My reverse-engineered recipe for Subway's Sweet Onion Sauce, as requested by another Food.com member. It's quite sweet, but very tasty, if you've never tried it before.

1 cup granulated sugar (plus 2 tablespoons)
1/2 cup plus 1 tablespoon cold water
6 tablespoons white vinegar
1 1/2 tablespoons red wine vinegar
1 tablespoon arrowroot
1 tablespoon minced onion flakes
2 1/2 teaspoons Dijon mustard
2 1/2 teaspoons mustard powder
3/4 teaspoon celery salt
3/4 teaspoon fresh onion juice (use a garlic press)
3/4 teaspoon poppy seed
1/2 teaspoon onion salt
1/4 teaspoon garlic salt (plus 1/8 teaspoon)
1/4 teaspoon paprika (plus 1/8 teaspoon)
1/4 teaspoon black pepper (plus 1/8 teaspoon)
1 -2 drop sesame oil

Steps:

  • WHISK sauce ingredients together in a small saucepan (1 cup plus 2 tablespoons granulated sugar, 1/2 cup plus 1 tablespoon cold water, 6 tablespoons white vinegar, 1 1/2 tablespoons red wine vinegar, 1 tablespoon arrowroot powder, 1 tablespoon minced onion flakes, 2 1/2 teaspoons Dijon mustard, 2 1/2 teaspoons mustard powder, 3/4 teaspoon celery salt, 3/4 teaspoon fresh onion juice, 3/4 teaspoon poppy seeds, 1/2 teaspoon onion salt, 3/8 teaspoon garlic salt, 3/8 teaspoon paprika, 3/8 teaspoon black pepper, 1-2 drops sesame oil).
  • BRING mixture to a boiling while whisking constantly.
  • REDUCE heat to low simmer, stirring until thickened and flavorful, about 5 minutes.
  • ALLOW to cool, then refrigerate in a sealed container (keeps indefinitely).
  • SERVE as a dressing for sandwiches or salads and enjoy!

ONIONS IN RED SAUCE FOR HOT DOGS

Chopped onions on a hot dog are good but this onion sauce a traditional topping for a New York hot dog is better.

3 large sweet onions (peeled and sliced or diced)
2 tablespoons olive oil
3 garlic cloves, minced
1/3 cup ketchup
1/4 teaspoon cayenne (optional)
1/4 teaspoon red pepper flakes, crushed (adjust for heat, I option for it!) (optional)
1 tablespoon paprika (Smoked paprika is a nice treat!I use 1/2 smoked and 1/2 sweet)
1/4 cup vinegar
salt

Steps:

  • Sauté garlic and onions in olive oil.
  • When onions are tender add ketchup, choice of cayenne or pepper flakes and paprika.
  • Simmer over a low heat for about 15 minutes.
  • Add vinegar and simmer 30-45 minutes.
  • Add salt to taste.
  • Serve over grilled hot dogs in steamed buns.

Great with mature cheese, cheese quiche, or cheese biscuits or rusks. Can be served hot or cold. Serve with fresh cracked pepper. Vegans can use olive oil instead of butter.

300 ml port wine, red

Steps:

  • Cut the onions in rings. Sautée in hot butter until soft. Add port and salt and pepper to taste. Reduce until almost all port wine has evaporated.

6 medium red onions, peeled
Kosher salt and freshly ground black pepper
2 tablespoons red wine vinegar
2 tablespoons white wine vinegar
1 tablespoon dark brown sugar
1/4 cup extra-virgin olive oil

Steps:

  • Preheat the oven to 425 degrees F.
  • Slice 1/4 inch off the tops and bottoms of the onions so they sit flat. Put the onions on the cutting board root-end down. Cut 3 slits in the stem side of each onion, crisscrossing to make 6 pie slices, cutting about two-thirds of the way through (do not cut all the way through).
  • Bring a medium pot of salted water to a boil. Drop the onions in and cook until tender on the outside, 4 to 5 minutes. Remove and cool. When the onions are cool enough to touch, gently open the onion "petals" so the onion opens up like a flower.
  • In a small pot, simmer the red and white vinegars, brown sugar and 2 tablespoons water over medium heat until syrupy, 2 to 3 minutes.
  • On a baking sheet fitted with parchment paper, arrange the onion flowers in a single layer with space between each. Drizzle with the olive oil and season with salt and pepper. Roast until the flowers open and the tips of the petals are lightly brown, 40 to 45 minutes.
  • Plate the onions on a platter and spoon the sauce over the onion flowers. Serve.
