1 ½ pounds lean ground beef
1 cup crushed tortilla chips
¾ cup shredded pepper Jack cheese
1 small onion, chopped
1 (1 ounce) packet taco seasoning mix
2 eggs, beaten
½ cup milk
¼ cup mild red taco sauce, or more to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Thoroughly combine beef, tortilla chips, pepper Jack cheese, onion, and taco seasoning in a bowl.
  • Whisk eggs, milk, and taco sauce together in a separate bowl. Add to meat mixture and stir until well combined.
  • Press mixture into a 9x5-inch loaf pan and top with a strip of taco sauce down the center.
  • Bake in the preheated oven until cooked through and browned on top, 45 to 60 minutes.

2 cups shredded sharp Cheddar cheese
1 ½ cups crushed corn chips
1 cup salsa
1 egg
1 (1 ounce) packet taco seasoning mix
salt and ground black pepper to taste
¼ cup taco sauce, or as needed

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Combine ground beef, ground pork, Cheddar cheese, corn chips, salsa, egg, taco seasoning mix, salt, and pepper in a large bowl; mix until well combined. Form mixture into 12 equally-sized balls and press into a 12-cup muffin tin. Baste each "muffin" with taco sauce to coat.

1 (14.5 ounce) can Mexican stewed tomatoes, chopped
1 (4 ounce) packet saltine crackers, crushed
½ large onion, chopped
½ green bell pepper, chopped
1 egg
1 package taco seasoning mix
6 slices pepper Jack cheese
¼ cup BBQ sauce, or to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Mix beef, stewed tomatoes, saltine crackers, onion, bell pepper, egg, and taco seasoning together in a bowl until thoroughly combined. Transfer 1/2 the mixture to a 9x13-inch pan. Place pepper Jack cheese slices down the middle. Top with remaining meat mixture to seal cheese in between. Top with BBQ sauce.

1 egg
1/2 c sour cream
1/3 c salsa
3-4 Tbsp taco seasoning (store bought)
salt to taste
1 c crushed tortilla chips
1/2 c shredded cheddar cheese
2 lb lean ground beef
optional sliced tomato, chopped black olives, chopped green onion, shredded lettuce

Steps:

  • 1. In a large bowl, whisk egg and add all ingredients except ground beef. Mix well. Add ground beef and mix well.
  • 2. Shape into loaf in baking dish. Bake at 350 F for 60-70 minutes. Time will depend on how thick you make your loaf.
  • 3. While hot, place on serving platter. Top with sliced tomato and grated cheese. Loosely cover with foil so the heat from the meatloaf melts the cheese.
  • 4. Meanwhile, prepare any combination of shredded lettuce, chopped green onion, chopped black olives, sour cream and extra salsa to serve on the side or on top of meatloaf.

1 egg
1/4 cup sour cream
1/4 cup salsa
2 tablespoons taco seasoning
1/4 cup diced onion
1/4 cup shredded cheddar cheese
1/2 cup to 1 cup crushed doritos (flavor of your choice)
1 pound hamburger
extra shredded cheddar cheese for the top
1/2 cup salsa for the top
OPTIONAL:
garnish with: lettuce, tomatoes, onions, black olives, salsa, and sour cream

Steps:

  • 1. In a large bowl, whisk together the first 6 ingredients (except doritos, hamburger and the EXTRA cheese and salsa). Add hamburger. Mix well. Add doritos until it has the consistency of regular meatloaf. ( you may add more or less doritos as desired texture) Place meatloaf mixture in a baking dish. Bake at 350 degrees for an hour or so until done. Add the extra salsa and then the cheese on top. Return to the oven just until the cheese melts. (5 minutes) Serve with lettuce, tomatoes, onions, black olives, salsa, and sour cream if desired.

BACON-TACO CHEESEBURGER MEATLOAF

This a twist on Paula Deen's recipe. I didn't have enough cheddar cheese, so I added some parmesan and mozzarella. I also did not add the mayonnaise because I thought it would be too mushy. The taco seasoning was added to give a bit of a kick.

  • Press meat mixture into a 9 by 5 by 3-inch loaf pan, or shape into a loaf and place on a rack in a broiler pan. Place 3 slices of bacon on top of meatloaf. Bake for 40 minutes. I used the Flavorwave Oven.

You might not be able to find whole wheat bread crumbs. I usually de-crust 1-2 slices of whole wheat bread and dry in the oven and then crumble. The last two ingerdients are for the topping. Easily halved or even cut into thirds.

1 egg white

2 slice fat-free cheddar cheese
1/2 c shredded fat-free cheddar cheese
1/2 c canned sweet corn kernels
1/4 c chopped green bell peppers
1/4 c chopped onions
1/2 c salsa
1/2 pkg taco seasoning mix, (dry)

Steps:

  • 1. Preheat oven to 375 Cook peppers and onions for 3 minutes over medium heat in a pan sprayed with nonstick spray. In a large bowl, combine onions and peppers with turkey, corn and seasoning mix. Spread half of the mixture evenly into the bottom of a loaf pan (about 9" x 5" sprayed with nonstick spray. Layer the two slices of fat-free cheese on top of the mixture ( try to keep slices away from the pan's edges). Evenly top with the remaining meat mixture. Poor the salsa over the top of the loaf. 1 green bell pepper, chopped
1/3 cup green onion, chopped

3 eggs, lightly beaten
3/4 cup tortilla chips, crushed
1 medium onion, minced

1 lb ground beef
1 lb ground pork
1 cup corn kernel
1/2 cup monterey jack pepper cheese, shredded (2 oz Monterey Jack with jalapeno)

Steps:

  • In a medium bowl, combine crushed tomatoes (minus 1/2 cup for the meatloaf), green pepper, green onions, fresh cilantro, jalapeno lime juice and 1/4 teaspoon salt; set aside.
  • In a large bowl, combine 1/2 cup crushed tomatoes and crushed tortilla chips; stir in onions, garlic, cumin, paprika, and 1/2 teaspoon salt and 1/2 teaspoon pepper. Add ground beef, ground pork, and corn; mix well and form into a round or oblong loaf to fit slow cooker.
  • Arrange three 18-inch long strips of aluminum foil, folded double so they criss-cross; place meatloaf in the center and transfer to slow cooker.
  • Cook on low 5 to 6 hours or on high 2 1/2 to 3 hours, covered (instant read thermometer will read 160 degrees F).
  • Carefully use aluminum to lift meatloaf to a cutting board; carefully remove aluminum, sprinkle with cheese, and let stand 10 minutes.
  • Serve with Smoky Tomato Salsa and garnishes, if desired.
  • OVEN VARIATION: Preheat oven to 350 degrees F. Place shaped loaf in shallow baking pan. Bake for 1 1/4 hours or until an internal 160 degrees F on an instant read meat thermometer. Sprinkle with cheese, let rest 10 minutes and serve with garnishes, if desired.

I found this recipe in the "Cooking with Paula Deen" magazine and prepared it for my family. It is the hands down the best meatloaf I've ever had and my family was very pleased. Give this one a try and I think you'll agree. When you do, share your thoughts. One thing I learned about preparing meatloaf; when mixing and forming it, don't manhandle it. Over handling and squeezing the ingredients into the meat to blend cause the meatloaf to be tough; handle with care and you'll be rewarded with a wonderful meal.

3/4 teaspoon salt
1/4 cup salsa, mild

  • Preheat oven to 350 degrees.
  • Place a wire rack on a foil-covered bakiing sheet.
  • In a large bowl, gently combine beef, crushed chips, zucchine, onion, beans, egg, fajita seasoning and salt.
  • Form mixture into a loaf and place on a prepared wired-rack.
  • Bake 40 minutes.
  • Top with cheese and salsa.
  • Bake for an additional 20 minutes or until a meat thermometer inserted in meatloaf registers 165 degrees.
  • Note: Meatloaf can also be baked on the rack of an aluminum foil-lined broiler pan. I covered my wire rack with foil and cut slits in it randomly so fat could drain off onto the baking sheet preventing the meatloaf from soaking in fat as it cooks.

1/3 c brown rice, uncooked
1/2 c crushed doritos (nacho cheese)
1/4 c salsa, chunky
1 1.25oz pkg taco seasoning
2 beaten eggs
jar salsa con queso

Steps:

  • 1. Lighty combine all ingredients except salsa queso.
  • 2. Form large meatballs and place in bundt pan overlapping, then slighty pat into pan. Top with some salsa or taco sauce. Bake in preheated 350 oven for 45min.
  • 3. Let meatloaf rest for 10 min. Flip onto plate. melt cheese sauce and drizzel on top. Slice and serve with on lettuce with cilantra, salsa, and sour cream.

I have also found that if turkey and beef are combined it is a bit drier, you can use all turkey or all beef it is really up to you.

1 cup breadcrumbs
1 cup mild enchilada sauce, divided
1 ounce taco seasoning mix
1 small bell pepper, finely diced
1 jalapeno, seeded and finely diced
1/2 yellow onion, finely diced
1 egg, beaten
3/4 cup shredded mexican cheese
sliced jalapeno, for garnish
chopped cilantro, for garnish

Steps:

  • Preheat oven to 350 F and line a baking sheet with parchment paper.
  • Add the beef, bread crumbs, 1/2 cup enchilada sauce, taco seasoning, bell pepper, jalapeño, onion, and egg to a large bowl. Mix to combine.

I was disappointed with the lack of flavor of other Mexican meatloaves so I created this one. The secret to this moist loaf is the white bread although it may seem out of place. Its a little work but your tastebuds will thank you!

1 lb 80% ground beef
1 medium yellow onion, diced
1 bunch green onion (divided)
1/3 cup green bell pepper
2 poblano chiles, peppers (pasilla, divided)
1/2 cup diced black olives
1 jalapeno, seeded finely diced
1/2 cup crushed spicy nacho Doritos
1 slice white bread (finely diced)
2 tablespoons taco sauce (I use Taco Bell mild sauce)
1 whole egg plus 1 egg white
1/4 cup half-and-half
16 ounces Velveeta cheese
10 oz.can Rotel tomatoes & chilies
4 tablespoons salsa
1 teaspoon vegetable oil
1 ounce taco seasoning (I use Old El Paso)

Steps:

  • Move oven rack to top insert and broil poblano 4-5 minutes on each side until skin is blistered and mostly black. Remove and place in an airtight container for 20 minutes. Gently remove blistered skin and dice poblano.
  • Dice onions, green pepper and jalapeño. Sautee in a bit of oil until onion is almost translucent. Allow to cool completely.
  • Dice black olives and green onions.
  • In a large bowl, combine the ground beef, 1/2 onion/jalapeño/green pepper mixture, 1/2 of the poblano, 1/2 green onions, and 1/2 cup Black olives, 1/2 cup Crushed Doritos, finely diced white bread slice, 2 tablespoons of taco sauce, whole packet of taco seasoning, 1/4 cup Half and half, and 1 egg and egg white.
  • Shape into 4 small meatloaves and place on baking sheet. Bake at 350 degrees until loaves reach 160 degrees.
  • Cut Velveeta into small cubes and add can of Rotel. Add in the remaining poblano, onions/jalepeno,and 4 tablespoons of salsa and cook over medium heat in saucepan until combined and melted stirring frequently. Serve over meatloaf. Sprinkle remaining green onions over loaves.
