1 bunch fresh asparagus, trimmed and cut into 1/2-inch pieces
1 pastry for a 10-inch deep-dish pie crust
6 large eggs, beaten
¾ cup milk
½ cup half-and-half cream
1 (2.8 ounce) can French-fried onions
6 ounces shredded Swiss cheese
5 ounces shredded Cheddar cheese
1 green onion, chopped

Steps:

  • Heat olive oil in a skillet over medium heat; cook and stir asparagus until slightly tender, 5 to 10 minutes.
  • Preheat oven to 375 degrees F (190 degrees C). Press pie pastry into a 10-inch deep-dish pie pan.
  • Combine asparagus, eggs, milk, half-and-half, French-fried onions, Swiss cheese, Cheddar cheese, and green onion in a bowl. Pour into prepared pie pastry.
  • Bake in the preheated oven until center of quiche is set and a knife inserted in the middle comes out clean, about 45 minutes. Allow to stand for 10 minutes before serving.

1/2 cup chopped onion
1 pound fresh asparagus, trimmed
1 cup shredded Swiss cheese
1 tablespoon all-purpose flour

1 unbaked pastry shell (9 inches)
3 large eggs
1/2 cup half-and-half cream

Steps:

  • In a skillet, cook bacon over medium heat until crisp. Remove with a slotted spoon to paper towels; drain, reserving 1 tablespoon drippings. In the drippings, saute onion until browned; drain., Cut eight asparagus spears into 4-in.-long spears for garnish. Cut remaining asparagus into 1-in. pieces. In a saucepan, cook all of the asparagus in a small amount of boiling water until crisp-tender; drain., In a bowl, toss the bacon, onion, asparagus pieces, cheese, flour, salt and pepper. Pour into pastry shell. In a bowl, beat eggs and cream; pour over bacon mixture. Top with asparagus spears.   • Cook pasta according to package directions. Meanwhile, place asparagus in a steamer basket; place in a large saucepan over 1 in. of water. 2 1/2 tablespoons butter
2 tablespoons all purpose flour
1 teaspoon dry mustard
2/3 cup milk
2 large eggs, separated
2/3 cup (packed) grated Swiss cheese (about 3 ounces)
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Preheat oven to 450°F. Generously butter two 1 1/4-cup soufflé dishes or custard cups. Divide asparagus pieces between prepared dishes. Melt butter in heavy medium saucepan. Drizzle 3/4 teaspoon butter over asparagus in each dish. Reserve remaining butter in pan. Bake asparagus until just tender and beginning to brown, about 6 minutes. Maintain oven temperature. Meanwhile, add flour and mustard to remaining butter in pan and whisk until smooth paste forms. Set over medium heat and whisk 1 minute. Whisk milk and yolks to blend in small bowl; whisk into flour mixture. Cook until sauce thickens, whisking constantly, about 2 minutes. Remove pan from heat. Add grated cheese, salt and pepper and stir until cheese melts.
  • Beat egg whites in medium bowl until stiff but not dry. Fold whites into warm cheese mixture in pan. Spoon all of soufflé batter over asparagus in dishes.

8 ounces uncooked spaghetti
1/3 cup grated parmesan cheese
1 tablespoon butter, softened
2 eggs, slightly beaten
6 3/4 ounces can chunk ham, drained
19 ounces can le sueur extra large green asparagus spears, drained. (one 15oz. can, can be substituted for the 19-oz. can.)
4 1/2 ounces jar Green Giant sliced mushrooms, drained
6 ounces shredded swiss cheese
2 eggs, slightly beaten
1/2 cup sour cream
1 teaspoon dill weed
1 teaspoon chopped fresh chives

Steps:

  • Heat oven to 350 degrees F. Grease 9-inch deep-dish pie pan or 9-inch square pan. cook spaghetti to desired doneness as directed on package. Drain; rinse with hot water.
  • In large bowl, combine cooked spaghetti, Parmesan cheese, butter and 2 eggs; toss lightly. Press evenly over bottom and up sides of greased pan to form crust. Spread ham chunks over crust. Top with asparagus spears and mushrooms; sprinkle with with Swiss cheese. In small bowl, combine 2 eggs, sour cream, dill weed and chives; beat well. Pour over cheese.
  • Bake at 350 degrees for 35 - 45 minutes or until crust is golden brown and a knife inserted near center comes out clean. Let stand 15 minutes before serving. 6 to 8 servings.
  • You may substitute leaner ham to eliminate some of the salt.

1 pound whole wheat penne
6 tablespoons unsalted butter
1/4 cup all-purpose flour
2 cups vitamin D fortified 1-percent milk
2 cups shredded Swiss cheese
1/4 teaspoon ground nutmeg
Freshly ground black pepper
2 bunches raw asparagus, bottom trimmed 2-inches and cut into 1 1/2-inch pieces (4 cups)
10 slices Swiss cheese
1 cup panko or regular breadcrumbs

Steps:

  • Preheat the oven to 350 degrees F. Move a rack to the middle of the oven. Coat a 9-by-13-inch baking dish with nonstick cooking spray.
  • In a large pot set over high heat bring 1 gallon of water with 2 tablespoons kosher salt to a boil. Add the penne and cook 2 minutes less than the package directions, stirring occasionally. The pasta will be slightly underdone. Use a measuring cup or ladle to remove 1/3 cup pasta water and set aside. Drain the pasta into a colander. Return the pasta to the pot and set aside.
  • Melt 4 tablespoons of the butter in a large skillet set over medium heat. Add the flour and cook for 3 to 4 minutes, whisking constantly. Pour in the milk, whisking constantly until the mixture starts to thicken like heavy cream and then becomes almost pudding-like, 2 to 3 minutes. Add the shredded cheese and whisk until smooth, the sauce will be very thick. Add the nutmeg and season with some salt and pepper.
  • Combine the asparagus, pasta, reserved 1/3 cup pasta water and cheese sauce and toss well. Season with salt and pepper, then transfer to the prepared baking dish and top with a layer of the cheese slices. Cut the remaining 2 tablespoons butter into 1-inch cubes. Sprinkle the panko over the cheese slices, and top with the butter cubes. Bake until the top is golden brown and crisp, 20 to 25 minutes. Remove from the oven and cool for 10 minutes before serving.

  • Cut off large ends of asparagus. Cook 4 to 5 minutes in boiling water. Add a little salt to water. Drain water and set aside. Cover bottom of casserole dish with asparagus. Using fresh sliced mushrooms cover asparagus completely. Add three or four pats of butter. Lay swiss cheese on top of mushrooms and butter and repeat all layers until you get to the top of the casserole dish. Cover Bake at 400 degrees for 1/2 hour. Let cool for 5 minutes before serving.

1 lb potatoes, cubed
1 lb ham (leftover is perfect!), cubed
1 cup asparagus, chopped into 1-inch lengths
2 cloves minced garlic
4 Tbsp unsalted butter
4 Tbsp flour
2 cups milk
1 8oz block cream cheese
Salt and pepper to taste
1/8 tsp nutmeg
1 cup Swiss cheese, divided into 1/2 cup portions
Paprika

Steps:

  • Boil the potatoes until tender. Drain and rinse and let cool.
  • In a 9x13 pan, spread the potatoes, ham, asparagus, and garlic. Toss to combine.
  • In a saucepan, melt the butter, and add the flour, milk, cream cheese, salt, pepper, and nutmeg. Whisk constantly until the cream cheese is melted. Add half the Swiss and whisk until melted. Remove from heat.
  • Pour the cheese sauce over the ham and potatoes mixture. Sprinkle with remaining Swiss cheese and paprika.
  • Bake for 35-45 minutes in a 350 degree oven.
  • Serves 8

BASIC CREPES WITH HAM, SWISS AND ASPARAGUS VARIATION

Note: If you are going to let the batter chill out and rest in the refrigerator longer than 1-2 hours, I'd recommend using the oil option instead of the butter, as the butter likes to solidify into mini clumps if refrigerated longer than a couple of hours.

2 large eggs
1 1/4 cups milk
1 cup all-purpose flour
2 tablespoons vegetable oil or melted butter
1/4 teaspoon salt

Steps:

  • In a blender or large bowl using an electric mixer, combine the eggs, milk, flour, oil (or butter) and salt. Blend or mix on high until the ingredients are well combined. Cover the batter and chill in the refrigerator at least 1 hour or up to 24 hours. This helps the gluten to relax, making the crepes even more tender.
  • When ready to start cooking the crepes, heat a 10-inch nonstick skillet over medium heat for 2-3 minutes. Spray the bottom and sides of the skillet with nonstick cooking spray. The skillet should sizzle like crazy. You want it piping hot before you pour in the crepe batter. Quickly whisk the crepe batter to recombine, then measure out 1/4 cup of the batter. Tilt the skillet off the heat and pour the batter to one side of the skillet, immediately twirling the skillet to coat the bottom with the batter.
  • Set the skillet back on the heat and cook the crepe until the edges begin to brown, about 1 minute. Loosen the crepe around the edge with a heat-proof spatula and gently (but quickly!) pick up the edges of the hot crepe with your fingers and give it a fast flip. Cook the other side for 30 seconds or so until lightly golden brown and cooked through. Transfer the crepe to a wire rack. The key is to keep the skillet sizzling hot without burning the crepes - I moderated the heat of my stovetop between medium and slightly above that to keep the crepes cooking quickly without burning. You should hear an audible sizzle when you pour the crepe batter into the skillet but if you hear a sizzle with accompanying smoke - the skillet is probably too hot.
  • Repeat with remaining batter (spraying the skillet with cooking spray every 2-3 crepes), stacking the crepes as they finish cooking. The crepes can be placed on a baking sheet and lightly covered with foil and placed in a 200 degree oven to stay warm for 20-30 minutes while you finish cooking the remaining crepes. Serve the crepes with your favorite toppings. Some of ours include nutella and strawberries, butter and cinnamon and sugar, maple or other fruit syrup.
  • To store leftover crepes (or to make in advance): once the crepes have cooled, stack them between pieces of parchment or wax paper. Wrap the stack of crepes in plastic and store them in a resealable plastic bag in the refrigerator for several days or for up to 2 months in the freezer. Completely thaw frozen crepes before carefully pulling them apart.

BAKED RISOTTO WITH ASPARAGUS AND SWISS CHARD



Baked Risotto with Asparagus and Swiss Chard image

Risotto is typically made on the stove top with a fair amount of stirring to release the starch from the grains of rice. It can also be baked in a casserole, though it will be less creamy because less starch is released. Cooking it in a wood-fired oven adds a smoky flavor. The asparagus and Swiss chard are perfect additions in spring. You can use any of your favorite seasonal greens in their place. Diced butternut squash or yellow beets are terrific here too, as are the traditional mushrooms.

Yield serves 6 as a side dish

2 tablespoons olive oil
1 onion, finely chopped
Pinch of kosher salt, plus 1 1/2 teaspoons
1 1/2 cups arborio rice
2 1/2 cups vegetable or chicken stock
1/2 cup dry white wine
1 large bunch chard leaves, chopped, stems cut out and reserved (about 4 cups)
1 pound thin asparagus spears, trimmed and cut into 2-inch diagonal slices
1/4 teaspoon freshly grated nutmeg
1 1/2 cups grated Parmesan cheese

Steps:

  • Prepare a medium heat fire (375°F) in a wood-fired oven or cooker.
  • Heat the olive oil over medium heat in a 6-quart Dutch oven or casserole dish. Add the onion and a pinch of salt and sauté until the onion is translucent, about 3 minutes. Add the rice, stirring to coat with the oil. Stir in the stock, wine, chard leaves and stems, asparagus, nutmeg, and 1 1/2 teaspoons salt. Place in the oven, uncovered, and bring to a simmer. Cook for 5 minutes, then stir in half of the cheese and smooth the top. Sprinkle with the rest of the cheese and cover tightly with aluminum foil.
  • Place the baking dish back on the floor of the oven near the center. Bake until the rice is cooked through and has absorbed most of the liquid, about 20 minutes. The rice should be moist but not soupy. Remove the foil for the last 10 minutes of baking to create a beautiful golden crust and to add smoky flavor.
  • Serve immediately.

1/2 pound asparagus, tough ends trimmed off
1/2 cup shallots, chopped
2 teaspoons butter
3 eggs
5 egg whites
1 tablespoon fat free half and half (or milk)
2 tablespoons fresh grated Pecorino Romano
3 slices reduced fat Swiss cheese
salt and fresh pepper, to taste

Steps:

  • Steam asparagus crisp and tender, about 2-5 minutes. Thinly slice on the diagonal. Preheat oven to 350 degrees. Heat butter in a large skillet over medium heat. Stir in shallots and saute until golden, about 4-5 minutes. Add steamed asparagus, salt and pepper. In a medium bowl whisk eggs, egg whites, Parmesan, half and half, salt, and pepper. Add half of the Swiss cheese and mix well. Add eggs to the skillet making sure eggs cover the asparagus. Cook on medium for about 4 minutes, until the edges begin to set. Move the skillet to the oven. Cook about 15 minutes, or until frittata is completely cooked. Serve warm, cut into 4 equal wedges.

6 tablespoons butter, divided
2 cups fresh asparagus, cut diagonally in 1 1/2 inch slices
3/4 cup onion, sliced (approximately 1 medium onion)
1 tablespoon flour
salt, to taste
pepper, to taste
1 cup sour cream
1 cup swiss cheese, shredded
1/4 cup panko breadcrumbs, cracker crumbs work well too

Steps:

  • Preheat oven to 450°F
  • In a large skillet over medium-high heat melt 2 tablespoons butter. Saute asparagus for 2-3 minutes until barely tender. Remove from pan and set aside.
  • In same skillet, saute onion in 2 tablespoon butter until onion is soft and translucent. Stir in flour, salt and pepper. Cook for 1 minute until flour is well blended.
  • Add sour cream and cheese. Cook, stirring constantly, over low heat until cheese melts.
  • Spoon asparagus into a buttered shallow baking dish. Top with cheese, onion and sour cream mixture.
  • In a small skillet heat the remaining tablespoon of butter, and when it has melted toast the Panko breadcrumbs for about 1 minute.
  • Place Panko breadcrumbs evenly over the top of contents of the baking dish.
  • Bake at 450°F for 20 minuites. If top is not brown, place under broiler for an additional minute or two.

This is great for brunch or even dinner. It also travels well. I have brought this to many brunches. It reheats beautifully as well. You can even serve at room temp.

10 slices bacon diced
1/2 c chopped onion
1 lb fresh asparagus trimmed
1 c shredded swiss cheese
1 Tbsp flour
1/4 tsp salt
1/8 tsp pepper
1 unbaked pastry shell (9 inches)
3 eggs
1/2 c half and half

Steps:

  • 1. In a skillet, cook bacon until crisp. Remove to paper towel to drain, reserving one tablespoon of drippings. In the drippings, saute onion until browned. Drain onion. Cut 8 asparagus spears into 4 inch long spears for garnish. Cut remaining asparagus into 1 inch pieces. In a saucepan, cook all of the asparagus in a small amount of boiling water until crisp tender. Drain. In a bowl, toss the bacon, onion, asparagus pieces, cheese, flour, salt and pepper. Pour into pastry shell. In a bowl, beat eggs, and cream. Pour over bacon mixture. Top with long asparagus spears. Bake at 400 for 30-35 mins or until a knife inserted near center comes out clean and crust is golden brown. Let sit for 10 mins before cutting.

=== BASIC CREPE RECIPE === ((10 to 12 crepes))
3 eggs (beaten)
1 cup milk
1 tablespoon vegetable oil
1 cup flour
½ teaspoon salt
=== SAUCE ===
1 stick butter
¾ cup flour
½ teaspoon dry mustard
3 cups chicken broth
1½ cups half-and-half
Salt (to taste)
Freshly-ground black pepper (to taste)
=== FILLING ===
1½ cups diced ham, turkey or chicken - (to 2)
10 cooked asparagus sprears - (to 12)
=== TOPPING ===
1½ cups shredded Swiss cheese
2 tablespoons chopped parsley

Steps:

  • Prepare crepes and set aside. To make sauce, melt butter, stir in flour and mustard and cook for 1 minute. Add broth; simmer and stir until thickened. Add half-and-half and continue to stir until thick. Add salt and pepper.
  • While making sauce, cook the asparagus and saute the ham to remove any excess water. Combine cooked meat with half of the sauce. Place 1 asparagus spear with about ¼ cup of the meat sauce on the lower ⅓ of each crepe and roll up.
  • With seam down, place assembled crepes in prepared dish. Cover crepes with remaining sauce and sprinkle with cheese. Bake in 350 degree oven for 20 to 25 minutes. Sprinkle parsley on top and serve.
