BACON MUSHROOM SWISS MEATLOAF
This meatloaf is full of flavor, and a delicious twist on an old favorite. Bacon, onions, mushrooms, and Swiss cheese are added to ground beef and baked to perfection.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Place bacon in a skillet and cook over medium heat until the pieces are browned. Remove with a slotted spoon to paper towels. Discard all but 1 tablespoon of bacon grease. Stir in onions and mushrooms, and cook until soft. Remove from heat.
- In a large bowl, stir together beef, egg, and milk. Stir in the onion and mushrooms. Mix in about 4 ounces of Swiss cheese, and all but 1 tablespoon of bacon. Stir in cornflake crumbs, and mix until well blended. Shape into a loaf, and place in a meatloaf pan.
- Bake in a preheated oven for 1 hour. Drain fat, and sprinkle with remaining cheese and bacon. Return to oven, and bake until cheese is melted, about 5 minutes.

SWISS, BACON, MUSHROOM MEATLOAF
Swiss cheese with mushrooms & bacon is my favorite burger topping. So I thought why not make it a meat loaf. I had a lot of fresh herbs on hand so I used them but you could sub dry ones. I put a lot of vegetables in it and that keeps it moist. You can double it if you want very easily.

Steps:
- Cut the cheese in to 2 inch long and 1/4 inch wide strips.
- Set aside.
- Saute the mushrooms with 1 tbsp of the finely diced onion.
- Lightly Salt.
- When golden add 1/4 wine and 1 tsp finely chopped thyme. Let most of the wine cook away.
- Set aside.
- Saute the rest of the onion, celery & red pepper together until soft but not browned.
- In a large bowl mix all the herbs, seasoning salt, garlic powder, onion powder, pepper, Worcestershire sauce, ketchup, mustard, egg, milk with the bread crumbs.
- Add the sauteed vegetables and mix well.
- Using your hands mix in meat.
- Spray a foil lined baking pan with cooking spray.
- Put 2 strips strips of raw bacon down the center ( they will hang off the end of the pan).
- Put two strip of bacon across twice at about 2 inches from the center of the other bacon on either side ( they will hang off the side of the pan).
- Put about half the meat in the centre of the bacon strips and pat into an oval loaf shape.
- Arrange cheese on top of meat.
- Reserve 1/2 cup of mushrooms for sauce.
- Put the rest on top of cheese.
- Pat the rest of the meat over the top of mushrooms taking care to seal seams so that cheese does not leak out.
- Bring ends of bacon up and over the loaf.
- Bake at 350F for 1 hours till bacon is crisped and meat is done.
- Sauce:.
- Stir flour into reserved mushrooms in a small sauce pan. add wine & stock and cook & stir until thickened & smooth.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5-inch loaf pan. Tear the pumpernickel into pieces, and place into the work bowl of a food processor. Pulse several times to chop the bread into crumbs.
- Lightly mix the pumpernickel crumbs, ground chuck, ground pork, egg, onion, diced tomatoes, 1/4 cup of the reserved juice from the tomatoes, green pepper, onion powder, garlic salt, black pepper, Worcestershire sauce, and soy sauce together in a bowl until the mixture is very well combined. Do not over mix, or the meat loaf will be tough.
- Place half the meat mixture into the bottom of the prepared loaf pan, and gently press to smooth the top. Place 3 slices of Swiss cheese over the meat mixture, and spread the sliced mushrooms evenly over the cheese. Top the mushrooms with the remaining 3 slices of Swiss cheese, and spread the rest of the meat mixture in an even layer over the cheese. Press the top gently to smooth.
- Bake the meatloaf in the preheated oven for 45 minutes, then remove from oven and spread with the chili sauce in an even layer. Return the meatloaf to the oven and bake until the juices run clear and the chili sauce has thickened into a glaze, about 15 more minutes. Let the meatloaf stand for 10 minutes before slicing.

- Preheat an oven to 375 degrees F (190 degrees C). Grease a 3x7 inch loaf pan.
- Beat the eggs in a bowl to mix. Whisk in the cracker crumbs, onion, garlic, salt, pepper, and sage. Set aside 3 tablespoons of the Swiss cheese to use as a topping, and stir the rest into the egg mixture along with the ground beef. Pack the mixture into the prepared loaf pan.
- Bake in the preheated oven until no longer pink in the center, about 1 hour. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). About 2 minutes before the meatloaf is ready, sprinkle with the reserved Swiss cheese, and return to the oven until melted.

MUSHROOM SWISS MEATLOAF
My husband loves mushroom swiss burgers. I created this bunless alternative and now he has leftovers the next day. For meatloaf sandwich lovers, this is perfect! Just slap it between two pieces of bread!

- In a skillet, melt butter and saute onion until no longer opaque (you can adjust the amount to 1/2 onion if your family doesn't love onions like mine).
- Slice mushrooms and add, cooking until done. (You may substitute a 4 oz. can of mushrooms, drained.)
- While onions are cooking, mix ground beef, eggs, bread crumbs, Worcestershire sauce, salt and pepper. Stir well.
- Tear off a sheet of aluminum foil, approximately the size of a 9x13 pan.
- Spread meat mixture onto foil in the shape of the rectangle. Place cheese slices down the middle crosswise (down the short center). Pour on onions and mushrooms.
- Fold edges of meat in towards the center. Seal seam.
- Flip the meat over into a baking dish, such as a 9x13 glass dish, seam side down and make sure ends and seams are sealed and no filling is exposed.
- Bake in a 350 degree oven for 45-55 minutes. This can be served alone, with ketchup (for a burger taste), or even with brown gravy, if desired.

MA'S HAM AND SWISS CHEESE MEATLOAF
I have never known anyone to make meatloaf like my "ma". Everyone that tries it asks for the recipe and its very easy! I would describe making it like a "jellyroll of ham and cheese" yum!

- 1. Preheat oven at 350 degress farhenheit.
- 2. Mix egg, breadcrumbs, beef,sausage, worstershire sauce, parmesan cheese and salt in pepper in large bowl. Just as if making regular meatloaf.
- 3. When everything is mixed well, lay out a long piece of tinfoil and lay out the meat in a rectangle shape onto the foil as close to the right end of the foil as possible.
- 4. Take your ham and layer it onto the meat and repeat with the swiss cheese until it is all used.
- 5. Take end of foil and start rolling the meatloaf as if you were making a jellyroll.
- 6. Take your spiraled meatloaf and put into baking pan.
- 7. Cover with foil and bake for 1 and a half hours.
SWEET-GLAZED SPIRAL MEATLOAF W/HAM AND SWISS
This came out WONDERFUL, and I'm not big on meatloaf!! I glazed it nicely with dark brown sugar and honey mustard. It's filled with canadian bacon and swiss cheese! Surprisingly good!!!!!

- In large bowl combine first 7 ingredients til very well mixed.
- Place mixture onto a sheet of foil.
- Press out to a flat, even 8"x10" rectangle.
- Top evenly with 6 slices canadian bacon to within 1/2" of edges.
- Do the same then with the swiss cheese.
- Roll up starting from long side, lifting and using the foil to help you roll it all up.
- Roll up tightly.
- Pinch ends and seam closed very well. Place seam side down onto cookie sheet, or keep on the foil (seam side down)and place onto cookie sheet, that's what I did. Easier clean up!
- Sprinkle with a little coarse ground pepper.
- Bake in 350º oven for 1 hour.
- Coat with glaze during last five minutes of baking time.
- Glaze: mix together honey mustard and dark brown sugar til syrupy.
- *Some hams can turn ground beef slightly pink. It is done in 1 hour. Just check juices to see if they are running clear.
- **"Do-ahead" Tip:This can be rolled up and refrigerated (covered)for up to 24 hours before baking.

SPIRAL SPINACH MEATLOAF WITH PROSCIUTTO AND SWISS
This concoction was created one day due to a packet of cream of spinach lurking in the cupboard that was purchased by accident! (It happens!! LOL) I had already planned on making a meatloaf, and found "the packet" in the back while getting out the breadcrumbs. After debating on whether or not to just finally pitch it, I decided to try and use it, then one idea led to another...and the rest is history as they say! It REALLY came out good!!! Very moist and flavorful! Very happy to share this "bought by accident" recipe! :)

- In large bowl, combine first 9 ingredients til well mixed.
- Dump out onto large sheet of foil.
- Press into a 13x19 rectangle.
- Top, within a 1/4-1/2 inch from edges, 6 slices of the swiss cheese. (Overlapping the cheese if needed.).
- Top the swiss cheese layer with the slices of prosciutto. (Overlapping if needed.).
- Starting from short end, roll up the meat. (Lifting the foil at first helps to get it started.).
- Roll all the way up and seal, pinching and smoothing the seam closed nicely.
- Seal each end closed nicely, too, so that you have a nice log.
- Place carefully into a shallow, sprayed, baking dish/pan. (Mine fit really well in my 7x11 baking dish.).
- Reform a bit if needed. (*Just make sure it didn't stretch out, and press with palms at each end pushing back in towards the middle.).
- Sprinkle top/outside with additional pepper. As much or little as you like.
- Bake in 350 degree oven for 45 minutes.
- Baste the whole outside with the 1 Tbl. ketchup.
- Bake 5 minutes longer.
- While it's still baking, cut the remaining 3 slices of swiss cheese in half corner to corner.
- When those 5 minutes are up, top the meatloaf with the cheese triangles, overlapping, all across the top nicely.
- Bake 10 minutes longer.
- (Your total baking time is 1 hour.).
- Remove from oven and let rest at least 5-10 minutes before slicing.
- Enjoy! (Made GREAT sandwiches the next day, too!).
- **Had a TON of trouble getting an ingredient to finally go through! It is to be 1 (1.8 oz.) packet Knorr Cream of Spinach Recipe Mix that I used. NOT "soup mix". Zaar glitch I guess. But you'll see on the packet. ;).

- 1. heat olive oil in a large skillet over medium-low heat.Add sliced mushrooms,saute for 10 minutes or until are browned.Sprinkle with parmesan cheese.Remove from heat and set aside.
- 2. Preheat oven to 350 degrees F.Lightly grease a 9x13 loaf pan with nonstick cooking spray.

- 1. Pre-heat the oven to 350 degrees. 2. In medium skillet cook the onions until translucent, then allow to cool. 3. Using your hands, in a large mixing bowl, combine the Ground Turkey, Onion, Egg, Ketchup, Mustard, Cracker Crumbs and a few good turns from the Pepper mill. 4. Transfer the Turkey Meat Mixture onto a large piece of foil and begin to flatten it into a 12 x 9 rectangle 5. Next we are going to layer the filling. The filling ingredients should be about an inch from the edge so we can seal the Meatloaf. Start with the Ham slices then place the Swiss Cheese slices on top of the Ham then add the Broccoli 6. Now we are going to roll the Meatloaf and seal the edges. Using the foil to assist you, start at one of the short ends and lift the foil while rolling. Don't roll it too tight or your filling will fall out. When you have rolled to the end, pinch the ends to seal and press the meat mixture at the seam to seal. Place the Meatloaf seam side down in a large loaf pan that has been sprayed with cooking spray 6. Now we are going to roll the Meatloaf and seal the edges. Using the foil to assist you, start at one of the short ends and lift the foil while rolling. Don't roll it too tight or your filling will fall out.
