Created for Dining on a Dollar Contest 2010 I used brown rice as per the ingredient list but you can substitute Calrose white rice, You can also add a 4oz. can of diced jalapeno peppers or diced green peppers, mild, medium or hot. I would not personally put the whole can of jalapeno peppers in it but some people do like it very spicy and hot. Warm the tortillas.

1/2 cup spaghetti, broken 1 inch pieces
1 cup brown rice, uncooked
2 tablespoons margarine or 2 tablespoons butter
1 tablespoon chicken broth, mix (Sysco ) or 2 chicken bouillon cubes
1 (15 ounce) can black beans, with liquid
2 tablespoons dried onion, minced
16 ounces hot water
1 teaspoon ground red chili pepper
1 teaspoon ground cumin
1/2 teaspoon black pepper
1 (15 ounce) can tomato sauce
8 corn tortillas

Steps:

  • In large frying pan add spaghetti, brown rice and margarine.
  • Stir on medium heat until spaghetti and brown rice starts to turn a golden color.
  • Add opened black beans with juice, minced dried onion chicken broth base or bouillion cubes, hot water, chili pepper. ground cumin, black pepper and tomato sauce.
  • Stir to mix all ingredients.
  • Cover and turn heat to low. Simmer 20 to 25 minutes. Stir occasionally.
  • Take off when spagetti and rice is cooked and liquid absorbed.
  • Serve with warmed tortillas.

1 cup chopped onion
1 cup chopped green bell pepper
1/4 teaspoon salt
1/4 teaspoon black pepper
4 cups water
1 (1 1/4 ounce) package taco seasoning, divided
4 cups instant rice, uncooked
2 (8 ounce) cans tomato sauce
1 lb ground beef or 1 lb vegetarian ground beef
16 ounces fat-free refried beans
8 ounces reduced-fat cheddar cheese, shredded

Steps:

  • Preheat oven to 350.
  • In large saucepan, mix together the first 5 ingredients plus half the taco seasoning. Bring to a boil and remove from heat. Stir in rice, cover and let stand 5 minutes, then add tomato sauce.
  • Meanwhile, in a large skillet, cook ground beef over med-high heat until browned. Drain off the grease. Mix the remaining taco seasoning with the beef.
  • In a 13x9" baking dish coated with cooking spray, spread half of the rice mixture. Spread the refried beans evenly over the top. Then spread the beef mixture and top with 1/2 the cheese. Spread remaining rice mixture, and top with the remaining cheese.
  • Bake at 350 degrees for 10 minutes, or until cheese melts.

Salsa adds lots of flavor to this warm salad. From "Recipes for Busy Cooks" by the Rice a Roni folks.

Number Of Ingredients 10

3/4 lb lean ground beef
1/2 cup chopped onion
1 (6 7/8 ounce) package beef flavored Rice-A-Roni
1/2 cup salsa
1 teaspoon chili powder
4 cups shredded lettuce
1 medium tomatoes, chopped
2 ounces shredded monterey jack cheese or 2 ounces cheddar cheese
1/2 cup crushed tortilla chips (optional)
sour cream (optional)

Steps:

  • In a large skillet, brown ground beef and onion; drain.
  • Remove from skillet; set aside.
  • In the same skillet, prepare Rice a Roni Mix as package directs.
  • Stir in meat mixture, salsa and chili powder; continue cooking over low heat 3 to 4 minutes or until heated through.
  • Arrange lettuce on serving platter.
  • Top with rice mixture, tomato and cheese.
  • Top with Tortilla chips, if desired.
  • Add a dollop of sour cream, if desired.
  • Makes 5 servings.

This Mexican casserole with beef and rice is a super easy recipe for family dinner. Garnish with your favorite toppings. I like to top with shredded lettuce and chopped cilantro! More shredded cheese is always good, too.

nonstick cooking spray
1 pound ground beef
1 yellow onion, diced
2 cloves garlic, minced
1 tablespoon taco seasoning
1 (15 ounce) can black beans, drained
1 (14 ounce) can fire-roasted diced tomatoes
1 bunch fresh spinach, trimmed and coarsely chopped
2 cups low-sodium chicken broth
2 cups shredded Mexican cheese blend, divided
1 cup long-grain rice
1 cup red salsa

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Spray a 9x13-inch casserole dish with cooking spray.
  • Heat a large skillet over medium-high heat. Add ground beef and start to brown, then add onion, garlic, and taco seasoning. Cook until beef is no longer pink, 5 to 7 minutes. Drain and discard any excess oil. Add beans, tomatoes, spinach, chicken broth, 1 cup Mexican blend cheese, rice, and salsa. Pour into the prepared casserole dish.
  • Bake in the preheated oven until rice is cooked, 45 to 50 minutes. Take out of the oven, sprinkle with remaining cheese, and bake until cheese is melted, about 10 minutes more.
