EGG WAFFLE TACO

2 large Eggland's Best eggs
1/4 teaspoon salt
1/4 teaspoon coarsely ground pepper
1-2 dashes hot pepper sauce
2 cooked bacon strips, halved
1/2 cup fresh baby spinach
2 tablespoons thinly sliced green onions
2 flour tortillas (8 inches)
2 slices Colby Pepper Jack cheese
Optional: Salsa, avocado slices, sour cream and additional sliced green onions

Steps:

  • Preheat a round waffle maker. In a small bowl, whisk eggs, salt, pepper and hot sauce. Pour half the egg mixture onto greased waffle maker. Working quickly, top egg mixture with half of each of the following: bacon, spinach and green onions. Place 1 tortilla on top and close waffle maker. Cook until tortilla is toasted, 1-2 minutes. , Remove from waffle maker; place on a serving plate, egg-side up. Top with 1 slice cheese and toppings, if desired. Fold into taco shape, serve immediately. Repeat with remaining ingredients.

Waffle cones shaped like taco shells are filled with scrambled eggs, bacon bits, chopped jalapeno peppers, and chives.

2 Eggland's Best Eggs, large
¼ cup bacon bits
2 jalapeno chile peppers, seeded and diced
¼ cup shredded Mexican cheese blend
2 tablespoons chopped fresh chives
2 tablespoons chopped tomatoes
⅓ cup prepared pancake mix

Steps:

  • Preheat your waffle cone maker and spray with non-stick cooking spray.
  • In a medium size bowl, whisk together 2 large eggs.
  • Over medium heat, heat a small skillet with a tablespoon of oil until hot. Pour in eggs. As eggs begin to set, slowly pull them the skillet with a spatula, forming soft curds. Continue cooking, until desired doneness. Remove from heat.
  • Meanwhile, mix waffle batter according to package directions. Pour 1/4 of the batter into the waffle cone maker, making sure to spread it out evenly.
  • Close lid and cook for about 1 minute before checking for doneness. Cook until browned to your liking. Immediately, place done waffle cones into taco holder to form shape.
  • Stuff with scrambled eggs, then top with bacon, jalapenos, and chives.
