LOADED TACO WAFFLE FRIES

One 22-ounce bag frozen waffle fries
1 1/2 teaspoons vegetable oil
8 ounces ground beef (85% lean)
1 tablespoon taco seasoning (about half of a 1-ounce package)
1 cup shredded Cheddar
1 cup shredded iceberg lettuce
1/2 cup drained pinto beans
1/4 cup pickled jalapenos
1/4 cup sliced black olives
2 Roma tomatoes, seeded and chopped
1 small avocado, chopped
Sour cream, for serving
1/2 cup mayonnaise
2 tablespoons yellow mustard
2 tablespoons hot sauce, such as sriracha

Steps:

  • For the taco fries: Preheat the oven to 450 degrees F.
  • Spread the waffle fries out on a large rimmed baking sheet and bake, stirring once, until golden brown and crisp, about 25 minutes.
  • Meanwhile, heat the oil in a medium skillet over medium-high heat. Add the ground beef and cook, breaking up any clumps with a wooden spoon, until brown, about 5 minutes. Stir in the taco seasoning, then add 1/4 cup water and simmer until the liquid evaporates, about 2 minutes.
  • Transfer the waffle fries to a large plate. Mound the beef in the middle, then sprinkle the cheese, lettuce, beans, jalapenos, olives, tomatoes and avocado over the top. Dollop with sour cream.
  • For the creamy hot sauce: Mix together the mayonnaise, yellow mustard and hot sauce in a small bowl. Drizzle over the top and serve.

1 (16 ounce) bag frozen french fries
2 lbs lean ground beef
2 (1 1/4 ounce) taco seasoning mix
1 1/2 cups water
1 cup salsa, any variety
1 (15 ounce) can black beans, drained
1 (6 ounce) can sliced black olives, drained
1 (4 ounce) can diced green chilies
2 cups cheddar cheese, shredded
1 cup sour cream (optional)

Steps:

  • Follow package directions for baking fries. Set aside.
  • Brown ground beef in medium skillet over medium-high heat, adding the 2 taco seasoning mix packages along with the 1 1/2 cups water. Cook 5 minutes then remove from heat.
  • Spoon salsa, beans, black olives, diced green chilies, cheese and sour cream into separate bowls. Place fries in large bowl near meat mixture and toppings. Using heat-resistant ceramic plates, allow guests to create their own chili fries with meat and toppings. Hold back on the sour cream until after mixture has been broiled.
  • Place ceramic plate under broiler about 4 minutes or until fries reheat and cheese melts. Top with sour cream, if desired. Serve immediately.

I have not tried this recipe. I got the recipe from a recipe chat board. You can use green or yellow peppers in place of the red pepper.

2 1/4 lbs frozen french fries
1 tablespoon taco seasoning
1/4 cup green onion, chopped
1/2 cup seeded diced tomatoes
1/4 cup diced red pepper
1 (10 ounce) can cheddar cheese soup
1/2 cup milk
1/8 teaspoon cayenne pepper

Steps:

  • Bake french friends on foil-lined 11x17 inch cookie sheet oven for 15 minutes.
  • Sprinkle with seasoning mix, onion, tomato and pepper.
  • Mix.
  • Whisk soup, milk and cayenne pepper until smooth. Drizzle over fries evenly.
  • Bake in 450 F oven for 10 minutes until bubbling around edges.
