1/2 cup chopped celery
1/2 cup chopped onion
1/2 cup chicken broth

Steps:

6 tablespoons unsalted butter
1 medium apple - peeled, cored, and diced
⅓ cup chopped onion
1 tablespoon white sugar
1 teaspoon salt
¼ teaspoon ground nutmeg
1 (16 ounce) can sweet potatoes, drained
2 cups soft bread crumbs

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Melt butter in a large skillet over medium heat. Add apple and onion; cover and cook until tender, 8 to 10 minutes.
  • Stir in sugar, salt, and nutmeg; push to one side of the skillet. Add drained sweet potatoes to the empty side of the skillet; mash with a fork. Add bread crumbs and mix until all ingredients are combined. Transfer to a greased casserole dish.

11 cups very coarsely crumbled Sweet Potato Corn Bread
3/4 pound bacon, coarsely chopped
2 pounds red-skinned sweet potatoes (yams), peeled, cut into 1/2-inch cubes (about 4 cups)
1 large onion, chopped
4 1/2 tablespoons chopped fresh thyme
3 large bunches kale, Swiss chard, or mustard or collard greens, stemmed, coarsely chopped
3 tablespoons apple cider vinegar
3 tablespoons honey
2 teaspoons salt
2 teaspoons ground black pepper
1 teaspoon dry mustard
1 1/4 cups chopped pecans, toasted
5 large eggs, beaten to blend
Canned low-salt chicken broth

Steps:

  • Preheat oven to 350°F. Arrange corn bread on rimmed baking sheet. Bake until slightly toasted, stirring occasionally, about 40 minutes. (Corn bread can be prepared 1 day ahead. Cover and store at room temperature.)
  • Cook bacon in heavy large pot over medium heat until brown and crisp, about 10 minutes. Using slotted spoon, transfer bacon to bowl. Reserve 6 tablespoons drippings in pot (discard any remaining drippings). Add sweet potatoes, onion and thyme to same pot. Cover and cook over medium-low heat until sweet potatoes are just tender, stirring occasionally, about 20 minutes. Add greens. Cover; cook until greens just wilt, stirring occasionally, about 5 minutes.
  • Whisk vinegar, honey, salt, pepper and mustard in very large bowl to blend. Mix in sweet potato mixture, pecans and bacon. Stir in corn bread. Mix eggs into stuffing.
  • To bake stuffing in turkey:
  • Loosely fill main cavity with stuffing. Add enough broth to remaining stuffing to moisten lightly (about 1/4 to 1/2 cup, depending on amount of remaining stuffing). Generously butter glass baking dish. Spoon remaining stuffing into prepared dish. Cover with buttered foil, buttered side down. Bake stuffing in dish alongside turkey until heated through, about 25 to 30 minutes. Uncover and bake until top is slightly crisp and golden, about 15 to 20 minutes.
  • To bake all of stuffing in baking dish:
  • Preheat oven to 350°F. Generously butter 15 x 10 x 2-inch . Add enough broth to stuffing to moisten (about 3/4 to 1 cup). Transfer stuffing to prepared dish. Cover with butter foil, buttered side down; bake until heated through, about 30 to 35 minutes. Uncover and bake until top is slightly crisp and golden, about 20 to 25 minutes longer.

½ cup cinnamon red hot candies
1 cup water
1 (29 ounce) can sweet potatoes, drained
⅓ cup packed brown sugar
½ cup crushed pineapple, drained
¼ cup chopped pecans
6 large marshmallows

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large pot over medium heat, combine the candies and water. Stir until candies are dissolved.
  • Add the apples and baste frequently until apples begin to soften. Remove from heat and allow to cool.
  • Mix together the sweet potatoes, brown sugar, pineapple and pecans.

6 pounds sweet potatoes, peeled and cut into 3/4-inch chunks
7 tablespoons extra virgin olive oil
3 1/2 teaspoons kosher salt, more to taste
1 teaspoon ground black pepper
2 medium onions, diced
2 medium green bell peppers, diced
2 large garlic cloves, finely chopped
2 jalapeños, seeded and finely chopped
2 teaspoons chili powder
2 pounds jumbo shrimp, peeled and cut into 1/2-inch pieces
1 1/2 tablespoons freshly squeezed lime juice, more to taste
6 tablespoons chopped fresh cilantro

Steps:

  • Preheat oven to 425 degrees. In a large bowl toss potatoes with 4 tablespoons oil, 2 teaspoons salt and 1/2 teaspoon black pepper. Spread potatoes on two or three large baking sheets, leaving space between chunks so they can brown. Roast, tossing occasionally and changing position of baking pans so potatoes cook evenly, until potatoes are golden, crisp around edges, and tender, about 35 minutes.
  • In a large skillet, heat remaining 3 tablespoons oil over medium-high heat. Add onions, bell peppers and 1/2 teaspoon salt. Cook, stirring, until softened, about 10 minutes. Add garlic, jalapeños and chili powder and cook 2 minutes more. Add shrimp and remaining teaspoon salt. Cook, tossing occasionally, until shrimp is just opaque, about 5 minutes.
  • Pour in lime juice and scrape up any browned bits from bottom of skillet. Combine shrimp mixture with sweet potatoes in a large bowl and stir in the cilantro. Taste and add more lime juice and salt, if necessary.

Roasted Goose with Chestnut-Sweet Potato Stuffing and Gingered Plum Sauce image

1 whole goose around 15 pounds, soaked overnight in a lightly salted brine liquid
Canola oil
Black pepper
1 teaspoon sesame oil
12 cloves garlic
1 tablespoon minced ginger
1 onion, 1/4-inch dice
1 large, peeled carrot, 1/4-inch dice
2 ribs celery, 1/4-inch dice
Salt and black pepper, to taste
2 large sweet potatoes, oven roasted until al dente (80 percent), peeled and 1/2-inch dice
12 chestnuts, roasted and peeled and halved
1 cup sliced scallions, separated, save white part for the sauce
2 cups dehydrated plums (prunes), 1/4-inch dice
2 cups plum wine
2 cups Zinfandel
3 cups chicken stock
1 tablespoon naturally brewed soy sauce

Steps:

  • Pre-heat the oven to 550 degrees with a roasting pan large enough to hold the bird. Pull bird out of brine and rinse extremely well. Pat dry and rub canola oil all over and inside the bird and season with black pepper. Place goose in the hot roasting pan in the oven. Let brown on top, about 20 to 30 minutes. Meanwhile, in a hot saute pan coated lightly with canola oil, add the sesame oil and saute the garlic cloves, ginger and onions until lightly brown then add the carrots and celery, about 5 minutes. Season with salt and pepper. In a large bowl, gently mix with the sweet potatoes, chestnuts and green scallions and check for seasoning. Pull the browned bird out of the oven and stuff with stuffing. Reduce oven to 325 degrees and cover with foil to prevent burning. Cook an additional 11/2 to 2 hours (depending on size of bird) or until juices run clear after puncturing between leg and breast. Let bird rest 10 minutes before slicing. Drain off fat in the roasting pan but leave at least 2 tablespoons of fat. Place roasting pan on a high burner and sautee white scallions, ginger and plums. Deglaze with both wines. Reduce by 80 percent then add stock. Reduce stock by 20 percent then add soy. Check for seasoning.
  • PLATING: Take out the stuffing and mound it on a large oval platter. Slice bird and present on top of stuffing. Ladle sauce around the slices.

6 (1- 1½ lb) Cornish Game hens, thawed
1 Tbsp olive oil
2 Tbsp Garam Masala seasoning
Salt and fresh ground pepper
Stuffing:
1 Tbsp olive oil
2 c. diced sweet potato
¼ cup diced fresh Jalapeno
1 box cornbread stuffing mix
¼ cup butter
¾ cup water
¾ cup apple juice
1½ c. diced red apple - such as Macintosh or Jonathan.
Sauce:
1 Tbsp Tamarind Concentrate - found in Asian section or Asian markets
1 tsp sesame oil
1 tsp soy sauce
3 Tbsp Teriyaki sauce
1 Tbsp Garam Masala seasoning
½ cup pure (real) maple syrup

Steps:

  • Preheat oven to 450° F. Rinse Game Hens and pat dry with paper towels. Brush lightly with olive oil and season with garam masala, salt and pepper. Set hens aside while preparing stuffing. To prepare stuffing, toss diced sweet potatoes with olive oil in a microwave safe shallow dish - such as a pie plate. Microwave on high 6-8 minutes, stirring ever 1-2 min or until potatoes are nearly cooked. Meanwhile bring water, apple juice, butter and jalapenos to a boil. Remove from heat. Stir in stuffing mix. Cover and let sit 5 min. Stir in sweet potatoes and apples. Lightly stuff cavities of Game Hens with stuffing. Arrange hens in 9 x 13 baking dishes. Leave some space between birds so air can circulate. Roast birds for 30 minutes. While birds are roasting, combine all sauce ingredients. Remove hens from oven, brush with sauce, return to oven and cook for another 20-30 min, brushing with sauce occasionally.

1 1/2 lbs sweet potatoes, unpeeled, cut into bite-size chunks
2 tablespoons unsalted butter, room temperature, DIVIDED
8 scallions (green & white parts)
2 large eggs, beaten
1 cup whole wheat bread crumbs
1/4 teaspoon ground black pepper
1/2 teaspoon salt
1 teaspoon orange zest
3 tablespoons fresh parsley, chopped
2 tablespoons whole wheat bread crumbs (Yes, again!)

Steps:

  • Place sweet potatoes in a steamer basket & steam 10-15 minutes or until tender, & about a minute or two BEFORE they are taken off the burner, add the sliced scallions to steam for several minutes.
  • Preheat oven to 350 degrees F.
  • In a large bowl, partially mash the potato/scallion combo along with 1 tablespoon of butter.
  • Add beaten eggs, 1 cup of the bread crumbs, pepper, salt, zest & parsley, then mix well & set aside.
  • In a small skillet, melt last tablespoon of butter, then add the 2 tablespoons of bread crumbs & toss over medium-high heat.
  • Spoon stuffing mixture into a baking dish, then sprinkle the toasted bread crumbs over the top & bake about 20 minutes, or until set.
  • Best served hot!

4 medium sweet potatoes or yams, peeled and in large dice (4 cups)
2 tablespoons extra virgin olive oil
2 tablespoons chopped sage leaves
Salt and pepper
2 tablespoons grape seed oil
1 pound mixed wild mushrooms (shiitake, portobello or cremini) (4 cups), cleaned, stemmed and in large dice
1 small red onion, finely chopped (1 cup)
2 sprigs thyme, plus 1 tablespoon minced thyme
8 tablespoons butter
2 eggs, lightly beaten
1 to 1 1/2 cups heavy cream
2 to 3 cups chicken broth
8 cups day-old sourdough bread, in large dice (one 2-pound round loaf, trimmed of crust)
1 tablespoon rosemary, chopped fine
2 tablespoons chopped parsley

Steps:

  • Adjust oven rack to middle position and heat oven to 350 degrees. In roasting pan, place sweet potatoes, olive oil and 1 tablespoon sage leaves , sprinkle with salt and pepper and toss to combine. Roast until golden brown and tender, tossing occasionally, 20 to 30 minutes. Remove from oven and set aside.
  • In a large skillet, heat grapeseed oil over medium-high heat. Saute mushrooms and red onions with thyme sprigs, stirring frequently, until mushrooms are caramelized, about 7 minutes. Remove from heat, stir 4 tablespoons butter into hot mushrooms and discard thyme. Set mushrooms aside.
  • Use remaining butter to coat a 3-quart baking dish. In a large mixing bowl, whisk eggs, one cup cream and 2 cups chicken broth together. Add bread and stir until coated evenly. Fold in sweet potatoes, mushroom mixture and remaining herbs. If bread cubes seem dry, add more cream and chicken broth. Season with salt and pepper. 3/4 cup orange juice
3/4 cup whole milk
3/4 cup low-salt chicken broth
3 large eggs, beaten to blend

Steps:

  • Preheat oven to 450°F. Toss mushrooms and oil in medium bowl to coat; sprinkle with salt and pepper. Turn mushrooms out onto baking sheet and roast until golden, about 20 minutes; transfer to large bowl. Cook potatoes in large saucepan of boiling salted water until just tender, about 6 minutes. Drain potatoes; add to mushrooms.
  • Melt butter in heavy large skillet over medium heat. Add red onion and next 4 ingredients. Sauté 8 minutes. Add green onions; sauté 2 minutes. Discard bay leaves. Add mixture to mushrooms. (Can be made 1 day ahead. Cover; chill. Reheat to lukewarm before continuing.)
  • Preheat oven to 350°F. Butter 13x9x2-inch glass baking dish. Mix bread into vegetable mixture. Whisk juice, milk, and broth in medium bowl to blend; mix into stuffing. Season stuffing with salt and pepper; stir in eggs. Transfer to prepared dish. Bake uncovered until cooked through and brown, about 50 minutes.

To make your sauce you'll need: 1 24-oz jar or can of strained tomatoes 1/2 cup apple juice or cider 2 tablespoons maple syrup 2 tablespoons balsamic vinegar 1 teaspoon onion powder 1 clove garlic, minced 1/2 teaspoon cinnamon 1/4 teaspoon nutmeg 1/4 teaspoon ground cloves Sea salt, to taste Combine the sauce ingredients in a sauce pan and stir. Cook over medium heat until simmering. Cover and lower the heat to a gentle simmer. Taste test before using in the recipe. If you like a bit of spice, add a dash of hot pepper- but please taste test first. To assemble: Preheat oven to 350 degrees F. Lightly oil four serving dishes or one medium-large baking dish. When the cabbage has cooled enough for you to handle, cut another 1/2 inch or so off the bottom core if you need to and gently peel off the leaves one at a time; set the leaves aside on a plate or board. Trim any large leaves that may have a thick spine. Smaller leaves can be combined- use two to make one roll if you need to. Combine the roasted vegetables and sausage with the cooked quinoa- start with a cup and see how much you need. If you want to stretch the filling, use more quinoa. Add a handful of raisins and stir in. To stuff: Lay a cabbage leaf on your work surface and add a spoonful of filling in the center. Fold in the side of the leaf and roll it up; tuck it into the prepared baking dish seam side down. Repeat for the remaining leaves and filling. Pour the sauce over the stuffed cabbage and bake in the center of a preheated oven for about 30 minutes, till heated through and bubbling. You can make this stuffed cabbage ahead of time, if you wish; cover and chill. Add an extra 10 minutes or so to the baking time.

  • Brown sausage in large skillet on medium-high heat. Meanwhile, drain potatoes, reserving syrup.
  • Add water and reserved syrup to sausage; bring to boil. Slice potatoes. Add to sausage mixture with stuffing mix; stir just until moistened. Spoon into 1-1/2-qt. casserole; cover.
  • Bake 20 min. or until heated through.

1 pound thick-cut bacon slices, cut into 1/2-inch pieces
2 tablespoons (1/4 stick) butter
6 1/2 cups 3/4-inch cubes peeled redskinned sweet potatoes (yams; about 2 3/4 pounds)
4 cups 1/2-inch onion pieces (from about 2 large onions)
3 cups 1/2- to 3/4-inch celery pieces
1 1/2 tablespoons chopped fresh thyme
1 1/4 teaspoons (or more) coarse kosher salt
1 1/3 cups fresh orange juice
3 large eggs
1 1/3 cups low-salt chicken broth

Steps:

  • Position rack in center of oven; preheat to 350°F. Spread bread cubes in single layer on large baking sheet; bake until almost firm to touch, about 10 minutes. Cool. DO AHEAD: Can be made 1 day ahead. Store in airtight container at room temperature.
  • Place bread cubes in extra-large bowl. Cook bacon in heavy large pot over medium heat until crisp. Using slotted spoon, transfer bacon to paper towels to drain.

12 slices white whole-grain bread, cut into 1/2-inch cubes (7 cups)
1 tablespoon olive oil
3/4 cup chopped onion
1/2 cup sliced celery
1 large sweet potato (about 12 oz), peeled, cut into 1/2-inch cubes (2 cups)
1/3 cup sweetened dried cranberries
1 can (14 oz) reduced-sodium chicken broth
1 tablespoon chopped fresh or 1 teaspoon dried sage leaves
1 1/2 teaspoons chopped fresh or 1/2 teaspoon dried thyme leaves
1/4 teaspoon salt
1/4 teaspoon pepper
1 whole turkey breast (4 1/2 to 5 lb), thawed if frozen
1/3 cup real maple syrup
2 tablespoons dark rum
1/4 teaspoon salt

Steps:

  • Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. On ungreased large cookie sheet with sides, place bread cubes. Bake 15 minutes, stirring once, until light golden brown.
  • Meanwhile, in 12-inch nonstick skillet, heat oil over medium-high heat. Cook onion and celery in oil 4 to 5 minutes, stirring frequently, until crisp-tender. In large bowl, toss onion mixture, toasted bread cubes and remaining stuffing ingredients until well mixed. Spoon into baking dish.
  • Place turkey breast, skin side up, on top of stuffing in center of baking dish. Insert ovenproof meat thermometer so tip is in thickest part of breast and does not touch bone. Cover stuffing with 2 pieces of foil, leaving turkey uncovered. Roast 1 hour.
  • In 1-quart saucepan, heat syrup, rum and 1/4 teaspoon salt to boiling; do not stir. Boil uncovered 3 to 4 minutes or until mixture coats and runs off spoon.
  • Brush turkey with half of the glaze. Roast 30 minutes. Brush with remaining glaze. Roast 15 to 45 minutes longer or until thermometer reads at least 165°F. Transfer turkey to serving platter; tent with foil. Let stand 15 minutes for easier carving. Meanwhile, stir stuffing; bake uncovered 15 to 20 minutes longer.
