SICILIAN SESAME SEED BREAD



Sicilian Sesame Seed Bread image

Sesame Seed Bread made with semolina flour is very special. The doubled-milled durum wheat semolina flour used in this recipe is golden in color and delicious. Semolina flour is also used for pasta. The addition of sesame seeds on top is critical to enjoy this full flavor and wonderful homemade bread.

3 1/2 teaspoon Active dry yeast (room temperature )
1 teaspoon sugar
2 cups warm water (112° to 115°F)
2 teaspoons fine sea salt
4 cups Rimacinata Wheat Durum Semolina flour (plus a few tablespoons more if needed)
1 small egg
3 tablespoon water
1/3 cup sesame seeds
16 ice cubes

Steps:

  • In a large glass measuring cup, dissolve the sugar and yeast in 2 cups of the warm water. Let stand, covered for 5 minutes, or until foamy.
  • Add 2 cups of flour and salt to the bowl of a stand mixer fitted with a dough hook. Add the yeast mixture and mix until a dough starts to form. Add 2 more cups of flour and let mix until a smooth ball of dough is formed. It too wet, add 1 -2 tablespoons more flour. Do not let the dough get to dry. It should be slightly sticky. Let knead for about 5-10 minutes in total.
  • Place the dough in a large oiled bowl and cover with plastic wrap. Let it rise until doubled about 2 hours. (I usually place in my oven with the light on).
  • On a floured board, punch down the dough, divide it in half and shape two thick loaves or four baguettes.
  • Transfer loaves a floured baker's couche or large cotton dish towel. Cover the loaves and let rise in a warm place for about 2 hours until doubled again in size.
  • Preheat the oven at 450 degrees for 30 minutes. Place a cast iron skillet on the bottom rack and let heat as well.
  • When ready to bake, mix the egg and water to make a wash. Brush the egg wash over the loaves and sprinkle with sesame seeds.
  • Place the loaves on baking sheet or a french loaf baking pans.
  • Put the baking pan on the middle rack.
  • Add 10 ice cubes to the cast iron pan. This will create the steam for a great crust. Add 4-6 more cubes halfway through for more steam.
  • Cook for 35 minutes until the bread is a nice golden brown.
  • Let the bread cool before slicing.

Nonstick vegetable oil spray
White sesame seeds (for sprinkling)
2 Tbsp. black sesame seeds, plus more for sprinkling
1 cup sugar, plus more for sprinkling
1 1/2 cups all-purpose flour
1 3/4 tsp. baking powder
1 tsp. kosher salt
1/2 tsp. ground cardamom
1/4 tsp. baking soda
1/2 cup plain whole-milk yogurt
1/2 cup tahini
2 large eggs
1 tsp. vanilla extract
1/2 cup vegetable oil
1 1/2 tsp. toasted sesame oil

Steps:

  • Preheat oven to 350°F. Lightly coat an 8 1/2x4 1/2" loaf pan with nonstick spray. Line with parchment paper, leaving overhang on long sides. Lightly coat parchment with nonstick spray. Sprinkle sides and bottom of pan with white and black sesame seeds and sugar and shake around in pan to coat; tap out excess. Finely grind 2 Tbsp. black sesame seeds in a spice mill, food processor, or blender; set aside.
  • Whisk flour, baking powder, salt, cardamom, and baking soda in a medium bowl to combine. Whisk yogurt and tahini in another small bowl until smooth (mixture will seize and stiffen at first).
  • Using an electric mixer on medium-high speed, beat eggs, vanilla, and 1 cup sugar in a large bowl until eggs are pale and thick (use the paddle attachment if using a stand mixer), about 2 minutes. Reduce speed to medium and, with motor running, gradually stream in vegetable oil and sesame oil. Reduce speed to low and add dry ingredients in 3 additions, alternating with yogurt mixture in 2 additions, beginning and ending with dry ingredients. Beat after each addition until fully incorporated. Scrape half of batter into the bowl that held the dry ingredients. Add reserved ground black sesame seeds to the remaining batter and mix on medium speed until evenly distributed-this is your black swirl.
  • Alternating between batters, spoon large dollops into prepared pan, then drag the tip of a paring knife through batter in a figure-eight pattern to swirl. Sprinkle with more white and black sesame seeds, then with more sugar. Bake until a tester inserted into the center of cake comes out clean, 55-65 minutes. Transfer pan to a wire rack and let cake cool in pan 10 minutes. Run a knife around short sides of pan and use parchment to help lift cake out of pan and onto rack. Let cool completely.

JAPANESE-STYLE MEATLOAF

I adapted this from a korokke recipe I frequently use. Korokke is a Japanese fried croquette made with seasoned ground meat and mashed potato. I combined the seasoning used there with a standard meatloaf recipe to create this fun hybrid. I serve it with mashed potatoes and a spicy barbeque sauce.

1 teaspoon corn oil, or to taste
1 teaspoon sesame oil, or to taste
2 carrots, finely chopped
1 green bell pepper, finely chopped
1 small onion, finely chopped
¼ cup soy sauce
1 tablespoon sake (rice wine)
1 tablespoon mirin (Japanese sweet wine)
2 teaspoons white sugar
1 teaspoon fish soup stock (such as HonDashi®)
1 teaspoon garlic powder
½ teaspoon ground ginger
1 pound ground turkey
1 pound ground pork
2 eggs, beaten
1 ½ cups panko bread crumbs

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat corn oil and sesame oil in a large skillet. Add carrots, green bell pepper, and onion; cook and stir until softened, about 5 minutes. Stir in soy sauce, sake, mirin, sugar, and fish soup stock. Mix in garlic and ginger. Let cool, 5 to 10 minutes.
  • Mix turkey, pork, and eggs together in a large bowl until blended. Stir in cooled carrot mixture and bread crumbs until well combined. Press evenly into a loaf pan.
  • Bake in the preheated oven until browned, about 30 minutes. Increase oven temperature to 400 degrees F (200 degrees C); continue baking until an instant-read thermometer inserted into the center reads at least 160 degrees F (70 degrees C), about 30 minutes more.
  • Let stand before serving, about 5 minutes.

SWEET SESAME LOAF

Just made this last night & it was a huge hit! I originally acquired this recipe while on a trip to Europe years ago, & just dug it out to try since I was having a few girls over for tea. The original recipe is written out in European measurements, & 1/2 way thru I got stuck on a few of the conversions. Thanks to some very helpful JAP members in the "general questions group" the correct conversions were made & the recipe turned out perfect! (I think everyone should join that group on here. It is so helpful to get the immediate help of others when in a jam like that.) This turned out to be a wonderfully moist, flavorful, & attractive loaf that I plan to prepare often for afternoon tea, brunch, etc. Had a slice this morn' w/my morning coffee. Delicious! The nutty flavor of the toasted sesame seeds along w/the light lemon undertones just come together perfectly. I think this one's a winner!

1 teaspoon(s) salt
4 tablespoon(s) soft butter or marg
2/3 cup(s) sugar
2 - eggs at room temp
- grated rind of 1 large lemon
1 1/2 cup(s) milk

Steps:

  • Preheat oven to 350'. Line a 10x5 loaf pan w/parchment paper & grease OR grease & flour a nonstick loaf pan.
  • Reserve 2 tablespoons of sesame seeds. Lightly toast the rest on a baking sheet in the oven or on stovetop in nonstick pan. Watch well so they don't get too dark or overly toasted.
  • Sift flour, salt & baking powder into a bowl. Stir in toasted sesame seeds & set aside.
  • Cream butter & sugar together by hand or with mixer until light & fluffy. Beat in the eggs. Then stir in lemon zest & milk.
  • Pour milk mixture over dry ingredients & fold together until just blended. Pour into prepared pan & sprinkle with remaining sesame seeds (should completely cover entire top).
  • Bake for about 1 Hr until cake tester inserted in center comes out clean. Let cool in pan for 10 min's before unmolding.

CHOCOLATE & SESAME LOAF CAKE

200g butter , plus extra for greasing
200g dark chocolate , chopped
200g golden caster sugar
100ml strong espresso
100ml soured cream
2 eggs
200g self-raising flour
5 tsp cocoa powder
250g self-raising flour
150g tahini
1 heaped tsp baking powder
150ml strong black coffee
150g golden caster sugar
¼ tsp cinnamon
2 tbsp milk
200ml double cream
40g butter
200g dark chocolate , chopped
4 x 30g pack sesame snaps

Steps:

  • Heat oven to 180C/160C fan/gas 4. Grease two 900g loaf tins (8.5cm deep) and line with baking parchment.
  • First, make the chocolate cake mixture. Put the butter and chocolate in a large heatproof bowl set over a pan of simmering water, stirring occasionally. Put all the other ingredients in a large mixing bowl and, when the chocolate and butter have melted, pour over and mix with an electric whisk until smooth and well combined. Set aside and rinse the beaters.
  • In another large bowl, add all the sesame cake ingredients, then combine with an electric whisk until smooth.
  • Alternating with dollops of each mixture, divide between the two tins. Level the top, then swirl a skewer through the mixture to create a marbled effect. Bake in the middle of the oven for 45-50 mins or until a skewer inserted into the centre comes out clean. Leave the cakes to cool completely on a wire rack while you make the topping (there's enough for both cakes but the topping recipe is easily halved if you want to freeze one and ice it later)
  • Heat the double cream and butter together gently in a small pan until just simmering, then remove from the heat and add the chocolate. Stir until the mixture is smooth, then place in the fridge for 20 mins to firm up.
  • Beat well with a wooden spoon, then transfer to a disposable piping bag. Snip the end off to make a wide opening, then pipe thick, overlapping zigzags across the cakes. Cut the sesame snaps into shards and arrange on top, scattering over any crumbs, then serve.
