18 uncooked jumbo pasta shells
1-1/2 pounds lean ground beef (90% lean)
2 teaspoons chili powder
3 ounces fat-free cream cheese, cubed
1 bottle (16 ounces) taco sauce, divided
3/4 cup shredded reduced-fat Mexican cheese blend, divided
20 baked tortilla chip scoops, coarsely crushed

Steps:

  • Preheat oven to 350°. Cook pasta according to package directions. Drain and rinse in cold water; drain again., Meanwhile, in a large skillet, cook and crumble beef over medium-high heat until no longer pink, 6-8 minutes. Stir in chili powder, cream cheese and 1/2 cup taco sauce until blended. Stir in 1/4 cup shredded cheese., Spoon about 2 tablespoons filling into each shell. Place in an 11x7-in. baking dish coated with cooking spray. Top with remaining taco sauce., Bake, covered, until heated through, 20-25 minutes. Sprinkle with remaining cheese; bake, uncovered, until cheese is melted, about 5 minutes. Sprinkle with chips., Freeze option: Cool unbaked casserole; cover and freeze. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Cover casserole with foil; bake as directed, increasing time as necessary to heat through and for a thermometer inserted in center to read 165°. Top with cheese and chips as directed.

1 envelope taco seasoning

2 pounds ground beef
2 envelopes taco seasoning
1-1/2 cups water
1 package (8 ounces) cream cheese, cubed
24 uncooked jumbo pasta shells
1/4 cup butter, melted
ADDITIONAL INGREDIENTS (for each casserole):
1 cup salsa
1 cup taco sauce
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
1-1/2 cups crushed tortilla chips
1 cup sour cream
3 green onions, chopped

Steps:

  • In a Dutch oven, cook beef over medium heat until no longer pink; drain. Stir in taco seasoning and water. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes. Stir in cream cheese until melted. Transfer to a bowl; cool. Chill for 1 hour., Cook pasta according to package directions; drain. Gently toss with butter. Fill each shell with about 3 tablespoons of meat mixture. Place 12 half of shells in a freezer container. Cover and freeze for up to 3 months. , To prepare remaining shells, spoon 1 cup salsa into a greased 9-in. square baking dish. Top with remaining stuffed shells and 1 cup taco sauce. Cover and bake at 350° for 30 minutes. Uncover; sprinkle with 1 cup each of cheeses and 1-1/2 cups chips. Bake 15 minutes longer or until heated through. 1 lb ground beef or 1 lb turkey
1 (3 ounce) packet taco seasoning
1 (12 ounce) jar salsa
1 lb pasta, whatever shapes you have on hand (Elbows, Wagon Wheels, Penne)
2 cups shredded cheddar cheese, divided
8 ounces sour cream (optional)
16 ounces sliced black olives (optional)
1 head lettuce

Steps:

  • Preheat oven to 350 degrees.
  • Cook Pasta until done.
  • While pasta is cooking brown the ground beef.
  • Drain ground beef and add taco seasoning per packet directions.
  • Drain Pasta and put into large mixing bowl.
  • Fold in Salsa, 1/2 the Cheese, and Ground Meat.
  • Put into 13X9 casserole dish.
  • Top with remaining Cheese.
  • Bake for 30 minutes until warmed through - Cheese should be melted and bubbly.
  • Top with Sour Cream, Shredded Lettuce, Sliced Black Olives etc. Whatever you use to top your tacos!

1 can tomato, diced (15 oz - 425g)
1 can whole kernel corn, (15 oz - 425g)
1 can tomato sauce, (15 oz - 425g)
2 cups water
1 package taco seasoning
salt, to taste
pepper, to taste
2 cups elbow macaroni, uncooked
1 ½ cups colby jack cheese

Steps:

  • In a large quart pot over medium-high heat brown the ground beef. Drain fat and return beef to the pot.
  • Add taco seasoning, water, diced tomatoes, corn and tomato sauce. Bring to a boil.
  • Add uncooked macaroni and reduce heat to low. Cover and simmer for 10-15 minutes (until pasta is cooked through). Stir occasionally.
  • Remove from heat. Sprinkle cheese on top and cover.
  • Serve once cheese is melted!
  • Enjoy!

16 large dried pasta shells, prepared according to package directions, rinsed and drained
1 lb extra lean ground beef
1 (1 1/4 ounce) package taco seasoning mix
1 cup water
1 (16 ounce) can refried black beans
1 cup shredded low-fat cheddar cheese, divided
1 (16 ounce) jar salsa, divided (mild)
1/4 cup sliced green onion
sour cream (optional)

Steps:

  • PREHEAT oven to 350°F Cook beef in large skillet until brown; drain. Add seasoning mix and water; cook over low heat for 5 minutes or until thickened. Add beans and 3/4-cup cheese; mix well. Spread 1/4-cup salsa over bottom of each of two 8-inch-square (2-quart) baking dishes.
  • FILL pasta shells with beef mixture; place half of shells in each baking dish, filled side up. Spoon remaining salsa over shells. Cover one baking dish with plastic wrap, then wrap with foil. Label and freeze for up to 2 months.

I found this recipe in a magazine a couple of years ago and it is a favorite at our house. We love cream cheese so I usually add a bit more than what the recipe calls for. The original recipe says you can double it and freeze one pan for up to 90 days. I haven't tried that but if you do, let me know how it turns out.

6 cups shredded lettuce
1 cup chopped tomato
1 cup sliced green onions
1 (8 ounce) package nacho cheese-flavored corn chips (such as Doritos®), crushed

Steps:

  • Heat a large skillet over medium-high heat. Add beef and taco seasoning; saute until beef is browned and crumbly, 5 to 7 minutes. Let cool.

I made this with taco leftovers and my family loved it. I think it works best with fettuccine, but you can use your favorite pasta.

16 ounces dry fettuccine pasta
1 pound lean ground beef
1 (1.25 ounce) package taco seasoning mix
4 ounces shredded Cheddar cheese
3 tomatoes, diced
salt to taste
ground black pepper to taste
1 pinch garlic powder
¾ (6 ounce) can black olives, drained and chopped
2 tablespoons grated Parmesan cheese

Steps:

  • Cook pasta in a large pot of boiling salted water until al dente. Drain.
  • Meanwhile, in a large skillet cook ground beef. Drain excess grease. Add taco seasoning packet as directed on package.

I wanted a salad like this but couldn't really find anything that fit the bill and decided to create one...this is it! The kids eat it like crazy! A really good taco pasta salad without meat...you could add it if you wanted to...but why when this is sooo tasty!! Please note that this salad gets better if made the day or even two before. If you don't like spicy you can use regular taco seasoning instead of the hot and spicy, and leave out the jalapenos. Not really sure how long to make this so it's a guess but that doesn't include the chilling time.

1 (16 ounce) bottle ranch dressing

dried chipotle powder
2 (15 ounce) black beans (rinsed and drained)

3 -4 green onions, chopped
1/2 red bell pepper, chopped
2 teaspoons garlic
1/4 red onion, chopped

black olives (optional. amount according to taste) (optional)

Steps:

  • Placed cooked radiatore in large bowl and add black beans, kidney beans, corn, green onions, red bell pepper, garlic and red onion, tomatoes, Black olives if your using them.
  • Sauce:.
  • in a bowl mix the ranch dressing, taco seasoning mix, Italian, jalapenos. Mix thourghly. I sprinkle the chipotle seasoning to taste.
  • pour sauce over the pasta bowl, add the cheese to your liking and stir till well coated.
  • Chill for 1 hour -- although this is better the more it ages so can be made a day or two ahead.
  • Note: You will probably have more dressing than you need, I used it as a dip with chips and cheese -- Yummy!

1/4 cup butter
1/4 cup Gold Medal™ all-purpose flour
1 teaspoon chili powder
1/2 teaspoon salt
1/4 teaspoon ground cumin
1/4 teaspoon pepper
1 1/2 cups Progresso™ chicken broth (from 32-oz carton)
2 1/2 cups shredded Cheddar cheese (10 oz)
1 can (10 oz) Old El Paso™ enchilada sauce
1 lb lean (at least 80%) ground beef
1 cup finely chopped onions (2 medium)
1 can (10 oz) diced tomatoes & green chiles

Steps:

  • Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. In 4-quart saucepan, cook and drain pasta as directed on box. Return to saucepan; set aside.
  • In 2-quart saucepan, melt butter over medium heat. Stir in flour, chili powder, salt, cumin and pepper with whisk until smooth. Gradually stir in broth. Cook and stir until slightly thickened. Stir in 1 1/2 cups of the cheese and the enchilada sauce until cheese is melted. Remove from heat; set aside.
  • Meanwhile, in 10-inch skillet, cook beef and onions over medium-high heat 8 to 10 minutes, stirring occasionally, until thoroughly cooked; drain. Stir in tomatoes.
  • Add beef mixture and cheese mixture to pasta. Pour into baking dish; sprinkle evenly with remaining 1 cup cheese.
  • Bake 15 to 20 minutes or until thoroughly heated and cheese is melted.

Move over Hamburger Helper™, there's a new player in town and it is just as quick as a boxed meal, but better! I use tomato powder (it's not as messy as tomato paste, but feel free to use tomato paste). I do not recommend regular sour cream as it tends to curdle. Garnish with additional cheese and crema.

½ pound 93% lean ground turkey
1 ½ cups uncooked large elbow macaroni
1 ¼ cups water
1 (10 ounce) can diced tomatoes with green chiles (such as Rotel®)
2 tablespoons tomato powder
1 ½ cups shredded sharp Cheddar cheese
¼ cup Mexican crema (such as Cacique(R) Crema Mexicana Agria)
2 tablespoons taco seasoning mix, or more to taste
1 teaspoon onion powder
1 medium fresh jalapeno pepper, sliced
2 tablespoons sliced black olives

Steps:

  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Add ground turkey and cook, breaking up into crumbles, until browned, about 5 minutes. Add macaroni, water, diced tomatoes with liquid, and tomato powder; mix well. Cancel Saute function.
  • Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 10 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions, about 10 minutes. Release remaining pressure carefully using the quick-release method, about 5 minutes. Unlock and remove the lid.
  • Stir in Cheddar cheese, crema, taco seasoning, and onion powder until well combined.
  • Serve immediately, garnished with jalapeno and black olive slices.

1/2 (16 ounce) package rotini pasta
1-2 chicken breast cooked, cooled and cubed (about 1 1/2-2c)
1/4 c vegetable oil
1/3 c lime juice
1 Tbsp chili powder, or to taste
1 Tbsp chipolte powder
2 tsp cumin
1/2 tsp salt
2 clove garlic, minced
1 small can, (drained) or 1 1/2 cups whole kernel corn
1 (15 oz) can dark or light red kidney beans, drained and rinsed
1 diced green, red or combo bell pepper
1/2 red onions. finely chopped
1/2 c fresh cilantro leaves roughly chopped
1/2 (14.5oz) can of diced tomatoes, drained well
1 small 4 oz can of black olives, drained
1 c shredded cheddar cheese or monterey jack

Steps:

  • 1. In a large bowl, whisk together oil, lime juice, chili powders, cumin, salt and garlic. Add chicken and place into the refrigerator to allow to sit while pasta cooks, cans are opened and veggies are chopped.
  • 2. Cook pasta 8-10 min and drain well. Rinse under cool water to stop cooking process and leave in strainer to completely drain and cool while gathering ingredients.
  • 3. To the bowl with the chicken, add pasta and toss to coat. Add in olives, corn, kidney beans, green bell pepper and 1/4c of the cilantro. Refrigerate or serve immediately. Add cheese and give a quick stir right before serving. Garnish with remaining 1/4c cilantro right before service. This is best making a day prior and tossing in the cheese and topping with the cilantro at the last minute.

1 (8 ounce) package rotini pasta
1 tablespoon olive oil
1 ½ pounds top round steak, cut into 1/4 inch strips
1 (1.25 ounce) package taco seasoning mix
3 cloves crushed garlic
2 cups chunky salsa
1 (15 ounce) can black beans, rinsed and drained
½ cup water
1 tablespoon chopped fresh cilantro

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • In a small bowl roll beef strips in the taco seasoning until coated. In a large skillet over medium heat, warm olive oil. Saute beef and garlic until beef is no longer pink; about 4 minutes. Remove with a slotted spoon and set aside.
  • Mix together in skillet the cooked pasta, black beans, salsa and water; cook for 4 to 5 minutes. Combine with beef in a large bowl and serve sprinkled with cilantro.

1-1/2 pounds ground beef
1 medium onion, chopped
1 package (8 ounces) cream cheese, cubed
2 envelopes taco seasoning
1 to 2 tablespoons minced chives
1 package (12 ounces) jumbo pasta shells, cooked and drained
2 cups taco sauce
2 cups shredded plain or Mexican process cheese (Velveeta)
1 cup coarsely crushed tortilla chips

Steps:

  • In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in the cream cheese, taco seasoning and chives; cook until cream cheese is melted. Stuff into pasta shells. , Place in a greased 4-qt. baking dish. Top with taco sauce. Bake, uncovered, at 350° for 20 minutes or until heated through. Sprinkle with cheese and tortilla chips. Bake 5 minutes longer or until the cheese is melted.
