These slow roasted almonds, cashews, and pecans are coated in a sugar glaze spiced with cinnamon making an addicting snack for any occasion! They also make amazing neighbor gifts!

1 egg white
1 teaspoon McCormick Pure Vanilla Extract
3 cups nuts (I used cashews, almonds, and pecans)
1/2 cup brown sugar
2 teaspoons McCormick Ground Cinnamon

Steps:

  • Preheat your oven to 250 degrees. Lightly spray a jelly roll pan with cooking spray. In a medium sized bowl, add the egg white and vanilla. Whisk together until frothy. Add the mixed nuts and stir until coated.
  • In a small bowl mix together the brown sugar and cinnamon. Add to the nuts and toss until coated. Spread the nuts evenly on your prepared pan.
  • Bake for 50-60 minutes in the oven and stir every 15 minutes until golden. Cool and then store in an airtight container.

1 egg white
1 tablespoon water
4 cups raw whole cashews, whole almonds, walnut halves, and/or pecan halves
3 tablespoons packed brown sugar or brown sugar substitute equivalent to 3 tablespoons brown sugar (see Tip)
1 tablespoon ground cumin
2 teaspoons chili powder
1 teaspoon garlic salt
⅛ teaspoon cayenne pepper

Steps:

  • Preheat oven to 300 degrees F. In a medium bowl, combine egg white and water; beat with a fork until frothy. Add nuts; toss to coat. Let stand for 5 minutes.
  • Meanwhile, in a large plastic bag, combine brown sugar, cumin, chili powder, garlic salt, and cayenne pepper. Add nuts; shake well to coat. Spread nuts evenly in a 15x10x1-inch baking pan.
  • Bake for 35 to 40 minutes or until nuts are toasted and coating is dry, stirring twice. Transfer to a large sheet of foil. Cool completely. Store in an airtight container at room temperature for up to 5 days, or freeze for up to 3 months.

4 cups nuts
1 tablespoon extra-virgin olive oil
1/4 cup brown sugar
2 tablespoons honey
1/2 teaspoon kosher salt
1 teaspoon crushed red pepper

Steps:

  • Line a baking sheet with parchment paper and preheat oven to 350 degrees.
  • Spread nuts evenly on the prepared baking sheet and roast in the oven for 10 minutes.
  • Meanwhile, heat remaining ingredients in a medium-sized saucepan (big enough to hold all of the nuts) over low heat and simmer until nuts are done toasting.
  • Add toasted nuts to saucepan and stir to coat.
  • Put the nuts back on the the prepared baking sheet and spread out in an even layer.
  • Roast in the oven for another 7 minutes.
  • Remove and allow to cool on baking sheet, stirring occasionally so the nuts don't clump together.
  • Once cool, place in a bowl to serve or an airtight container until you are ready to serve.

These party nuts are a little sweet and a little spicy. They're completely irresistible! Be sure to buy unsalted, raw nuts for this recipe. Feel free to make it your own-I love to add fresh rosemary! Recipe yields 5 1/2 cups mixed nuts.

2 cups whole almonds
2 cups pecan or walnut halves
1 1/2 cup pepitas (green pumpkin seeds)
Optional but so good: 2 tablespoons finely snipped or chopped fresh rosemary (from 4 big sprigs)
2 tablespoons maple syrup
2 tablespoons unsalted butter, melted
1 ½ teaspoons kosher salt*
1 teaspoon vanilla extract
1/4 teaspoon cayenne pepper (reduce or omit if sensitive to spice)

Steps:

  • Preheat the oven to 325 degrees Fahrenheit. Line a large rimmed baking sheet with parchment paper or a silicone baking mat so the maple syrup doesn't get stuck to the pan (this is important). Pour the almonds, pecans and pepitas onto the pan and set it aside.
  • In a small bowl, combine the optional rosemary (or any other added seasonings), maple syrup, melted butter, salt, vanilla, and cayenne (if you using). Gently whisk until blended.
  • Pour the mixture over the nuts on the prepared baking sheet. Stir well, until all of the nuts are lightly coated. Spread the mixture in a single layer across the pan (the maple syrup will pool on the bottom of the pan, but that's okay).
  • Bake, stirring after the first 10 minutes and then every 5 minutes thereafter, until almost no maple syrup remains on the parchment paper and the nuts are deeply golden, 23 to 26 minutes. (The maple syrup coating will be a little sticky right out of the oven, but will harden as the pecans cool.)
  • Remove the pan from the oven and stir the nuts one more time, spreading them into an even layer across the pan. Let them cool down for about 10 minutes, then, while the nuts are still warm, carefully separate any large clumps (this may or may not be necessary).
  • Let the nut mixture cool completely on the pan. These will keep for up to 2 months in a sealed bag at room temperature.

1 cup untoasted walnut halves
1 cup untoasted pecan halves
1 cup unsalted, dry roasted almonds
1 cup unsalted, dry roasted cashews
1 teaspoon salt
½ teaspoon freshly ground black pepper
¼ teaspoon ground cumin
¼ teaspoon cayenne pepper
½ cup white sugar
¼ cup water
1 tablespoon butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil and lightly coat with cooking spray.
  • Combine walnut halves, pecan halves, almonds, and cashews in a large bowl. Add salt, black pepper, cumin, and cayenne pepper; toss to coat.
  • Heat sugar, water, and butter in a small saucepan over medium heat until the butter is melted. Cook for 1 minute and remove from heat. Slowly pour butter mixture over the bowl of nuts and stir to coat.
  • Transfer nuts to the prepared baking sheet and spread into a single layer.
  • Bake nuts in the preheated oven for 10 minutes. Stir nuts until the warm syrup coats every nut. Spread into a single layer, return to the oven, and bake until nuts are sticky and roasted, about 6 minutes. Allow to cool before serving.

¼ teaspoon Spice Islands® Sea Salt
½ teaspoon Spice Islands® Cayenne Pepper
½ teaspoon Spice Islands® Chipotle Chile Powder
½ teaspoon Spice Islands® Ground Saigon Cinnamon

Steps:

  • Preheat the oven to 350°F. Line a baking sheet with a piece of parchment paper and set aside. Combine the cashews, walnuts, almonds and pepitas in a large bowl and toss to combine. Whisk together the egg white, water, sugar, salt, cayenne and chipotle pepper and cinnamon. Drizzle mixture over the nuts and toss to combine, making sure they are evenly coated. Transfer nuts to prepared baking sheet and spread in an even layer. Roast in oven for 30 minutes, stirring occasionally. Remove from oven; separate the nuts as they cool.
