2 (7 ounce) envelopes premium chunk chicken, Sweet Sue
1 1/2 cups celery, chopped
1/3 cup mayonnaise
1 tablespoon lemon juice
1 (10 1/2 ounce) can cream of chicken soup
1/4 cup onion, chopped
1/4 cup pimiento, drained and chopped
2 hard-boiled eggs, chopped
1/3 cup slivered almonds (2 oz pkg) or 1/3 cup water chestnut
1 3/4 cups potato chips
3/4 cup cheddar cheese, grated
butter

Steps:

  • Mix ingredients and place in casserole dish. Mix topping ingredients and place on top of Sweet Sue Chicken mixture. Place small pats of butter or margarine on top of casserole.
  • Bake at 350 for 25 minutes.

There are probably a thousand different ways to make a hot chicken salad casserole, but this is, in my opinion, one of the tastiest and simplest. This recipe comes from "Miss Daisy" King, a Nashville cooking legend who made this recipe and many others famous at her "Miss Daisy's Tearoom" in Franklin, Tennessee. I like to serve this for supper with fresh fruit, hot rolls and lemon icebox pie for dessert.

2 cups chopped cooked chicken
2 cups chopped celery
1/2 cup chopped pecans
1 cup mayonnaise
1/2 teaspoon salt
2 tablespoons lemon juice
2 teaspoons minced onions
1/2 cup grated cheddar cheese
1 cup potato chips, crushed (I use Lay's regular)

Steps:

  • Preheat oven to 350.
  • Combine first 7 ingredients.
  • Pour into greased casserole.
  • Mix cheddar and crushed chips and sprinkle over the top.
  • Bake for 10 minutes.

1/2 cup slivered almonds or 1/2 cup chopped almonds
1 tablespoon minced onion
1 1/2 tablespoons lemon juice concentrate
1/8 teaspoon pepper
1 cup mayonnaise
1 1/2 cups diced celery
1 1/2 cups grated cheddar cheese
1 1/2 cups crushed potato chips

Steps:

  • Preheat oven to 375 degrees.
  • Combine chicken, almonds, onion, lemon juice, celery, and pepper in mixing bowl.
  • Add mayonnaise and toss.
  • Place in casserole dish (smaller than 9 X 13).
  • Sprinkle with cheese, then crushed chips.

2 bay leaves
4 cups diced celery
1 can (10-1/2 ounces) condensed cream of chicken soup, undiluted
2 cups mayonnaise
2 cups sour cream
2 cans (8 ounces each) water chestnuts, drained
1 can (8 ounces) mushroom stems and pieces, drained
1 cup slivered almonds
2 tablespoons chopped onion
2 tablespoons lemon juice

2 cups chicken, cooked & diced
2 cups cooked rice
2 cups celery, diced
6 hard-boiled eggs (or fewer)
2 tablespoons minced onions (optional)
1 cup slivered almonds (or walnuts)
1 1/2 cups mayonnaise
2 tablespoons lemon juice
2 (15 ounce) cans cream of chicken soup
chow mein noodles, for sprinkling on top

Steps:

  • Preheat oven to 350; grease sides of a 13x9 pan.
  • In a very large bowl, mix chicken, rice, celery, eggs, onions and nuts.
  • In another (smaller) bowl, mix mayonnaise, juice and soups until smooth; add to chicken mixture and stir to coat well; dump into prepared pan, smoothing out the top; sprinkle chow mein noodles over the pan.

1 (14 1/2 ounce) can cream of chicken soup
10 -20 Ritz crackers
salt and pepper

Steps:

  • Mix chicken, soup and seasonings.
  • Place in slow-cooker on low.
  • Slowly add in crushed crackers as moisture appears during cooking. Usually about a sleeve from the box of Ritz will do it, sometimes more - sometimes less.
