1/3 cup bulgur
8 cups loosely packed parsley leaves, chopped
1 cup chopped fresh mint (preferably spearmint)
3 scallions, finely chopped
2 Persian cucumbers, unpeeled, finely chopped
1/4 cup chopped celery leaves
1 medium tomato, seeds removed, finely chopped
4 radishes, finely chopped
1/4 cup fresh lemon juice
1/3 cup extra-virgin olive oil
Kosher salt and freshly ground pepper

Steps:

  • Cook the bulgur as the label directs; cool. Transfer to a large bowl, then stir in the remaining ingredients; season to taste.

Tabouli (Lebanese Bulghur, Parsley, and Mint Salad) image

Tabouli is a Lebanese salad and is often served as part of a meza appetizer assortment, as well as on its own. This is my cousin's recipe, and according to her, you NEVER put garlic in tabouli, and there is no place in it for celery, cucumber, or any of the myriad of other ingredients with which some people like to adulterate it "to make it different". I agree with her wholeheartedly. This doesn't need anything else; just season it well with the salt, pepper, lemon, and olive oil.

1 cup medium Bulgar wheat (#2)
2 -3 bunches parsley, stemmed and chopped, depending on size
1 -2 bunch fresh mint leaves, finely chopped, depending on size, more to taste
2 bunches green onions, chopped
4 -5 ripe firm tomatoes, partially seeded and chopped
3 -5 lemons, juice of, to taste
1/2 cup extra virgin olive oil, to taste
salt & fresh ground pepper

Steps:

  • This recipe is a breeze if you have a food processor, a little more work if you don't.
  • If using a processor, chop parsley and mint together, using a pulsing action, to ensure that you don't end up pureeing them, and remove to a bowl.
  • Repeat with green onions, and add it bowl.
  • Chop tomatoes, preferably by hand, into about 1/4" dice, and add to bowl.
  • If you are making this for company, you might want to chop everything by hand.
  • It makes a much prettier dish than when made in the processor, but I never bother when it is for personal consumption; I just take a little care when using the processor.
  • Wash bulghur thoroughly, drain, and soak in fresh hot water for about 1 hour.
  • Drain and squeeze as dry as possible, and combine with vegetables.
  • Drizzle with lemon juice and olive oil.
  • Add salt and pepper to taste, and toss thoroughly.
  • You can be quite generous with the pepper.
  • Refrigerate for about an hour, taste, and adjust salt and pepper.
  • In addition to serving a a salad or part of a meza appetizer assortment, it is also good as dressing on a falafel or lamb sandwich in pita bread.

1 lb bulgur (cracked wheat)
7 cups boiling water
1 lb parsley, finely chopped
5 ounces mint, finely chopped
1 quart green onion, finely chopped
2 lbs tomatoes, chopped
2 cups lemon juice
7 tablespoons canola oil
1 1/2 teaspoons salt
1/2 teaspoon pepper, preferably freshly-ground

Steps:

  • Put bulgur into a large bowl and cover with boiling water.
  • Let stand 30 minutes.
  • After 15 minutes, if the bulgur seems dry, add a little more boiling water.
  • After 30 minutes, if it has extra water, drain it.
  • While bulgur soaks, prepare parsley, mint, etc.
  • After bulgur cools, add parsley, mint, onions and tomatoes.
  • Stir to mix well.
  • Cover and chill until serving time.
  • Makes 50 servings.
  • In a small bowl, whisk lemon juice, Canola Oil, salt and pepper.
  • Pour over salad and toss.

1/2 cup medium or coarsely cracked bulgur
1 1/2 cups boiling water
3/4 cup baby arugula leaves
2 large green onions, thinly sliced
3 tablespoons finely chopped fresh mint, plus fresh mint leaves for garnish
1/4 cup fresh lemon or lime juice
1 clove garlic, chopped to a paste
1/4 cup olive oil
Salt and freshly ground black pepper
Grilled shrimp, recipe follows
1/4 cup fresh lemon juice
3 tablespoons chopped fresh mint
1/4 cup canola oil
1/4 teaspoon ground black pepper
1 pound shrimp (20 to 24 size), shelled and deveined

Steps:

  • Place bulgur in a bowl and pour the boiling water over. Cover with plastic wrap and let stand until bulgur is tender and most of the water is absorbed, about 1 to 2 hours.
  • Drain off any excess liquid from the bulgur and stir in the arugula, green onions and mint.
  • Whisk together the lemon juice, garlic and oil and season with salt and pepper. Pour the mixture over the bulgur and season with salt and pepper.
  • Transfer tabbouleh to a platter and top with the grilled shrimp. Garnish with fresh mint leaves.
  • Combine juice, mint, oil and pepper in a blender and blend until smooth. Place shrimp in a bowl, pour marinade over and stir to coat evenly in the marinade. Marinate for 10 minutes.
  • Heat grill to high. Season shrimp with salt and grill for 1 to 2 minutes per side or until slightly charred and just cooked through.

An easy Lemon-Mint and Tabbouleh Salad. If you have trouble finding plain bulgur (cracked wheat), use one cup of bulgur (but not the seasoning packets) from two boxes of wheat salad mix, found in the rice and pasta section of the supermarket.
