This recipe is for tailgating....taking great food to the game, preferably eaten in the parking lot of the stadium, or under duress, eaten in a living room in front of a big screen tv. This was written for transporting to the game, so make adjustments as necessary for your presentation! Yummy good food! Cooking and prep time does not include time for cooking the sausages.

1/2 teaspoon sugar
1/2 cup giardiniera
4 Italian sausages, cooked (preferably grilled)
4 slices provolone cheese, cut into strips
4 hot dog buns or 4 bratwurst buns, split
mustard, your choice of flavor
ketchup, and mayonnaise if desired

Steps:

  • In a small food processor, combine the sugar and giardiniera; cover and process until blended.
  • Make a slit lengthwise 3/4 of the way through the sausage, starting and stopping 1/2 inch from the end. Fill with the giardiniera mixture and to with the provolone cheese.
  • Place sausages in the buns; wrap individually in a double thickness of heavy-duty foil. Place on a medium-hot grill in the parking lot of the stadium, and heat through until the cheese is melted, about 8 minutes.
  • Top with mustard, ketchup, and mayo if desired.

4 brat buns or hot dog buns, split
4 cooked Italian sausage links

Steps:

  • In a bowl, combine giardiniera and sugar; set aside., Place cheese in buns; top with sausages and giardiniera mixture. Wrap individually in a double thickness of heavy-duty foil (about 12x10 in.). Grill, uncovered, over medium-hot heat for 8-10 minutes or until heated through and cheese is melted. Open foil carefully to allow steam to escape. If desired, serve with additional giardiniera.

12 ounces spicy ground pork sausage
1 (16 ounce) jar processed cheese sauce
1 (1 pound) loaf sliced pumpernickel party bread

Steps:

  • Preheat the broiler.
  • Place ground pork sausage and spicy ground pork sausage in a large, deep skillet. Cook over medium high heat until evenly brown. Drain sausage. Mix in processed cheese sauce. Arrange pumpernickel party bread slices in a single layer on a medium baking sheet. Place even amounts of the sausage mixture on each slice.
