1 carrot, coarsely shredded

Steps:

  • Whisk sugar, vinegar, and oil to blend in large bowl. Add remaining ingredients and toss to combine. Season to taste with salt and pepper. Cover tightly and refrigerate at least 4 hours, tossing occasionally. (Can be prepared 2 days ahead. Keep refrigerated.).

½ cup white sugar
½ cup cider vinegar
¼ cup cold water
1 teaspoon salt
½ teaspoon mustard seed
½ teaspoon celery seed
8 cups shredded cabbage
½ cup chopped celery
½ cup chopped green bell pepper
1 tablespoon chopped pimento pepper

Steps:

  • In a jar with lid, combine the sugar, vinegar, water, salt, mustard seed and celery seed. Cover tightly and shake vigorously until sugar is dissolved. Chill dressing for several hours or overnight.
  • In a large bowl, toss together the cabbage, celery, green peppers, pimento and dressing until evenly coated. Cover and chill until serving.

1/4 cup cider vinegar
1/4 cup canola oil
2 tablespoons sugar
Kosher salt and freshly ground black pepper

12 ounces fresh pineapple, cut into 1/2-inch cubes
1 large, ripe mango, cut into 1/2-inch cubes
1/2 head red cabbage, finely shredded
3 green onions, green and pale green parts only, thinly sliced

Steps:

  • Combine the cider vinegar, canola oil, sugar and some salt and pepper in a bowl and whisk until the sugar dissolves.
  • Combine the pineapple, mango and red cabbage in a large bowl. Season with salt and pepper, add the dressing and toss to coat. Add the green onions and cilantro and toss again. Cover and refrigerate for at least 1 hour before serving.

450g red and white cabbage (a mixture), very thinly sliced
2 carrots , peeled and sliced into thin matchsticks
1 small red onion , finely chopped
1 celery heart, thinly sliced
8 radishes , topped and tailed, then thinly sliced or quartered
1 red pepper , cored, deseeded and thinly sliced
2 tbsp white wine vinegar
juice 0.5 lemon
2 tbsp light brown soft sugar
1 tsp mustard powder
½ tsp yellow mustard seeds
½ tsp celery seeds
½ tsp poppy seeds
4 tbsp vegetable oil

Steps:

  • Put all the vegetables in a large bowl of iced water and leave in the fridge for 1 hr to crisp up. Drain well and pat dry on a tea towel, then tip into a large serving bowl.
  • To make the dressing, whisk all the ingredients together with a large pinch of salt until the sugar has dissolved. Pour over the vegetables, toss well and chill until ready to serve.

So she turned to a local cookbook at the time - the old River Road Recipes II - A second Helping - put out by the Junior League of Baton Rouge, Louisiana. Here is a GREAT tasting, non-creamy cole slaw - particuarily good with barbequed chicken. Notice that this recipe is made the night before - and also, as it contains no eggs or dairy, it would be perfectly safe for travel on picnics. This recipe is credited to Mrs. Ben Miller, Jr.

1/3 cup balsamic vinegar
1/4 cup sugar
1/4 cup vegetable oil

Steps:

  • Combine the flavor packet from the soup mix with the vinegar, sugar, and oil in a 2-quart or larger serving bowl.

1 1/2 lb cabbage shredded,(i use 1/2 sml head plus 1 pound bag slaw)
1 large red bell pepper, chopped
1 large green bell pepper, chopped
1 bunch green onions, chopped
1 medium red onion chopped
2/3 c cooking oil
1 1/4 c white distilled vinegar
1 c sugar ( i will use about 1/2 to 3/4 cup next time)

Steps:

  • 1. Shred cabbage if not already shredded and add to a large bowl.
  • 2. Chop Red bell peppers & add to bowl, toss to mix.
  • 3. Chop Green Onions and Green Bell Peppers, add to bowl, & toss together with slaw.
  • 4. Chop and add the red onions tossing together after adding. I prefer to use long metal tongs.
  • 5. Add oil, sugar, & vinegar to a medium sauce pan. Bring to a boil, all the while whisking with wire whisk to dissolve sugar. Then boil an additional 2 minutes all the while stirring, then remove from heat.
  • 6. Gradually and carefully pour hot mixture over the cabbage, and toss to coat, turning with tongs as you go to assure all is mixed together. Refrigerate until slaw is completely cooled for better flavor.
  • 7. This is the book of the original recipe "BIG MAMA'S OLD BLACK POT BY Ethel Rayson Dixon.
  • 8. Add slaw to a large bowl, garnish as desired, and serve. This was excellent with MyLemon Pepper Panko Salmon Croquette Patties and Cajun Seafood Aioli Sauce. You may like it too, so give it a try.

½ cup packed light brown sugar
½ cup sweet paprika
1 tablespoon garlic granules

½ teaspoon ground ginger
1 teaspoon kosher salt
½ teaspoon ground black pepper
2 cups ketchup
½ cup brown sugar
¾ cup apple cider vinegar
2 tablespoons plain mustard
1 tablespoon honey
1 tablespoon Worcestershire sauce
1 teaspoon liquid smoke flavoring
1/4 cup pork rub
¾ cup white balsamic vinegar
2 tablespoons olive oil
2 tablespoons brown sugar
2 teaspoons garlic granules
Kosher salt and ground black pepper, to taste
1 ½ cups shredded red cabbage
1 ½ cups shredded carrots
1 cup seeded, peeled, chopped cucumber
½ cup finely chopped Italian parsley

Steps:

  • To make rub, combine all ingredients in a large bowl. Mix well with a fork. Reserve 1/4 cup of the rub to use in the barbecue sauce.
  • To make sauce, combine all ingredients in a large Mason jar, stirring well. Cover with tight-fitting lid and give it one more good shake. Place in refrigerator overnight.
  • Place pork rub in a large casserole dish.
  • Using a fork, pierce the pork several times all over.
  • Rub the spice blend into the pork, covering all surfaces.
  • Wrap rubbed pork tightly in plastic and refrigerate 8 hours or overnight.
  • At cooking time, unwrap the pork and place in a slow-cooker.
  • Pour 1 cup of the Barbecue Sauce on the pork, covering all surfaces.
  • Cover and cook until tender, 9 to 11 hours on Low or 5 to 7 hours on High.
  • Transfer pork to a large, deep, wide casserole dish and cool for 15 to 20 minutes.
  • Using two large forks, shred the pork into bite-size pieces, discarding excess fat. Cover to keep warm.
  • Skim any fat from the liquid in the pot. Transfer 2 to 3 tablespoons to a bowl and stir in the remaining barbecue sauce.
  • Stir well and add more of the braising liquid if you prefer a thinner sauce.
  • Warm buns in the oven at 400 degrees, turning over once, just until slightly toasty.
  • Pile pulled pork onto buns, top with some of the Barbecue Sauce and some Tangy Slaw (recipe below) and enjoy.
  • For the slaw: In a large bowl, whisk together vinegar, oil, brown sugar, garlic, salt and pepper.
  • Add cabbage, carrots, cucumber and parsley, mixing well.
  • Allow to sit, loosely covered with plastic, for about 30 minutes.
  • Toss once before serving, adjusting seasonings, if desired.

1 lb finely shredded cole slaw (cabbage)( i used the bag variety)
2 c shredded red cabbage
1 c natural dried cherries 5 oz. bag
1 small yellow onion (grated) i used a box grater
4 Tbsp sugar ( i used agave nectar)
1 tsp white pepper
4 Tbsp apple cider vinegar
1/2 tsp salt
2 Tbsp chopped chive
1 c mayonnaise

Steps:

  • 1. These are most of the ingredients I used to make this recipe. I will post the recipe for the perch fillets that I served with this slaw very soon.
  • 2. Add both the finely shredded red cabbage and the white cabbage to a large bowl.
  • 3. Then add the remaining ingredients except grated onion to a separate bowl, & beat till mixture is creamy and smooth.
  • 4. Now add the grated onion and beat again to blend thourgly.
  • 5. Pour mixture over cabbage, then stir to blend. Then refrigerate for at least 2 hours before serving. Then stir again just before you are ready to serve. Garnish with chopped chive or parsley if desired.
  • 6. These are the dried cherries that I used. A good way to add extra essential nutrients into your daily diet.

1/2 small red onion, finely chopped

1 teaspoon mustard
2 teaspoons minced fresh tarragon leaves
1 large Granny Smith apple, peeled, cored, and cut into 1/4-inch pieces
1 medium head fennel, thinly sliced (about 2 1/2 cups)

Steps:

  • Toss cabbage and 1 teaspoon salt in a colander or large mesh strainer set over a medium bowl. Let stand until cabbage wilts, 1 to 4 hours. Rinse cabbage under cold running water (or in large bowl of ice water if serving slaw immediately). Press, but do not squeeze, to drain; pat dry with paper towels. (Cabbage can be stored in a resealable plastic bag and refrigerated overnight.)

6 tablespoons ketchup
2 tablespoons chili sauce
2 tablespoons honey
2 tablespoons light soy sauce
1 tablespoon Chinese 5-spice powder
1 tablespoon Shaohsing rice wine
1 rack pork spareribs, cut in half across the bone and cut into single ribs
1/4 cup fresh cilantro leaves, chopped
6 radishes, grated
2 carrots, peeled and grated
2 Fresno chiles, finely diced
1 small Napa cabbage, shredded
1/2 medium onion, grated
1/4 cup mayonnaise
3 tablespoons lemon juice
1 tablespoon honey
Sea salt
Freshly ground black pepper

Steps:

  • For the ribs: In a large bowl, combine ketchup, chili sauce, honey, soy sauce, 5-spice and rice wine. Then add the ribs. Marinate the ribs for 1 hour in the refrigerator, or as long as overnight.
  • Preheat a grill or grill pan over medium-high heat, making sure the grates have been brushed clean and lightly oiled before cooking.
  • Remove the ribs from the marinade and reserve the marinade. Place the ribs on the grill and cook for 20 minutes, turning every 5 minutes. Place the marinade into a saucepot and bring to a boil for 5 minutes. Once boiled, continually baste the ribs as they are turned and until they are cooked through.
  • For the slaw: While the ribs are cooking, in a medium bowl, add the cilantro, radishes, carrots, chiles, cabbage and onions, and toss together.
  • In a small bowl, whisk together the mayo, lemon juice and honey, and then add to the slaw mixture and toss to coat. Season with salt and pepper. Serve immediately with hot ribs for the perfect BBQ treat!
