1/4 cup vegetable oil
1/2 cup milk
1 large egg
1/2 teaspoon salt
2 teaspoons baking powder
1/2 cup sugar
1 1/4 cups flour
1/2 lb sliced purple grapes (with skin)
1 teaspoon vanilla essence

Steps:

  • Preheat the oven to 180 degrees Celsius.
  • In a saucepan, heat the grapes on medium flame till most of their juice gets evaporated.
  • Meanwhile, mix all the dry ingredients separately in a bowl and mix the other ingredients in a different bowl.
  • Slowly, add the liquid mixture into the dry ingredients so that no lumps are formed.
  • Remove the grapes from the heat and gently fold them into the batter.
  • Butter the muffin baking sheet and transfer the batter into the muffin cups. Make sure that you fill them only 3/4 of the way so that when they rise, they don't fall out.
  • Bake for 25 minutes to 30 minutes at 180 degrees Celsius.
  • Cool for ten minutes before taking them out of the oven.
  • Remove from cups and enjoy!

1 1/2 cups plus 1 tablespoon all-purpose flour, divided
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 stick unsalted butter, softened
2/3 cup plus 2 tablespoons granulated sugar, divided
2 large eggs
1 tablespoon grated orange zest
2/3 cup Vin Santo or other sweet wine
1 1/4 cups seedless red grapes (7 ounces)
Equipment:
a jumbo/Texas muffin pan with 6 large (6-to 8-oz) cups (see cooks' note, below)
Garnish:
confectioners sugar

Steps:

  • Preheat oven to 375°F with rack in middle. Generously butter muffin cups and dust with flour, knocking out excess.
  • Whisk together 1 1/2 cups flour, baking powder, baking soda, and salt.
  • Beat butter with 2/3 cup granulated sugar using an electric mixer at medium speed until light and fluffy. Add eggs 1 at a time, beating well after each addition. Beat in zest.
  • Add flour mixture in 2 batches alternately with wine, beginning and ending with flour and mixing until just incorporated.
  • Toss grapes with remaining tablespoon flour, then fold into batter.
  • Divide batter among muffin cups. Sprinkle with remaining 2 tablespoons granulated sugar. Bake until golden and springy to the touch, 18 to 20 minutes. Cool in pan 5 minutes, then loosen with a knife and remove. Cool to warm, 5 to 10 minutes more.

This is a great and tasty muffin. Personaly i think they are best when they are frozen. From the "Breasts of Friends" cookbook-(my favorite!) Tip:You can extend the season of grapes by freezing them in 1 1/2 cup batches and throwing them into the batter frozen.

2 1/2 teaspoons baking powder
1 cup milk

2 eggs, well beaten
1/2 cup butter or 1/2 cup margarine, melted
1 1/2 cups red seedless grapes, cut into pieces

Steps:

  • Preheat oven to 375°F Line 12 Muffins tins with paper cups.
  • Combine flour, sugar, and baking powder. Make a well in the center.
  • Add milk, eggs, butter and vanilla.
  • Stir until ingredients are combined. Lightly fold in grapes.
  • Bake 25 minutes or until golden brown on top, Cool in pan.
