1 (.25 ounce) package active dry yeast
4 tablespoons white sugar
½ cup canned sweet potato puree
½ cup warm water (110 degrees F/45 degrees C)
3 tablespoons margarine, softened
1 teaspoon salt
2 eggs
3 ½ cups all-purpose flour

Steps:

  • Dissolve yeast, warm water, and 1 tablespoon sugar in a mixing bowl. Let stand 5 minutes.
  • Add remaining sugar, sweet potato, butter or margarine, salt, and slightly beaten eggs. Stir to mix well. Stir in 3 cups of flour. Turn out on a lightly floured surface. Knead 2 to 3 minutes, adding just enough of remaining flour to prevent sticking. Do not knead too heavily; when smooth, shape into a ball. Place in an oiled bowl, and turn to coat the surface. Cover, and let raise about 1 hour or longer.
  • Punch down, and allow dough to rest for 2 minutes. Divide into 16 to 20 balls, and place on a greased cookie sheet or in a 9x13 inch pan. Allow to rise until doubled.
  • Bake at 375 degrees F (190 degrees C) for 12 to 20 minutes. Serve warm.

Try these vegan pastries for a plant-based version of sausage rolls. Wrapped in golden pastry, harissa adds a delicious spice to the sweet potato and red onion

2 medium sweet potatoes (650g)
2 tbsp olive oil
3 red onions, finely sliced
2 garlic cloves, crushed
2 tbsp harissa paste
1 tbsp tomato purée
½ small bunch of coriander, finely chopped
320g sheet ready-rolled puff pastry (check the label to ensure it is vegan)
dairy-free milk, for glazing
1 tsp nigella seeds

Steps:

  • Heat the oven to 200C/180C fan/gas 6. Pierce the sweet potatoes all over with a fork, then cook in the microwave on high for 8-10 mins until softened. Or, bake in the oven for 50 mins-1 hr, turning halfway through. Leave to cool a little, then cut in half and scoop the flesh into a bowl. Leave to cool completely.
  • Meanwhile, heat the oil in a frying pan over a medium heat and cook the red onions and a pinch of salt for 10-12 mins, stirring occasionally until softened and caramelised. Add the garlic, harissa and tomato purée and fry for 2 mins more. Tip the mix into the bowl with the sweet potato along with the coriander, then mash together. The filling should be mostly smooth, but not a purée. Season and leave to cool completely.
  • Unroll the pastry sheet and cut in half lengthways into two long rectangles. Spoon half the filling down the middle of one of the rectangles and form it into a long sausage shape. Brush the edges of the pastry with a little of the milk, then fold the empty half of the pastry over the filling and press the edges to seal. Crimp using a fork to ensure the filling is enclosed, then repeat with the remaining filling and remaining rectangle of pastry.
  • Cut the pastry along the length into 7cm-long rolls, then arrange, spaced apart, on a large baking tray lined with baking parchment. The rolls can now be frozen on the tray. Once solid, put in a freezerproof container and freeze for up to three months. Brush with more milk, then sprinkle with the nigella seeds. Cut small slashes into the top of each roll. Bake for 25-30 mins (or 40 mins from frozen), turning halfway through, until golden.

¼ cup warm water
1 (.25 ounce) package active dry yeast
1 cup milk
5 tablespoons unsalted butter
½ cup white sugar
1 ½ teaspoons salt

2 cups mashed cooked sweet potatoes
1 teaspoon lemon juice
1 large egg, slightly beaten
2 cups all-purpose flour, or more as needed
2 tablespoons salted butter, melted

Steps:

  • Combine warm water and yeast in a measuring cup; stir to dissolve. Set aside.
  • Heat milk, unsalted butter, sugar, salt, and cinnamon in a small saucepan over medium heat, stirring occasionally, until butter melts and milk begins to bubble.
  • Place mashed sweet potatoes in a large mixing bowl and pour milk mixture over top. Add lemon juice and mix until smooth. Let cool to lukewarm, 10 to 15 minutes. Add egg and yeast mixture; blend well.
  • Stir in 2 cups of flour and beat with an electric hand mixer at medium speed, about 3 minutes. Add enough additional flour to make a stiff dough. Turn onto a floured surface and knead until smooth and elastic.
  • Place dough in a buttered bowl. Turn dough to butter top, then cover and let rise until double in size, 45 minutes to 1 hour.
  • Punch down and knead once more, then shape into rolls. Place on a greased baking sheet, cover, and let rise until double in size, 45 minutes to 1 hour.
  • Preheat the oven to 400 degrees F (200 degrees C).
  • Bake in the preheated oven until golden, about 20 minutes. Brush tops with melted butter while hot.

3/4 cup mashed sweet potatoes (without added milk and butter)

Steps:

  • In bread machine pan, place all ingredients in order suggested by manufacturer. Select dough setting (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed)., When cycle is completed, turn dough onto a lightly floured surface. Punch down. Divide into 30 portions; roll each into a ball. Place on greased baking sheets. ¼ cup vegan butter
1 cup mashed sweet potato, from 1 baked medium sweet potato
3 cups unbleached all-purpose flour, plus more for dusting
¼ cup granulated sugar
½ teaspoon salt
2 ¼ teaspoons active dry yeast, 1 packet
½ teaspoon grapeseed oil
½ cup brown sugar, or coconut sugar, or a mix of the two
½ tablespoon ground cinnamon
¾ cup toasted pecans
⅓ cup vegan butter
½ cup vegan cream cheese
½ cup confectioners sugar
¼ cup mashed sweet potato, from ¼ baked medium sweet potato
½ teaspoon pure vanilla extract

Steps:

  • In a small saucepan, warm the soy milk and vegan butter over medium heat until the butter has melted. Do not boil it. Remove from the heat and stir in the mashed sweet potato.
  • In a large bowl, mix together the flour, granulated sugar, salt, and yeast. Pour the liquid ingredients into the dry and use a wooden spoon to combine. Once it gets too difficult to stir, use your hands to combine the ingredients.
  • Flour a clean work surface and transfer the dough onto the prepared work space. Knead it until you've got a smooth dough ball. Lightly oil a large bowl. Place the dough ball in it, cover with plastic wrap or a kitchen towel, and let rise for 1 hour. The dough should double in size.
  • Make the filling: In a small bowl, combine the brown sugar and cinnamon and set aside. Chop the pecans into small pieces and set aside. In a small saucepan, melt the vegan butter and set aside.
  • Once the dough has doubled in size, preheat the oven to 375°F (190°C).
  • Press the air out of the dough, then transfer it back onto your floured work space. Roll the dough until it is about ¼-inch (6 mm) thick. You should end up with a roughly rectangular oval, about 12x16 inches (30x40 cm).
  • Brush the dough with the melted butter, sprinkle with the cinnamon-sugar mix, and then top with the chopped pecans. Fold the short side of the dough over and roll tightly until you have a log.
  • Carefully cut the log into twelve 1-inch (2 cm) slices. Grease a large skillet or a 10-inch (25 cm) round baking dish and place the rolls in it cut-side down.
  • Bake for 25 minutes, or until they've expanded and turned slightly golden on top.
  • Meanwhile, make the frosting: Place all the ingredients in a food processor or standing mixer with the whisk attachment on high and blend until creamy.
  • Remove the rolls from the oven and let cool for 5 to 10 minutes. Top with the sweet potato frosting and serve immediately. They will stay fresh for up to 2 days, but they're best eaten the day you bake them.

1/2 cup warm water
1 cup mashed sweet potato
1 egg
1 cup buttermilk
1/2 cup sugar
1/4 cup melted butter
5 1/2 cups flour
2 tablespoons grated orange rind
2 1/4 ounces yeast
1 1/2 teaspoons salt
1 teaspoon baking soda
3/4 cup melted butter
2 cups packed brown sugar
2 -4 tablespoons cinnamon
1 cup chopped pecans (optional)
1 cup packed brown sugar
1 teaspoon cinnamon
1/2 cup light corn syrup
1/4 cup butter
1/2 cup heavy cream
1 teaspoon vanilla

Steps:

  • Dough: (Using ABM).
  • Make sure the potatoes are smoothly mashed. Combine all ingredients, in order listed, into pan of bread maker. Run dough cycle.
  • (By Hand).
  • Mix warm water, yeast, and 1 tsp sugar until yeast is dissolved. Let sit for 5 minutes.
  • Stir in egg, buttermilk, sugar and melted butter.
  • Mix baking soda into 1 cup flour. Stir mixture into liquids.
  • Stir in orange zest.
  • Stir in 3 1/2 cups flour.
  • Sprinkle remaining 1/2 cup flour over kneading surface. Turn dough out onto surface and knead 5-10 minutes until dough is smooth and elastic. It should still be slightly sticky.
  • Put dough in bowl, spray top with cooking spray and place in warm spot to rise until about doubled.
  • While dough is rising, make filling by combining the ingredients.
  • When dough is through rising, or dough cycle is done, turn dough out onto lightly floured surface. Roll dough out into 10 x 18 inch rectangle.
  • Spread filling over dough, leaving a 1 inch border along the longer sides. Roll up dough, jelly-roll style. Cut into 1 1/2 inch slices (no thicker than that) and place slices into well greased baking pan.
  • Spray top of rolls with cooking spray. If you wish, you can cover the rolls with plastic wrap and put into refrigerator to rise overnight, or place into warm spot to rise until doubled, about 30 minutes.

  • After 10 minutes, remove rolls from oven and slowly drizzle glaze over rolls, allowing it to soak into the rolls.
  • Return rolls to oven and bake for another 10-15 minutes, or until lightly browned.
  • Remove from oven and invert onto foil lined baking sheet. Remove baking pan and invert rolls again onto serving platter.
  • Let cool for about 20 minutes, then serve warm.

3/4 cup raisins
1 tablespoon cinnamon

Steps:

  • For dough: Combine sweet potato, 9 tablespoons melted butter, and 1/2 cup milk. Stir in the flour,1/4 cup sugar, baking powder, and salt. Mix until well blended.
  • When a soft dough forms, roll the dough onto a floured surface. Form the dough into a 12 x 15 inch rectangle.
  • In a small boewl, combine the 6 tablespoons of melted butter, raisins, and cinnamon. Sprinkle the filling mixture over the dough. Roll dough lengthwise, pinching the seams together.

1 14- to 16-ounce red-skinned sweet potato (yam)
1 cup half and half
6 tablespoons packed golden brown sugar
1 envelope dry yeast
1/4 cup (1/2 stick) unsalted butter, melted, cooled
2 teaspoons salt
1 teaspoon ground cardamom
3 1/4 cups (about) all purpose flour
3/4 cup dried cherries or golden raisins (about 4 ounces)
1 large beaten egg, beaten to blend (glaze)

Steps:

  • Pierce sweet potato in several places with fork. Place in microwave oven and cook on High 7 minutes. Turn over and cook until very tender, about 7 minutes longer. Scoop flesh from potato into bowl and mash. Transfer 3/4 cup mashed potato to large bowl of electric mixer fitted with whisk attachment (reserve remaining potato for another use). Beat until potato is very smooth.
  • Heat half and half and 1 tablespoon brown sugar in heavy small saucepan over low heat until thermometer registers 105°F. to 115°F. Remove from heat. Sprinkle yeast over; stir to blend well. Let stand until yeast dissolves and is slightly foamy, about 12 minutes.
  • Fit mixer with dough hook. Add remaining 5 tablespoons brown sugar, melted butter, salt and cardamom to sweet potato in bowl and beat until smooth and will blended. Add yeast mixture and mix until blended. At medium speed, beat in enough flour, 1 cup at a time, to form soft dough. Beat 3 minutes (dough will be soft). Turn out dough onto floured surface. Knead until smooth and elastic, adding more flour by tablespoons if too sticky, about 6 minutes. Knead in dried cherries. Butter large bowl. Form dough into ball and add to bowl, turning to coat. Cover bowl with plastic wrap, then towel. Let dough rise in warm draft-free area until doubled in volume, about 1 1/2 hours.
  • Butter 2 heavy large baking sheets. Punch down dough. Turn out onto floured surface. Divide dough in half. Using rolling pin, roll 1 dough piece to 12-inch-diameter round (if dough retracts during rolling, stop occasionally and gently pull and stretch dough with fingertips, then continue rolling). Repeat with remaining dough piece. Cut each round into 8 equal triangles. Starting at wide end of triangle, roll up toward point of triangle, stretching dough slightly with fingertips as triangle is rolled up. Brush point lightly with glaze; press to seal. Place 8 rolls on each prepared sheet, shaping into crescents and spacing evenly. Cover rolls with towel. Let rise in warm draft-free area until light and puffy, about 45 minutes.
  • Position 1 rack in center and 1 rack in top third of oven; preheat to 400°F. Brush rolls with glaze. Bake until rolls are golden and sound hollow when tapped on bottom, switching top and bottom baking sheets halfway through baking, about 15 minutes. Cool rolls on racks. (Can be made 2 weeks ahead. Wrap in foil; freeze. If desired, rewarm wrapped rolls in 350°F. oven about 10 minutes.)

These giant bad boys are to die for! We had these hot out of the oven for breakfast this morning. The aroma that floated through the house had my mouth watering. I've never had much luck baking bread with yeast, that is until now! It wasn't errors in recipes, it was definitely the bakers (me) errors that caused my failed bread...

1/2 c water, warm (100 to 110 degrees)
1 c mashed sweet potatoes, i used canned
1 egg
1 c buttermilk
1/2 c sugar
1/4 c butter, melted
5 1/2 c all-purpose flour
2 Tbsp grated orange rind, i didn't have fresh orange peel, so i used mccormicks gourmet collections orange peel
2 1/2 Tbsp yeast
1 1/2 tsp salt
1 tsp baking soda
FILLING
3/4 c melted butter
2 c packed brown sugar
2 to 4 Tbsp cinnamon, ground (i used 2 tbsp)
1 c pecans, chopped (optional) i used walnuts
1 c raisins (optional) the original recipe did not call for raisins)
GLAZE
1 c packed brown sugar
1 tsp cinnamon
1/2 c light corn syrup
1/2 c butter
1/2 c heavy cream
1 tsp vanilla extract

Steps:

  • 1. Please read this recipe before you get started. The very first thing you need to do, is make sure that your yeast date has NOT expired! I found it very beneficial to have ALL my ingredients measured out before I got started. Also, I had everything at room temperature; eggs, buttermilk, butter, etc.
  • 2. DIRECTIONS USING A BREAD MAKER (ABM). Make sure the sweet potatoes are smoothly mashed. I used my hand mixer. The mixer will also pull any strings out of this potato mixture. Proceed with step 11.
  • 3. Combine all ingredients, in the order that they are listed, into pan of bread maker. Run dough cycle
  • 4. DOUGH BY HAND (I used my big mixer with paddle)
  • 5. Mix warm water, yeast, and 1 tsp sugar until yeast is dissolved. Let sit for 5 minutes.
  • 6. Stir in egg, buttermilk, sugar and melted butter.
  • 7. Mix baking soda into 1 cup flour. Stir mixture into liquids. (no where in this part of making dough by hand did it tell me where to add the sweet potatoes, this is where I added them) I had mashed them the day before and refrigerated. I set the container in warm water to bring to room temperature.
  • 8. Stir in orange zest.
  • 9. Stir in 3 1/2 cups flour. (I ended up having to add more than 3 1/2 cups of flour. I probably add 4 1/2 cups, I just kept adding a spoonful at a time until I felt like I could handle the dough).
  • 10. Sprinkle remaining 1/2 cup flour over kneading surface. Turn dough out onto surface and knead 5-10 minutes until dough is smooth and elastic. It should still be slightly sticky.
  • 11. Put dough in bowl, spray top with cooking spray and place in warm spot to rise until about doubled. (I used a large glass mixing bowl and I sprayed the bowl as well as the top of the dough)
  • 12. FILLING DIRECTIONS: While dough is rising, make filling by combining the ingredients. (I melted the butter in a sauce pan, and then added the other ingredients. I also added the raisins. I let this mixture get hot so the raisins would puff. I didn't add the nuts here, I sprinkled them on after I spread this mixture on the dough, I would suggest doing this before you start the dough so that it can cool down before spreading).
  • 13. When dough is through rising, or dough cycle is done, turn dough out onto lightly floured surface. Roll dough out into 10 x 18 inch rectangle. (I rolled out a bit bigger and ended up wit more rolls and still a Giant roll)
  • 14. Spread filling over dough, leaving a 1 inch border along the longer sides. Roll up dough, jelly-roll style. Cut into 1 1/2 inch slices (no thicker than that) and place slices into well greased baking pan.
  • 15. Spray top of rolls with cooking spray. If you wish, you can cover the rolls with plastic wrap and put into refrigerator to rise overnight, or place into warm spot to rise until doubled, about 30 minutes. (Well I put the filling on warm, and this dough was rising before I could get it rolled good and sliced, so remember to cool your feeling. Even with this slight error, the rolls were awesome).
  • 16. Bake rolls at 400 for 10 minutes. (You aren't finished yet, the rolls will go back into the over after you pour glaze on for another 10 minutes).
  • 17. GLAZE DIRECTIONS: While baking, stir together cinnamon, sugar, corn syrup and butter in saucepan over medium heat. Bring to a light boil, stirring constantly. Remove from heat and stir in cream and vanilla.
  • 18. After 10 minutes, remove rolls from oven and slowly drizzle glaze over rolls, allowing it to soak into the rolls.
  • 19. Return rolls to oven and bake for another 10-15 minutes, or until lightly browned.
  • 20. Remove from oven and invert onto foil lined baking sheet. Remove baking pan and invert rolls again onto serving platter.
  • 21. Let cool for about 20 minutes, then serve warm. (Not sure you have to wait 20 minutes, but you do need to let them cool, hot sugar will BURN your mouth).
  • 22. NOTE: This makes a bunch of rolls. I put in baking dishes and froze for later use. ENJOY and Happy Baking!

1 1/2 pounds sweet potatoes, peeled, quartered
2 envelopes fast-rising yeast
1/4 cup sugar
1 1/2 cups (3 sticks) unsalted butter, melted
1 cup honey
1/4 cup vegetable oil
2 eggs, beaten to blend
2 teaspoons salt
3 cups all purpose flour
4 cups (about) whole wheat flour
4 cups graham cracker crumbs

Steps:

  • Cook potatoes in large saucepan of simmering water until tender, about 20 minutes. Drain, reserving 1 cup cooking liquid. Place potatoes in medium bowl. Transfer reserved cooking liquid to large bowl; cool to 120°F. to 130°F.
  • Sprinkle yeast and sugar over reserved warm liquid; stir to dissolve. Let yeast mixture stand until foamy, about 5 minutes. Combine potatoes, 1/2 cup melted butter, 1/2 cup honey, oil, eggs and salt in processor. Blend until smooth. Add to yeast mixture. Mix in all purpose flour. Gradually stir in enough whole wheat flour 1/2 cup at a time to form soft, slightly sticky dough. Turn dough out onto lightly floured surface and knead until smooth and elastic, adding more whole wheat flour if sticky.
  • Lightly oil large bowl. Add dough, turning to coat entire surface. Cover bowl with kitchen towel. Let dough rise in warm draft-free area until doubled in volume, about 30 minutes.
  • Preheat oven to 400°F. Grease three 9-inch-diameter cake pans. Punch dough down. Turn dough out onto lightly floured surface and knead until smooth. Divide dough into thirds. Cut each third into 12 pieces. Roll each piece into ball. Mix remaining 1 cup melted butter and 1/2 cup honey until well blended. Dip each dough ball into honey mixture and then roll in graham cracker crumbs to coat. Place 12 balls in each prepared pan, arranging close together. Let stand 10 minutes. Bake until golden brown, about 25 minutes. (Rolls can be prepared ahead. Cool completely. Wrap tightly and refrigerate 1 day or freeze up to 1 month. Reheat rolls before serving.) Serve warm.

1 (15 ounce) can sweet potatoes, drained

  • Place water in a large bowl. Add yeast and stir to dissolve. Let stand for 5 minutes.

1/4 cup warm water
1 quarter-ounce envelope dry yeast (1 scant tablespoon)
1 cup milk
1/3 cup unsalted butter
1/2 cup sugar
1 1/2 tablespoons coarse salt
1 teaspoon ground cardamom
2 cups cooked sweet potatoes (about 2 medium)
1 teaspoon freshly squeezed lemon juice
1 large egg, lightly beaten
7 cups sifted all-purpose flour
Vegetable oil, for bowl
Melted butter, for brushing

Steps:

  • Place the warm water in a small bowl, and sprinkle with yeast. Let stand until yeast is dissolved and mixture is foamy, about 7 minutes.
  • In a small saucepan, heat milk over medium heat just until it begins to steam and bubble around the sides. Remove from heat; add the butter, and stir until melted and combined. Stir in sugar, salt, and cardamom. Let cool slightly.
  • Preheat oven to 400 degrees. Line a baking sheet with parchment paper; set aside. Combine sweet potatoes and lemon juice in the bowl of an electric mixer fitted with the paddle attachment; beat until smooth, 2 to 3 minutes. Beat in egg and milk and yeast mixtures until smooth.
  • Switch to the dough-hook attachment. Add flour, 1 cup at a time, beating until a stiff dough forms. Continue kneading dough on medium speed until smooth, about 8 minutes. The dough will still be slightly sticky.
  • Transfer to a large oiled bowl. Cover with a clean kitchen towel, and let stand in a warm place to rise until dough is doubled in bulk, about 1 hour.
  • Punch down dough, and knead again with your hands, just until smooth. Using a bench scraper or sharp knife, cut dough into 20 equal pieces, and shape into rolls.
  • Place rolls on prepared baking sheet, about 2 inches apart; cover with a kitchen towel, and let rise again in a warm place until doubled in bulk, about 40 minutes.
  • Using kitchen scissors or a sharp paring knife, snip an X in the top of each roll. Brush rolls with melted butter. Bake until tops of rolls are golden, about 20 minutes, rotating pan halfway through. Transfer to a wire rack; serve hot or at room temperature.

1 medium sweet potato (not peeled)
3/4 cup(s) milk
4 tablespoon(s) butter

FOR THE FILLING

Steps:

  • Scrub the sweet potato and remove any dark spots. Pierce it with a knife and cook in a microwave for 4 - 5 minutes. Test it wit ha fork and if it is still firm, cook it for another minute or so until the potato is tender. Once the potato is cool, chop it into chunks. Place it in a food processor with the milk, butter, and brown sugar and pulse until smooth. Transfer this to a microwave-safe bowl.
  • In a large mixing bowl add the flour, yeast, salt, and cornstarch. Stir to combine. Heat the sweet potato mixture until warm to the touch and add to the flour bowl. Stir to combine. Next knead the dough right in the bowl for 3 to 5 minutes. Add flour as necessary to keep the dough from sticking to your hands. Spray or rub the top of the dough with vegetable oil, cover with a towel or plastic wrap and set aside to rest for about 15 minutes.
  • Combine the brown sugar, butter, and cinnamon in a separate bow
  • Once the dough is ready, cover a working area with a sheet of saran wrap. Place the dough on top of the saran wrap and sprinkle with some flour. Some people like to place another piece of saran wrap on top instead of flour, I have not mastered that technique yet, I add flour to the top :). Use a rolling pin to roll the dough out to approximately 14×9 inches.
  • Spread the filling over the rolled dough using a spatula, covering all of it except for about a half-inch of the long edge furthest away from you. Take your time spreading it out evenly, it will be a thin layer. Sprinkle with walnuts if you are using them. Starting from the long end closest to you, roll the dough into a log. Cut the roll into 12 evenly sized pieces.
  • Spray a 9-inch round or square cake pan with nonstick cooking spray. Place rolls in the prepared pan. Cover with a kitchen towel or plastic wrap and set aside to rise in a warm area until doubled in size, about one hour.
  • When the rolls have doubled in size, preheat the oven to 375°. When oven reaches temperature, bake the rolls for about 20 to 25 minutes or until the rolls are golden in color.
  • While the rolls are baking, prepare the glaze. In a medium bowl, whisk together the powdered sugar, almond or peanut butter and vanilla. Once combined add the milk one tablespoon at a time until you reach a desired, spreadable consistency.
  • When the rolls are ready, remove them from the oven and allow them to cool for about 10 minutes before adding the glaze. Serve warm.

2 1/4 tsp active dry yeast or one package
3 1/2 c bread flour
1/2 c cooked mashed sweet potatoes

1 Tbsp orange or lemon zest (we used lemon)
FILLING
1/2 c butter, softened
1 c brown sugar
1/2 tsp cinnamon
3 Tbsp cooked, mashed sweet potatoes
ICING
4 oz cream cheese, softened
2 Tbsp butter, softened
1/2 tsp vanilla extract
2 Tbsp orange juice or fresh lemon juice
1 Tbsp grated orange peel or lemon
2 1/2 c powdered sugar

Steps:

  • 1. Combine the milk and the butter in a measuring cup and microwave for 45 seconds. If it gets to hot, cool slightly.
  • 2. In your bread machine add milk, sugar & yeast. Let sit for 1 minute. Add flour, sweet potatoes, cinnamon, salt and lemon peel. Set bread machine on the dough cycle.
  • 3. In a bowl when dough is almost ready make the filling, combing all ingredients together. Set aside.
  • 4. When dough is ready, remove from bread machine. Pull dough out and roll into a large rectangle shape. Spread filling almost to the edges. Roll up dough and cut into 8 large or 12 smaller slices. Place on parchment paper or sprayed cookie sheet with edges. Cover and let rise till double in size.
  • 5. Place in a 375F oven and bake for 25-30 minutes.
  • 6. Mix icing ingredients together and ice while still warm.

1/2 c warm water (105 - 115 degrees)
1 1/2 c cups warm milk (105 - 115 degrees)
2 c sweet potatoes (or for just regular potato rolls use mashed potatoes)
1/2 c cup butter, softened
1/2 c sugar
1/2-1 tsp salt
2 eggs, slightly beaten
4 1/2 c flour, divided (You may use all-purpose or self-rising flour. If you use self-rising flour, you should reduce the salt to ½ teaspoon.)
1/2 stick butter melted (used to grease your gloved covered hands while dropping the rolls in the pan)

Steps:

  • 1. Dissolve yeast in ½ cup warm water and let stand 5 minutes.
  • 2. In a large bowl, combine yeast mixture, 1 1/2 cups warm milk, 2 cups of sweet potatoes, 1/2 cup butter, 1/2 cup sugar, and 1/2 teaspoon salt. Mix well.
  • 3. Stir in 2 slightly beaten egg and 1/2 cup flour.
