In a large resealable plastic bag, combine flour, seasoning blend and pepper; add beef cubes and shake to coat. In a skillet over medium heat, brown beef in oil. Super cheesy, stick to your ribs, definitely NOT a diet dish. Fairly quick to make...kids LOVE it. My b/f came up with this one night when all we had in the freezer were some minute/sandwich steaks. I have 30 minutes for prep time but I've seen him toss this together in half that time. The kids don't like chopped green peppers but I think they would be great in this dish. Also great for covered dish suppers.

1 (12 ounce) bag wide egg noodles

1 envelope onion soup mix

  • Boil noodles& drain.
  • Set aside.

2 lbs beef cube steaks
cooking oil
2 (10 1/2 ounce) cans cream of mushroom soup
equal parts water
1 tablespoon kikkomans soy sauce
1 tablespoon Lea & Perrins Worcestershire Sauce
1 -2 onion, sliced in discs 1/2 inch thick
flour
salt
pepper
garlic powder

Steps:

  • Heat about 1/2 inch of cooking oil in cast iron skillet. Bring to about 350 degrees.
  • Preheat oven to 375 degrees
  • Cut large cube steak pieces into fist size pieces about 4x5". Season both sides with salt, pepper and garlic powder. Dredge all pieces in about 2 cups of white flour (all purpose or self rising). Take a large zip loc or paper bag and put flour in it. Put a few pieces of the steak in at a time and shake to thoroughly coat. Shake off excess.
  • Place a few pieces in the heated oil at a time, don't crowd. Fry for about 5 minutes each side until dark golden brown. Drain on paper towels. Repeat until all steak pieces are fried.
  • In large casserole empty both soup cans. Add two cans of water or to desired consistency and whisk together. Add soy and worcestireshire sauce and combine. Place all fried steak pieces in casserole submerging in the soup. On top, place all sliced onion pieces. Cover casserole and place in oven. Cook for about 1 to 2 hours until steak is tender, onions are cooked and gravy is bubbling.
  • Serve with white cooked rice.
  • Broccoli and corn on the cob is good with this dish. Reheated leftovers are even better.
