ITALIAN SAUSAGE AND ORZO SOUP



Italian Sausage and Orzo Soup image

This Italian Sausage and Orzo Soup recipe is easy to make, full of zesty seasonings, and so cozy and delicious.

Number Of Ingredients 13

1 pound ground Italian sausage (mild or spicy)
1 medium white onion, peeled and diced
2 medium carrots, diced
1 celery stalk, diced
6 cloves garlic, minced or pressed
1/2 teaspoon crushed red pepper flakes
1 (15-ounce) can fire-roasted diced tomatoes
8 cups chicken stock (or beef or veggie stock)
1 tablespoon Italian seasoning
1 cup uncooked orzo pasta
fine sea salt and freshly-cracked black pepper
2 large handfuls fresh baby spinach or kale
optional toppings: freshly-grated Parmesan, chopped fresh basil and/or parsley

Steps:

  • Heat a large stockpot over medium-high heat. Add the ground sausage and sauté until browned and cooked through, stirring and crumbling with a wooden spoon as it cooks. Use a slotted spoon to transfer the cooked meat to a clean plate and set it aside, reserving 1 tablespoon of grease in the pot. (If there is more grease in the pot, discard it. If there is no grease remaining, add 1 tablespoon of olive oil to the stockpot.)
  • Add the onion, carrots and celery and stir to combine. Sauté for 6-7 minutes, stirring occasionally, until the onions are softened and translucent. Add the garlic and crushed red pepper flakes and sauté for 2 more minutes, stirring occasionally.
  • Add the diced tomatoes, stock, Italian seasoning and cooked sausage and stir to combine. Continue cooking until the broth reaches a simmer, then reduce heat to medium-low to maintain the simmer.
  • Stir in the orzo until combined. Cover the pot with a lid and continue simmering the soup, stirring occasionally so that the orzo doesn't stick to the bottom of the pot, until the orzo is al dente.
  • Stir the spinach into the soup. Taste and season with salt and black pepper, as needed. (Feel free to also add in extra Italian seasoning, if you would like.)
  • Serve immediately, garnished with your favorite toppings.

1/2 lb lean ground beef or 1/2 lb chorizo sausage
5 cups water
4 beef bouillon cubes
1 cup salsa (mild, med or hot)
3/4 teaspoon chili powder
1/4 teaspoon ground cumin
1/3 cup scallion, sliced
1/3 cup sour cream
1/3 cup tortilla chips, crushed

Steps:

  • In medium saucepan brown meat; drain.
  • Add water, bouillon, salsa, and chili powder; heat to boiling.
  • Add uncooked orzo; reduce heat.
  • Cook, uncovered, at a medium boil, stirring frequently, for 12 minutes or until orzo is tender.
  • Serve sprinkled with onion, tortilla chips and dollops of sour cream.
  • 7 servings (1 cup each).

3/4 pound bulk fresh chorizo or spicy pork sausage
1 large onion, chopped
1 medium sweet red pepper, chopped
1 poblano pepper, seeded and chopped
3 garlic cloves, minced
1/3 cup all-purpose flour
1 teaspoon ground cumin
1/2 teaspoon salt
1/2 teaspoon pepper
2 cartons (32 ounces each) reduced-sodium chicken broth
1-1/2 pounds potatoes (about 4 medium), peeled and cut into 1/2-inch cubes
3 cups frozen corn (about 16 ounces)
1/2 cup sour cream
Optional: Queso fresco and chopped fresh cilantro

Steps:

  • In a Dutch oven, cook and crumble chorizo over medium heat until cooked through, 4-6 minutes. Using a slotted spoon, remove chorizo to paper towels, reserving 2 tablespoons drippings in pan., In drippings, saute onion and the red and poblano peppers over medium heat until tender, 8-10 minutes. Add garlic; cook and stir 1 minute. Stir in flour and seasonings until blended; cook and stir 3 minutes. Gradually stir in broth., Add potatoes and corn; bring to a boil. 1/2 cup sliced fresh mushrooms
1/2 cup sliced zucchini
1/4 cup chopped onion
1 teaspoon olive oil
1 garlic clove, minced

1 cup canned diced tomatoes, undrained
1/2 teaspoon dried basil
1/8 teaspoon pepper

8 ounces orzo pasta
1 teaspoon olive oil
3 carrots, chopped, or more to taste
3 ribs celery, chopped
1 onion, chopped
2 cloves garlic, minced
½ teaspoon dried thyme
½ teaspoon dried oregano
salt and ground black pepper to taste
1 bay leaf
3 (32 ounce) cartons fat-free, low-sodium chicken broth
½ cup fresh lemon juice
1 lemon, zested
8 ounces cooked chicken breast, chopped
1 (8 ounce) package baby spinach leaves
1 lemon, sliced for garnish
¼ cup grated Parmesan cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook orzo in the boiling water until partially cooked through but not yet soft, about 5 minutes; drain and rinse with cold water until cooled completely.
  • Heat olive oil in a large pot over medium heat. Cook and stir carrots, celery, and onion in hot oil until the vegetables begin to soften and the onion becomes translucent, 5 to 7 minutes. Add garlic; cook and stir until fragrant, about 1 minute more. Season mixture with thyme, oregano, salt, black pepper, and bay leaf; continue cooking another 30 seconds before pouring chicken broth into the pot.
