Steps:
- Cook the ground beef over medium heat until brown, then drain.
- Return meat to pan and add the salt, onions, paprika, chili powder and water.
- Let mixture simmer over medium heat for 10 minutes, stirring often.
- Pre-heat oven to 400.
- Spray both sides of the tortillas with cooking spray and bake until crisp.
- Heat refried beans.
- Stack each pizza by first spreading 1/3 C beans on one tortilla.
- Next add 1/3 C meat, then another tortilla.
- Top the second tortilla with 2 T of salsa.
- Divide the tomato, cheese, onions and olives evenly and top in that order.
- Bake for an additional 8-12 minutes.

Steps:
- Sautee onion in oil. Add beans and taco seasoning. Heat through.
- Spread mixture evenly on 5 tortillas. Top with other 5 tortillas.
- Spread with enchilada sauce. Sprinkle tomatoes, then cheese, then olives, then green onions on top, dividing evenly between all five "pizzas.".
- Broil in oven for 1-2 minutes or until "cheese" is melted.
- Cut each "pizza" into four sections with pizza cutter.

- 1. Using your hands, mix together beef, taco seasoning, and water. 2. Brown the beef mixture in a skillet over medium-high heat for 5-6 minutes, using a wooden spoon or spatula to break up the meat as it cooks; set aside. 3. In 375 degree oil, fry tortillas for 30-45 seconds per side, keeping as flat as possible and popping any bubbles that may form; drain on brown paper bags. 4. Spread beans, then meat, then picante sauce/salsa over 4 of the tortillas; set aside. 5. Spread cheese, then tomatoes, then onions over remaining tortillas; stack one of these tortillas on each of the others. 6. Place pizzas under a hot broiler just until cheese has melted.

TACO BELL MEXICAN PIZZA
I love getting the Mexican pizza from Taco Bell. The perfect late night snack! It is really easy to prepare this at home and is a great dinner or snack idea to make when you have leftovers from a taco dinner.

- In a large skillet, brown the beef over medium heat.
- Once cooked, drain the excess fat from the pan.
- Add salt, onions, paprika, black pepper, chili powder and water, then let the mixture simmer over medium heat for 8-10 minutes. Stir frequently.
- Heat the Crisco shortening in a heavy skillet over medium-high heat. If the oil is smoking, it is too hot.
- Fry each tortilla for about 45 seconds per side, or until golden brown and let drain on paper towels.
- Heat up the refried beans in a small saucepan. Preheat oven to 400 degrees.
- To assemble the pizza: Spread about 1/3 cup refried beans on face of one tortilla.
- Next spread 1/4 of meat, then another tortilla.
- Coat the tortillas with two tablespoons of salsa, then split up the tomatoes and stack them on top.
- Next divide up the cheese, onions and olives, stacking in that order.
- Place pizzas on a sheet pan and in the oven for about 8 minutes or until cheese on top is melted.
