4 teaspoons canola oil, divided
2 eggs, beaten
2 carrots, chopped
salt and ground black pepper to taste
3 cloves garlic, crushed
1 cup frozen peas
4 scallions, minced
4 cups cooked rice
1 teaspoon soy sauce, or to taste

Steps:

  • Heat a wok or large skillet over high heat; add 1 teaspoon canola oil. Cook and stir eggs in the hot oil until scrambled and set, 3 to 4 minutes. Transfer eggs to a plate, clean the wok, and return to high heat.
  • Mix 1 tablespoon canola oil, carrots, and salt in the hot wok; cook and stir for 2 minutes. Add garlic to carrots; cook and stir until garlic is fragrant and browned, about 2 minutes. Stir peas and scallions into carrot mixture; cook and stir until peas are warmed, 1 to 2 minutes. Lower heat to medium.
  • Stir rice into carrot mixture; add scrambled eggs, soy sauce, salt, and pepper. Cook and stir rice mixture until heated through, 2 to 3 minutes.

3 tablespoons peanut oil
8 shrimp, peeled, deveined and cut into 1/2-inch pieces
3 ounces ham, cut into 1/2-inch pieces (1/4 cup)
1/2 cup frozen peas, thawed
1 tablespoon soy sauce, plus more for seasoning
2 large eggs, beaten
4 green onions, thinly sliced
1 pinch salt
fresh ground black pepper
3 cups cold leftover cooked rice
1 tablespoon rice wine or 1 tablespoon dry sherry

Steps:

  • Heat 2 Tblsp of the oil in a wok or frying pan set over medium heat. Add the shrimp, ham, and peas and cook 1 minute. Add the soy sauce and transfer to a plate to keep warm.
  • Heat the remaining tablespoon oil in the pan. Add the eggs, green onions, salt & pepper.
  • Scramble the eggs in the pan. Once this mixture comes together in clumps, add the rice, shrimp mixture, and rice wine. Adjust the seasoning with soy sauce or salt & pepper. Serve hot.
  • Feel free to saute cabbage, broccoli, bok choy, or diced carrots along with the shrimp, ham and peas.
  • Use cold leftover rice only. This recipe won't work well with freshly cooked rice. It will be mushy and stick to the pan, a real mess.

2 chicken breasts, boneless and skinless, cooked chopped in bite sized pieces
1 medium yellow onion, chopped
1/2 broccoli crown, cut up in bite size
1 c carrots, chopped
2 eggs
4 c rice, cooked
2 clove garlic, crushed
1/4 c soy sauce
2-3 Tbsp canola oil

Steps:

  • 1. In a tall-sided Skillet, Heat oil on med/high heat. Saute onion and garlic until onion is translucent. Add in chopped carrot, broccoli. Stir until veggies are crisp-tender. Add in both eggs into hot skillet. Scramble until done.
  • 2. When egg is done add in chicken and rice to skillet. Stir until combined. Stir in soy sauce. Serve hot! Enjoy

3 cups cooked white rice
3 tablespoons sesame oil
2 stalks celery, chopped
2 carrots, peeled and diced
1/2 medium onion, chopped
2 teaspoons minced garlic
3/4 cup frozen peas
1 cup diced ham or 1 cup pork
2 eggs, slightly beaten
1/2 cup soya sauce

Steps:

  • In a large skillet heat the sesame oil.
  • Add the celery, carrots, onions, and garlic stirring while cooking to tender crisp.
  • Stir in the frozen peas and ham or pork, continue to stir and cook until vegetables have softened.
  • Lower the heat and add the beaten egg, stirring until it is finely scrambled.
  • Add the soya sauce, and rice, blend well.
  • Splash a little more sesame oil over the rice if necessary.

We love fried rice! This is a quick and easy version that I believe comes from Pampered Chef.

4 c rice, prepared
1/2 lb boneless chicken breast, cooked and cut into bite-size pieces. or same amount of medium-size cooked shrimp.
1 c peas and carrots, frozen
1 white onion, chopped
2 clove garlic, minced
2 eggs
3 Tbsp sesame oil
1/4 c soy sauce

Steps:

  • 1. Prepare rice according to package instructions to yield 4 cups cooked rice.
  • 2. Heat sesame oil in a large skillet on medium heat. Add onion, garlic, peas, and carrots. Stir fry until tender.
  • 3. Crack eggs into pan and scramble, mixing throughout vegetables.
  • 4. Add rice, chicken or shrimp or both, and soy sauce to pan. Stir to combine all ingredients and remove from heat. Enjoy!

I wanted the take out style fried rice. Umami = just add a little fish sauce. It doesn't taste fishy! I promise! It's not quite Paleo friendly with the soy and whatever but you can figure it out... I've made this several times and I'm continually tinkering with adding fried rice things... shrimp, pineapple, chicken, Chinese sausage, ham, green onions...... whatever. You could even add rice if you wanted to Volumetrics a serving of carbs or something.

1 head cauliflower (makes about 3 cups riced)
1 tablespoon oil, neutral
3 tablespoons sesame oil
3/4 cup onion, diced
2 teaspoons garlic, minced
crushed red pepper flakes (optional)
1 cup frozen peas
1 cup carrot, diced
2 eggs, slightly beaten
3 tablespoons soy sauce
1 tablespoon fish sauce

Steps:

  • Break down cauliflower head into even sized chunks. Put cauliflower in food processor while its raw -- Pulse it until it looks like rice but not to the point where you have a puree thing or it's not rice --.
  • Microwave riced cauliflower for 5 minutes so it steams and doesn't roast in the pan. The texture is closer to real rice.
  • On medium high heat, heat the oil in a large skillet or wok. Add the onion, garlic, and opt crushed peppers. Stir fry until fragrant add carrot about 2 minutes later.
  • Add peas and riced/steamed cauliflower. Lower the heat to medium low and push the mixture off to one side, then pour eggs on the other side of skillet and stir fry until scrambled.
  • Add fish and soy sauce and blend all together well. I usually just eye it. Stir fry until everything is well mixed and heated through.
