CRANBERRY WALNUT SWEET POTATOES

Steps:
- Preheat oven to 400 degrees F.
- Scrub & pierce the sweet potatoes, then bake them for 1 hour or until tender.
- In a small saucepan, saute the onion in the butter until tender, then add the cranberries, syrup, water, cranberry juice & just 1/8 teaspoon of the salt.
- Bring to a boil, then reduce heat, cover & simmer for 10 to 15 minutes or until the berries pop, stirring occasionally.
- Stir in the walnuts & mustard & heat through.
- Cut the potatoes in half lengthwise, then sprinkle with the pepper & remaining salt.
- Top each half of potato with 2 tablespoons of the cranberry mixture, & sprinkle with chives.

Steps:
- Heat oven to 350 degrees. Coat a 9x13 inch baking dish with non-stick cooking spray.
- Cook sweet potatoes in microwave until tender. Cool slightly, then peel and cut potatoes into 1/4 inch slices.
- Arrange half of potatoes in prepared dish; sprinkle 1/4 cup brown sugar on top. Drizzle with 2 tablespoons butter and top with half of cranberries.
- Layer remaining sweet potatoes, brown sugar, butter, and cranberries over top. Pour orange juice evenly over casserole.
- Cover dish with foil. Bake 40 minutes; remove from oven. Combine topping ingredients and sprinkle mixture over top. Return to oven and bake 5 or 10 minutes longer or until top is brown and bubbly.

Steps:
- Preheat oven to 350℉ and line a baking sheet with foil.
- Pierce sweet potatoes a few times with a fork and place onto prepared baking sheet. Bake for 55 to 65 minutes, until sweet potatoes are tender when pierced with a fork or sharp knife. Let sweet potatoes cool slightly then slice open lengthwise and spread open slightly. Mash pulp of each sweet potato with a fork.
- Combine chopped walnuts, cranberries, butter, brown sugar, cinnamon and salt into a medium bowl; mix well.
- Mound each sweet potato with 1/3 cup cranberry walnut mixture. Place sweet potatoes back in oven and bake an additional 15 minutes, until topping is warm and fragrant. Remove sweet potatoes from oven.
- Drizzle sweet potatoes with maple syrup and serve warm.

SWEET POTATOES WITH WALNUTS AND CRANBERRIES

Steps:
- Preheat oven to 350 degrees.
- Coat a 9 x 13 inch baking dish with cooking spray.
- Cook sweet potatoes in microwave until tender. (12 to 15 minutes) Be sure to pierce several times with a fork.
- Cool slightly then peel and slice potatoes into 1/4 inch thick slices.
- Arrange half of the potato slices in the prepared dish.
- Sprinkle with 1/4 cup brown sugar. Drizzle with 2 Tbsp. melted butter and top with half of the cranberries.
- Repeat layers. Pour orange juice evenly over the casserole.
- Cover the dish with foil. Bake 40 minutes.
- While cooking prepare topping as follows: Combine walnuts, 2 Tbsp. melted butter, 1 Tbsp. brown sugar and 1 tsp. cinnamon.
- Remove the casserole from oven and sprinkle walnut mixture over the top.
- Return to oven and bake 5 to 10 more minutes or until brown and bubbly.

- Place sweet potatoes in a Dutch oven; cover with water. Bring to a boil. Reduce heat; cover and simmer until tender, 20-30 minutes. Drain. - Preheat oven to 375 degrees F. Spray a rimmed 15 x 10-inch baking pan with cooking spray. Combine oil, marmalade, apple juice, brown sugar, raisins, pumpkin pie spice and curry powder in a large bowl. Add sweet potatoes, cranberries and pecans; mix to coat well. Pour into prepared pan.

I do not remember where I got this recipe, but I wanted a sweet potato dish that did not use a lot of sugar as the normal recipes.

- Preheat the oven to 350°. Butter a large, shallow oven safe dish. Arrange the sweet potatoes overlapping the slices slightly. Pour 1/2 cup of the water over the sweet potatoes. Cover with foil and bake for about 40 minutes, or until just tender.
- Mix the melted butter with the bourbon or Vannila. Spoon the mixture over the sweet potatoes. Increase the oven temperature to 425°. Season with salt and black pepper and bake in the upper third of the oven for about 25 minutes, basting halfway through cooking, until the bourbon mixture is almost completely absorbed.
- In a saucepan, combine the cranberries, the remaining 1/2 cup of water and the brown sugar and med-heat until the cranberries start to burst, about 10 minutes. Drain the cranberries, keep the liquid.
- Stir the cayenne and cinnamon into the cranberry liquid and spoon it over the sweet potatoes. Bake in the upper third of the oven, basting well after 5 minutes, for 20 minutes longer, until the potatoes are glazed and most of the liquid is gone. During the last 5 minutes of baking, scatter the cranberries on top. Serve.
- These can be made a head of time, then warmed before serving.

MAPLE-BAKED SWEET POTATOES WITH CRANBERRIES

- Preheat the oven to 400 degrees F (200 degrees C).
- Place whole sweet potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, 20 to 30 minutes. Drain and allow to cool.
- Meanwhile, heat maple syrup and brown sugar in a small saucepan to boiling. Reduce heat and simmer until reduced by just about half. Add cranberries and return to a boil. Cook until berries are popping open. Add butter and dried thyme; remove from the heat.
- Slice cooled sweet potatoes into 1-inch rounds. Transfer to an 8x12-inch glass baking dish and arrange so potatoes are standing nearly on their sides and stacked like fallen dominoes. Stir hot syrup mixture, then pour it over the sweet potatoes, dispersing the cranberries as evenly as possible.
- Bake in the preheated oven until berries on top begin to caramelize, about 40 minutes. Remove from the oven and let stand for 5 minutes. Garnish each serving with a sprig of thyme.
