This is a great recipe for using those extra zucchini in the garden.

1 (1 ounce) package dry onion soup mix
½ cup white wine vinegar
¾ cup white sugar
1 teaspoon salt
1 teaspoon ground black pepper
⅓ cup vegetable oil
⅔ cup cider vinegar
½ cup chopped green bell pepper
½ cup chopped celery
7 small zucchinis, thinly sliced

Steps:

  • In a mixing bowl, soak onion soup mix in wine vinegar. Let stand 5 minutes.
  • Combine the onion soup mixture with the sugar, salt, pepper, oil, cider vinegar, bell pepper, celery and zucchini. Chill 4 to 6 hours, stirring occasionally. Drain off any extra liquid before serving.

Dressing:
1/2 c. cider or white wine vinegar
4 1/2 tsp dried minced onion
7 small zucchini, thinly sliced
1/2 c. chopped celery Wendy uses more
1/4 c each red and green pepper-- Wendy uses more
1/3 c. vegetable oil
3/4 c. sugar
2/3 c. cider vinegar
1/2-1 tsp salt, optional
1 tsp pepper

Steps:

  • In a large bowl, combine vinegar and onion. Add zucchini, celery and peppers. Thoroughly combine all dressing ingredients and pour over the vegetables and stir gently. 1/2 cup cider vinegar
4-1/2 teaspoons dried minced onion
7 small zucchini, thinly sliced
1/2 cup chopped celery
1/4 cup chopped green pepper
1/4 cup chopped sweet red pepper
DRESSING:
3/4 cup sugar
2/3 cup cider vinegar
1/3 cup canola oil
1 teaspoon salt, optional
1 teaspoon pepper

Steps:

  • In a large bowl, combine vinegar and onion. Add the zucchini, celery and peppers. , In a jar with a tight-fitting lid, combine dressing ingredients; shake well. Pour over vegetables and stir gently. Cover and refrigerate for 8 hours or overnight. Serve with a slotted spoon.
