Sweet Potato Chili with Turkey image

My slow-cooker chili is packed with flavor. Swapping ground turkey for ground beef lightens it up, and sweet potato puree sneaks in a healthy dose of vitamin A. -Rachel Lewis, Danville, Virginia

1 pound ground turkey
1 small onion, chopped
2 cups chicken broth
1 can (15 ounces) sweet potato puree or canned pumpkin
1 can (4 ounces) chopped green chiles
1 tablespoon chili powder
1 teaspoon garlic powder
1 teaspoon ground cumin
1 teaspoon curry powder
1/2 teaspoon dried oregano
1/2 teaspoon salt
1 can (15-1/2 ounces) great northern beans, rinsed and drained
Optional: Sour cream, fresh cilantro and sliced red onions

Steps:

  • In a large skillet, cook turkey and onion over medium heat until turkey is no longer pink and onion is tender, 5-7 minutes, breaking up turkey into crumbles; drain. Transfer to a 3- or 4-qt. slow cooker., Stir in broth, sweet potato puree, chiles and seasonings. Cook, covered, on low 4-5 hours. Stir in beans; cook until heated through, about 1 hour. If desired, top with sour cream, cilantro and red onions. Freeze option: Freeze cooled chili in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally; add broth if necessary.

I adapted this from one of Sandra Lee's recipes. Her cookbook says this makes four servings, but my husband and I definitely got six servings!

1 tablespoon extra virgin olive oil
1 1/4 lbs lean ground turkey
1 garlic clove, minced
1 (15 ounce) can black beans, drained and rinsed
1 (15 ounce) can diced sweet potatoes, drained
1 (14 1/2 ounce) can diced tomatoes with green pepper and onion
1 (14 1/2 ounce) can fat-free low-sodium chicken broth
1/2 cup peach juice
1 (1 1/4 ounce) package chili seasoning mix
1/2 teaspoon cinnamon
1 jalapeno

Steps:

  • Heat the olive oil over medium-high heat. Add the ground turkey and garlic; cook and stir about 5 minutes until turkey is cooked through.
  • Add the rest of the ingredients and stir to combine. Bring the mixture to a boil; reduce heat.
  • Simmer for 10 minutes or until chili has thickened.

I love the blend of sweetness from the sweet potatoes and the little bit of kick from the cayenne pepper. The pumpkin pie spice seems a little strange, but it adds something that makes this recipe a bit different then your usual turkey chili...in a good way!

1 (28 ounce) can diced tomatoes, undrained
2 (14 ounce) cans black beans, rinsed and drained
3 cups cubed sweet potato
1 medium onion, chopped

1 tablespoon chili powder
2 teaspoons ground cumin
salt and ground black pepper to taste
1 pinch cayenne pepper, or to taste
⅛ cup shredded Cheddar cheese, or to taste

Steps:

  • Heat a large soup pot over medium heat. Brown turkey until crumbly and no longer pink, about 15 minutes.
  • Add tomatoes, black beans, sweet potato, onion, garlic, pumpkin pie spice, chili powder, cumin, salt, pepper, and cayenne to the pot. Simmer on low heat until sweet potatoes are soft and fully cooked, about 3 hours.
  • Ladle chili into bowls and garnish with Cheddar cheese, fresh cilantro, and sour cream.

3 teaspoons olive oil
1 pound 99-percent fat-free ground turkey
1 medium onion, diced
3 cloves garlic, minced
1/4 cup chili powder
1 tablespoon ground cumin
2 teaspoons ground coriander
3 tablespoons tomato paste
Kosher salt and freshly ground black pepper
2 medium sweet potatoes, peeled and cut into 1/2-inch cubes
4 ripe plum tomatoes, chopped
Two 14-ounce cans black beans, drained and rinsed
1/4 cup chia seeds
1 to 2 tablespoons apple cider vinegar
3 scallions, sliced
1/4 cup reduced-fat sour cream, optional

Steps:

  • Heat 1 1/2 teaspoons of the oil in a large Dutch oven over medium-high heat. Add the turkey and cook, breaking up chunks with the side of a wooden spoon, until browned, about 5 minutes. Push the turkey to the edges of the pan, leaving the middle empty. Reduce the heat to medium and add the remaining 1 1/2 teaspoons oil and then the onion and garlic to the center of the pan. Cook, stirring occasionally, until the vegetables start to soften, about 3 minutes. Add the chili powder, cumin and coriander and stir, about 30 seconds. Add the tomato paste and 1 teaspoon salt and stir until the paste begins to darken in color, about 30 seconds.
  • Add the sweet potatoes, tomatoes and 4 cups water, scraping the bottom of the pan to release any stuck bits. Bring to a simmer and cook, uncovered, until the chili has thickened and the sweet potato is tender, 35 to 40 minutes.
  • Stir the beans and chia seeds into the chili and heat through, about 5 minutes. Season with an additional 1/2 teaspoon salt and a few grinds of pepper, then taste the chili and stir in up to 2 tablespoons of vinegar. Spoon the chili into bowls and top each bowl with the scallions and a dollop of sour cream if using.

  • Heat the olive oil in a heavy pot over medium heat.
  • Add the turkey sausage, onion, and garlic to the pot, and cook until the onions are soft and translucent. Stir in the sweet potatoes and cook 3-4 minutes.
  • Add the tomato sauce, diced tomatoes, chicken broth, black beans, and chili beans, and stir to combine. Add the chili powder, cumin and pepper.
  • Bring the mixture to a simmer. Reduce heat and simmer uncovered 20-25 minutes, stirring occasionally, until the sweet potatoes are tender and easily pierced with a fork, and the chili has thickened. Serve hot, topped with sour cream and cheese.

2 1/2 pounds sweet potatoes, 4 to 5 potatoes, peeled and cubed
Salt
2 teaspoons orange zest
4 tablespoons butter, cut into pieces
1 cup creme fraiche or sour cream
Freshly ground black pepper
Freshly grated nutmeg, to taste
2 tablespoons extra-virgin olive oil
2 pounds ground turkey
1 large onion, chopped
2 small chile peppers, red fresno, jalapeno or serrano
1 red bell pepper, chopped
2 to 3 large cloves garlic, chopped
3 tablespoons chili powder (recommended: Gerhardt's)
1 tablespoon smoked sweet paprika
1 tablespoon ground cumin, a palmful
1 tablespoon ground coriander, a palmful
1/4 cup tomato paste
2 to 3 cups turkey or chicken stock
2 cups shredded sharp yellow Cheddar

Steps:

  • Add the potatoes to a large pot, cover with water and bring to a boil over medium heat. Salt the water and cook to tender about 12 to 15 minutes. Drain and return to hot pot. Add the zest, butter, creme fraiche or sour cream, salt, pepper and nutmeg, to taste.
  • While potatoes are coming to a boil, heat a chili pot with extra-virgin olive oil, 2 turns of the pan, over medium-high to high heat. Add the turkey and brown, then add in the onions and cook 2 to 3 minutes. Chop the peppers, then add them along with the garlic to the turkey. Stir in the spices, and add salt and pepper, to taste. Cook for 8 to 10 minutes, then add the tomato paste and cook for 1 minute. Stir in the stock and simmer a few minutes to thicken and combine flavors.
  • Preheat the broiler.
  • Transfer the chili to a casserole, spread the potatoes over the top and cover with Cheddar cheese. Brown under the broiler until golden and serve.

Freshly grated nutmeg, to taste (about 1/4 teaspoon)
2 tablespoons EVOO (extra-virgin olive oil)
2 pounds ground turkey
1 large onion, chopped
2 small chile peppers, such as Red Fresno, jalapeño, or serrano
1 red bell pepper, seeded and chopped
2 to 3 large garlic cloves
3 tablespoons chili powder, preferably Gerhardt's brand
1 tablespoon sweet smoked paprika
1 tablespoon ground cumin, a palmful
1 tablespoon ground coriander, a palmful
1/2 cup tomato paste
2 to 3 cups turkey or chicken stock
2 cups shredded sharp yellow cheddar cheese

Steps:

  • Place the potatoes in a large pot, cover with cold water, and bring to a boil. Salt the water and cook until tender, 12 to 15 minutes. Drain and return the potatoes to the hot pot, then mash with the butter, orange zest, and crème fraîche or sour cream. Season with salt, pepper, and nutmeg to taste.
  • While the potatoes are coming to a boil, heat a chili pot with the EVOO over medium-high to high heat. Add the turkey and brown, breaking up the meat, then add the onion and cook for 2 to 3 minutes while you chop the chile peppers, bell pepper, and garlic. Add the peppers and garlic to the pot, season with the spices, salt, and black pepper, and cook for 8 to 10 minutes more. Stir in the tomato paste for 1 minute, then add the stock and simmer for a few minutes longer to thicken and combine the flavors.
  • Preheat the broiler.
  • Place the chili in a casserole dish, spread the mashed sweet potatoes on top, and cover with the cheddar cheese. Brown under the broiler until golden.
