1-1/2 pounds bulk spicy pork sausage
1 medium green pepper, chopped
1 medium onion, chopped
1 can (31 ounces) pork and beans
1 can (16 ounces) kidney beans, rinsed and drained
1 can (15-1/2 ounces) great northern beans, rinsed and drained
1 can (15-1/2 ounces) black-eyed peas, rinsed and drained
1 can (15 ounces) pinto beans, rinsed and drained
1 can (15 ounces) chickpeas, rinsed and drained
1-1/2 cups ketchup
3/4 cup packed brown sugar
2 teaspoons ground mustard

Steps:

  • In a large skillet, cook and crumble sausage over medium heat until no longer pink; drain. Add green pepper and onion; saute until tender. Drain. Add remaining ingredients., Pour into a greased 13x9-in. baking dish. Cover and bake at 325° for 1 hour. Uncover; bake 20-30 minutes longer or until bubbly.

Here's a meaty, cold-weather stew laden with white beans, sweet Italian sausage, rosemary, thyme, cumin and garlic. It is deeply flavored and complex, but quite easy to make. Pan-fry the sausages in a bit of olive oil, then sauté the vegetables with cumin and tomato paste in the drippings. Add plenty of water and the dried beans that, wait for it, you did not have to soak. Simmer until the house is fragrant and the windows fog up (about 2 hours).

2 tablespoons extra-virgin olive oil, plus more for serving
1 pound sweet Italian sausage, sliced 3/4-inch thick
1 tablespoon tomato paste
1/2 teaspoon ground cumin
2 medium carrots, finely diced
2 celery stalks, finely diced
1 onion, chopped
2 garlic cloves, finely chopped
1 pound dried great Northern beans, rinsed and picked through
2 teaspoons kosher salt, or to taste
2 thyme sprigs
1 large rosemary sprig
1 bay leaf
2 teaspoons balsamic vinegar, plus more for serving
1/2 teaspoon black pepper, plus more to taste

Steps:

  • Heat oil in a large stockpot over medium-high. Add the sausage and brown until cooked through, about 7 minutes. Using a slotted spoon, transfer to a plate lined with a paper towel.
  • Add the tomato paste and cumin to the pot. Cook, stirring, until dark golden, about 2 minutes. Add the carrots, celery, onion and garlic. Cook, stirring, until the vegetables have softened, about 5 minutes. Stir in the beans, 8 cups water, salt, thyme, rosemary and bay leaf. Turn the heat up to high and bring to a boil. Then reduce heat to low and simmer gently until the beans are tender, about 2 hours, adding more water if needed to make sure the beans remain submerged.
  • When beans are tender, return the sausage to the pot. Simmer for 5 minutes. Stir in the vinegar and pepper. Taste and adjust seasoning. Ladle into warm bowls and serve drizzled with more vinegar and olive oil.

1/4 pound breakfast sausage or bacon, crumbled
1/4 cup diced onion
1/4 pound pulled or chopped Bar-B-Q'd pork shoulder or smoked pork butt
Four 16-ounce cans store-bought pork and beans
1/4 cup Sweet Bar-B-Q sauce or Willingham's W'ham Sweet'n Sassy Sauce
1/2 cup molasses
1 1/2 tablespoons mild seasoning mix or Willingham's W'ham Mild Seasoning
1/2 teaspoon liquid smoke (optional)

Steps:

  • Start the grill, allowing it to reach a temperature of 250 degrees, or pre heat the oven to 350 degrees.
  • In a large skillet, cook the sausage and onion over medium-high heat for 5 to 6 minutes until the sausage is browned and the onion softened. Add the pork and cook for 2 to 3 minutes longer until the meat is just heated through. Set aside. In a large bowl, combine the pork and beans, sauce, molasses, seasoning mix, and liquid smoke, if using. Stir well and transfer to a deep casserole. The casserole should be large enough to hold the mixture so that it is no deeper than 4 inches and no shallower than 2 inches. Add the sausage-pork mixture and stir well.
  • Cook on the grill, uncovered, for 3 1/2-hours, or in the oven, covered, for 2 1/2-hours until hot and bubbling and the flavors are well blended.

HOT N SWEET SAUSAGE AND BEANS



Hot N Sweet Sausage and Beans image

This is a -"What do I have in the cupboard and freezer to eat?" kind of recipe. I used Turkey Italian sausage - but I think any kind will do- Also-- this is way easy with just a few ingredients. P.S. I really used just one can of baked beans and one can of canellini beans but the site wouldn't let me type it in the ingredient slot-- too much control!!!

1 1/2 lbs sausage
2 (16 ounce) cans baked beans
1 (16 ounce) can potatoes (sliced)
1 (16 ounce) can tomatoes and green chilies (like very hot ro*tel)
brown sugar
ketchup
garlic powder
black pepper
salt

Steps:

  • grill/broil/pan fry- sausage. Pick whichever method is best for you. Cook sausage until nice and brown. When done- let stand till cool enough to handle and slice into 1/2 inch discs. Place into bowl and set aside.
  • Place beans and Ro*tel into pot. Add a heavy squeeze of ketchup and a small handful of brown sugar. Crank a few turns of the ole pepper mill- add a heavy pinch of salt and a dash or two of the garlic powder. Heat through.
  • Use an immersion blender if you can or use a potato masher and blend beans half way--just to make it a little creamy. Kinda like real bbq beans or refried pintos--ya know?.
  • Add potatoes and sausage and warm through. Oh -just get it all hot and good.
  • When done--put it in a bow and stuff your face. Enjoy!
