TAHITIAN VANILLA OIL

Tahitian Vanilla Oil image

This is posted for ZWT7. Sounds fabulous! Use in cooking, baking. Think of the marvelous salad dressing it will make. The cook time is heating time and it's a total guess. There is also 8 hrs of refrigeration.

Time 7m

Yield 1 cup

Number Of Ingredients 2

3 whole tahitian vanilla beans (or more for a stronger taste)
1 cup grapeseed oil, unflavored

Steps:

  • With the tip of a sharp knife, make a slit down the length of each vanilla bean.
  • Spread them open and use the knife to scrape the moist seeds into a small bowl, reserve the pods.
  • Pour the oil into a small saucepan and warm it gently over low heat for a few minutes, do not let the oil get too hot-it should be quite warm, but not so hot that you can't dip your finger into the pot.
  • Add the vanilla seeds and reserved pods, remove from the heat, and allow it to cool to room temperature.
  • Loosely cover the pot with aluminum foil-do not seal tightly-and let the oil steep for about 8 hours, until it is lightly infused with the flavor of vanilla.
  • Remove the pods and discard.
  • Briskly whisk the oil and seeds together to emulsify and break up any clumps of seeds.
  • Decant into a jar, seal and refrigerate until needed.
  • To use the vanilla oil, first shake the jar vigorously to distribute the seeds. Then measure the amount you need.

TAHITIAN VANILLA CREME BRULEE

Tahitian Vanilla Creme Brulee image

A wonderful recipe from my favorite Chef, Ming Tsai. He suggests you "try to get Tahitian beans-they're particularly plump and fragrant-though any fresh vanilla beans will do".

Time 50m

Yield 8 serving(s)

Number Of Ingredients 8

1 cup half-and-half
1 vanilla bean, preferably Tahitian
1/2 teaspoon pure vanilla extract
1 egg yolk
8 egg yolks
2/3 cup granulated sugar
1 1/2 cups heavy cream, cold
4 tablespoons superfine sugar

Steps:

  • Preheat the oven to 325 f.
  • In a small saucepan, combine the half-and-half, vanilla bean, and vanilla extract.
  • Heat over medium heat just until scalded; do not allow the mixture to boil.
  • Fill a large bowl with water and add ice.
  • In a medium mixing bowl, combine the egg, egg yolks, and granulated sugar and mix.
  • Gradually stir in the scalded half-and-half mixture and place the smaller bowl in the bowl of ice water to cool completely.
  • Stir in the heavy cream and divide among eight 4-ounce ramekins.
  • Place in a baking dish just large enough to hold them and add enough hot water to the pan to come halfway up the sides of the ramekins.
  • Cover the baking dish tightly with foil and bake until the custard is set but still quivers in the center, about 35 minutes.
  • Remove the ramekins from the water and refrigerate to cool completely.
  • Preheat the broiler, if using.
  • Sprinkle 1 tablespoon of the sugar on top of each custard, spread over the surface, and tap out any excess.
  • Place the ramekins on a broiling tray and broil until the top is melted and caramelized, about 30 seconds.
  • Watch carefully; the sugar can burn easily.
  • If using a torch pass the flame about 2 inches over the surface of the custards until the sugar is completely caramelized.
  • Serve while still warm.
  • Ming's Tip: To caramelize the sugar coating, use either a broiler or propane torch. Working with the latter may seem scary, but torches are easily handled and are beautifully efficient. Look for a small version, often called a kitchen torch. If using a torch, replace the superfine sugar. Raw sugar caramelizes more successfully under a torch flame.

Time 35m

Yield 4-6 serving(s)

Number Of Ingredients 7

2 -3 tablespoons oil
2 lbs shrimp, peeled and deveined
1 tahitian vanilla bean
1/2 cup rum
1 cup coconut milk
1 cup heavy cream
salt and pepper, to taste

  • Slit the vanilla bean down the middle and scrape out the seeds. Add the rum, vanilla bean pod and seeds to the pan and bring to a boil. Cook until the rum is largely evaporated.
  • Pour in the coconut milk and cream. Reduce heat to medium-low and simmer slowly until the sauce is thickened and its volume is reduced by about half.
  • Remove the vanilla bean pod and return the shrimp to the pan. Simmer to heat through and season with salt and pepper. Serve hot over rice with a side of sauteed spinach or chard.
  • Variations:.
  • Saute a minced onion after you saute the shrimp and simmer in the sauce.
  • Use evaporated milk instead of cream.
  • Don't throw away the vanilla bean pod. Rinse it off and set it out to dry. When it's dry, bury it in a jar of sugar and store in the cupboard for delicious homemade vanilla sugar. Use the sugar in baking or for coffee.

EASY AS SUNDAY MORNING HOMEMADE TAHITIAN VANILLA EXTRACT

Easy As Sunday Morning Homemade Tahitian Vanilla Extract image

My FH and I have a gaggle of girlfriends and love showing our friends how much we adore them. Keeping costs low when buying presents, such as Valentine's Day Presents, is difficult when you have a large group of friends, so homemade gifts are our solution! We decided to make a batch of homemade vanilla extract (sooo much better than store bought) and spent less than $50.00 on 15 presents! This is a gift that keeps on giving because once the extract is all used up, it can be topped off with more vodka or used to make vanilla sugar! We snazzed our bottles up by making labels as well as dressing them up with a bow and instruction tag!

Time P1m25DT20m

Yield 15 4oz bottles

Number Of Ingredients 2

1 3/4 liters vodka, mid-shelf brand is perfect
30 tahitian vanilla beans, buying online is much more economical

Steps:

  • ***You will need 15, 4oz Round Bottom Glass bottles with tight fitting caps, if you plan on making these as gifts.***.
  • Choose two vanilla beans per bottle, one plump and one on the thinner side (for consistent flavor between all bottles).
  • Score both vanilla beans lengthwise.
  • Cut one of the scored vanilla beans in to 1" pieces.
  • Cut second scored vanilla bean in half.
  • Add 1" pieces of first vanilla bean into bottle; then add halved vanilla bean, cut side down.
  • Add 1/2 cup of vodka into bottle, fasten cap tightly.
  • Repeat for all 15 bottles.
  • Place all 15 bottles on window sill so they are in the sun; leave in sun overnight.
  • Lightly flip each bottle over gently to agitate contents and remove from sunlight.
  • Allow vanilla beans to continue to steep in vodka for 6-8 weeks before use.
  • OPTIONAL: Stretch out the life of your vanilla beans by doing one of two things: 1. Continually top off bottles with more vodka to continue extracting more vanilla from beans. This can be continued until vodka no longer turns brown; this is when your vanilla bean should be discarded. OR 2. Remove vanilla beans from bottle and allow to dry on flat, non-porous surface. Add vanilla bean to a water/air-tight container and cover vanilla beans with white or brown sugar. Keep container closed for one week. After one week enjoy your homemade vanilla sugar! :).

Categories     easy, condiments

Time 15m

Number Of Ingredients 2

1 cup corn oil
1 Tahitian vanilla bean

Steps:

  • Put the oil in a small saucepan. Split the bean and scrape in the seeds. Cut the pod into one-inch lengths and add.
  • Simmer the oil over very low heat for five minutes. Remove from heat and allow to macerate at least six hours before using.
  • Store the oil in a covered jar, with the pods still in it. The flavor will continue to intensify for a day or so and then remain constant almost indefinitely. Use to grease baking pans, to add flavor to salad dressings (especially for fruit) and as a sauteing medium for vegetables such as carrots, summer squash and new onions.
