TART
4 Tbsp canadian bacon, after sauteeing
4 Tbsp red onion, after sauteeing
2-3 Tbsp butter for sauteeing and to grease pans
4 1/2 c sweet potatos, grated
4 eggs
1/2 c corn starch
4 Tbsp sugar
1/2 c evaporated milk
1/2 tsp smoked hickory salt
1/2 tsp smoked paprika
1/4 tsp pepper, freshly grated
1 pinch nutmeg, freshly grated
CHILI LIME CILANTRO SAUCE
4 Tbsp fresh lime juice
1 tsp chili powder
1/2 tsp cumin
1/2 c olive oil, very lightly flavored, not heavy tasting
6 Tbsp fresh cilantro, finely chopped

Steps:

  • 1. Preheat the oven to 350 degrees. In a small pan, using some butter, saute the Canadian bacon, transfer to a small bowl and set aside. In the same pan, saute the red onion and set aside. Grate enough sweet potatoes to make 4 1/2 cups. I like to use the food processor to do this.
  • 2. In a large bowl, beat the eggs. Add the cornstarch, sugar, evaporated milk, smoked hickory salt, smoked paprika, pepper and nutmeg. Mix until well blended. Now add the grated sweet potatoes and stir gently together.
  • 3. Now decide which baking dishes you plan to use and use the remainder of the butter to cover the bottom and sides of each. NOTE: You can get 4 portions in 12 oz baking dishes. I bake them in 4 of the single serve 5 inch Lodge Wonder Skillets to get the dense chewy texture. Or for a creamy custard texture I use 4 of the 1 1/2 cup (12 oz) souffle baking dish. Or you can bake the entire recipe in a 8 inch square pan. I like to bake 2 portions in the Lodge skillet and 2 portions in the souffle dish - that way I have some of each! Have some fun and cook them in different baking dishes and see how you will get different textures.
  • 4. Lift the potatoes from the liquid and evenly divide them into the 4 baking dishes. Pour the liquid in the bowl evenly in the 4 dishes. Top each with an equal portion of the onions and Canadian bacon. Here are 2 before baking.
  • 5. Bake for 25 - 30 minutes, until the potatoes are done.
  • 6. While the tarts are baking, make the Chile Lime Cilantro sauce by blending the lime juice, chile powder, and cumin. Slowly drizzle in the oil while whisking. When fully blended add the fresh cilantro. Please note that the cilantro does turn darker and will not look as fresh the next day so it is best made and served the same day. When the tarts are removed from the oven, drizzle some of the Chili Lime Sauce on them and serve immediately!

In this luscious vegetable dish, velvety sweet potatoes get a spicy jolt from a chile-spiked cilantro sauce spooned on top. Greek yogurt adds a creamy element and a bit of protein if you're serving these as a vegetarian main course. As a side dish, they are satisfying yet not the least bit heavy, thanks to the bright flavors of the sauce. You can make the sauce up to 4 hours ahead. Any longer than that and it starts to lose its fresh, tart taste. It's also very good on roasted carrots.

1/4 cup plus 1/3 cup extra-virgin olive oil, plus more for serving
1/2 tablespoon honey
Juice of 2 limes
Kosher salt, to taste
Black pepper, to taste
2 1/4 pounds sweet potatoes, scrubbed and cut into 1-inch wedges
1/2 bunch cilantro, leaves only (1/2 ounce)
2 green chiles, seeded and chopped
2 garlic cloves, grated on a Microplane or minced
2 tablespoons sliced blanched almonds
1 tablespoon white wine vinegar
1 cup Greek yogurt

Steps:

  • Heat the oven to 350 degrees.
  • In a large bowl, combine 1/4 cup oil, the honey, juice from 1 lime, a large pinch of salt and pepper to taste, and toss with potato wedges. Spread in an even layer on a rimmed baking sheet, bake until tender and lightly browned in spots, 45 to 55 minutes. Sprinkle with additional salt to taste.
  • Meanwhile, in a food processor, pulse to combine 1/3 cup oil, the cilantro, chiles, garlic, almonds, juice from remaining lime, vinegar and a large pinch of salt, until it forms a chunky purée. Taste and add more salt if needed.
  • Spoon the sauce over the potatoes, dollop with some yogurt, drizzle with oil, and serve with any remaining yogurt on the side.

3 sweet potatoes, unpeeled
Kosher salt
2 teaspoons finely grated lime zest
Pinch of cayenne pepper
1/4 cup canola oil
Freshly ground pepper
1/4 cup finely chopped fresh cilantro

  • Parcook the potatoes: Place in a pot of water and boil until fork-tender; let cool. Slice each potato lengthwise into eighths.
  • Preheat a grill to medium or place a cast-iron grill pan over medium heat. Mix 1 tablespoon salt, the lime zest and cayenne in a small bowl.
  • Brush the potato wedges with the oil and season with salt and pepper. Grill until golden brown on all sides (including the skin) and just cooked through, about 1 1/2 minutes per side. Transfer to a platter; immediately season with the salt mixture and sprinkle with cilantro.

2 slightly beaten eggs
1 1/2 cup rich cream
1/4 to 1/2 cup brown sugar

  • Use your favorite crust recipe, or buy a prepackaged one at the refrigerated section of your grocery store. Lay the dough flat and cut with a round cookie cutter. 1 tablespoon butter
1 tablespoon maple syrup

2 pounds sweet potatoes, peeled and cut into 1-inch chunks
1/3 cup extra-virgin olive oil
2 tablespoons fresh lime juice
1 teaspoon chili powder
1/2 teaspoon ground cumin
1/4 cup finely chopped fresh cilantro leaves
salt and freshly ground black pepper to taste
1/2 medium-size red bell pepper, seeded and cut into 1/4 inch dice [See how on streaming video]
4 scallions, white and light green parts, finely chopped

Steps:

  • Place the sweet potatoes in a large saucepan and cover with water. Bring to a boil and cook until just tender, 7 to 10 minutes (don't overcook or your salad will be mushy and falling apart.) Drain and transfer to a large bowl.
  • While the potatoes are cooking, make the dressing. Whisk together the olive oil, lime juice, chili powder, cumin, cilantro, salt, and pepper in a small bowl. Add the red bell pepper and scallions to the potatoes and toss with the dressing. Season again with salt and pepper. Serve warm or refrigerate and bring to room temperature before serving.

1/2 cup packed brown sugar
1/4 cup cold butter, cubed
2 tablespoons chopped pecans, toasted
1 large egg, room temperature
FILLING:
1 can (15-3/4 ounces) sweet potatoes
1/2 cup packed brown sugar
1/2 cup fat-free milk
2 egg whites, room temperature
1/3 cup reduced-fat plain yogurt
1 tablespoon all-purpose flour
1/2 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1/8 teaspoon ground cloves
Whipped topping, optional

Steps:

  • In a food processor, combine the flour, brown sugar, butter and pecans. Cover and pulse until blended. Add egg, pulsing until mixture forms a soft dough. Press onto the bottom and up the sides of a 9-in. fluted tart pan with removable bottom. , Place pan on a baking sheet. Bake at 400° for 8-10 minutes or until lightly browned. Cool on a wire rack. Reduce heat to 350°., Drain sweet potatoes, reserving 1/4 cup liquid. Place potatoes in a food processor; cover and process until pureed. Add the brown sugar, milk, egg whites, yogurt, flour, cinnamon, ginger, nutmeg, cloves and reserved liquid; cover and process until blended., Pour into crust. Bake for 30-35 minutes or until a knife inserted in the center comes out clean. Cool on a wire rack. Store in the refrigerator. Garnish with whipped topping if desired.
