The perfect healthy appetizer is these easy and tasty sweet potatoes with goat cheese that are finished with a drizzle of balsamic vinegar and honey.

2 medium sweet potatoes, cut into 1/4 inch slices
3 tbsp olive oil
1 tsp sea salt
1 tsp paprika
5 oz goat cheese
1/2 cup walnuts, roasted
1/3 cup dried cranberries
2 tbsp balsamic reduction
3 tbsp honey

Steps:

  • Preheat your oven to 450°F. In a small bowl, combine olive oil, sea salt and paprika. In large bowl toss the cut sweet potatoes with the paprika mixture, making sure everything is coated.
  • Line large baking sheet with parchment paper and place the sweet potatoes in even layer. Bake the sweet potatoes for 8 to 10 minutes on each side. (20 minutes total)
  • Transfer to a serving plate and top each with some goat cheese, walnuts and cranberries. Spoon a little honey and drizzle of balsamic glaze over each.

1 Whole Wheat Pie Crust
2 tablespoons extra virgin olive oil (divided)
1 large sweet potatoes ((or 2 small) about 1 pound)
3/4 teaspoon kosher salt (divided)
1 large yellow onion (thinly sliced)
4 large eggs
2/3 cup milk
1/4 teaspoon ground nutmeg
4 ounces goat cheese (crumbled)
1 tablespoon fresh rosemary (chopped)

Steps:

  • Prepare the pie dough as directed. Fit it into a deep, 9-inch pie dish and refrigerate until ready to bake.
  • Wash and peel the sweet potatoes, then cut them into 1/4-inch cubes. Toss the pieces with 1 1/2 tablespoons olive oil and 1/2 teaspoon kosher salt. Spread on a baking sheet in a single layer, then roast at 400 degrees F until soft, about 20 minutes. Set aside. Reduce oven temperature to 350 degrees.
  • In a large skillet, heat the remaining 1/2 tablespoon olive oil over medium. Add the sliced onions and cook, stirring occasionally, until soft and golden, about 20 minutes. Set aside.
  • Remove the dough from the refrigerator and place it on a well-floured surface. Working from the center, roll the dough into a 12-inch circle, then transfer it to an ungreased 9″ pie dish. With a fork, pierce rows of holes in the bottom and sides of the dough, about 1 inch apart. Place the pan in a 350 degree F oven and bake until the crust is lightly golden, 10 to 15 minutes. If you will be baking the quiche right away, increase the oven temperature to 375 degrees F.
  • Layer the sweet potatoes in the bottom of the par-baked crust, then sprinkle the caramelized onions, goat cheese, and rosemary over the top. (At this point, the crust and toppings may be covered and refrigerated together for up to 24 hours.) When ready to bake, in a large bowl, whisk together the eggs, milk, nutmeg, and remaining 1/4 teaspoon kosher salt. Pour the egg mixture over the quiche, then carefully place the quiche on a large baking sheet.
  • Bake at 375 degrees F for 45 to 55 minutes, until the quiche puffs up and just barely jiggles. Remove from the oven and let sit 10 minutes. Serve warm or at room temperature.

1 onion, halved and thinly sliced
2 sweet potatoes, peeled, halved lengthwise and thinly sliced into half-moons
6 tablespoons extra-virgin olive oil
Kosher salt and freshly ground pepper
8 large eggs
1 cup shredded manchego cheese (about 4 ounces)
2 tablespoons sherry vinegar
1 teaspoon dijon mustard
3 heads Belgian endive, halved lengthwise, cored and sliced crosswise 1 inch thick
3 tablespoons finely chopped Marcona almonds or slivered almonds
3 tablespoons finely chopped fresh chives

Steps:

  • Preheat the oven to 425˚. Combine the onion, sweet potatoes, 1/4 cup olive oil, 1/2 teaspoon salt and a few grinds of pepper in a medium ovenproof nonstick skillet. Cover and cook over medium-high heat, stirring occasionally, until the sweet potatoes are tender but not falling apart, 6 to 8 minutes.
  • Whisk the eggs in a large bowl and season with salt. Pour the potato mixture into the eggs and stir to combine. Stir in the cheese. Place the skillet over medium heat; add the egg mixture and spread out the potatoes with a rubber spatula. Cook until starting to set around the edges, 1 to 2 minutes. Transfer the skillet to the oven and bake until set, 12 to 15 minutes.
  • Meanwhile, whisk the vinegar and mustard in a large bowl; whisk in the remaining 2 tablespoons olive oil until smooth. Add the endive, almonds and 2 tablespoons chives; toss and season with salt and pepper.
  • Remove the egg tortilla to a cutting board, cut into wedges and divide among plates. Sprinkle with the remaining 1 tablespoon chives and serve with the endive salad.

3 bell peppers (mixed red and yellow)
1 fennel bulb, thinly sliced
3 garlic cloves, crushed

Steps:

  • Preheat the oven to 425°F Put the potato in a large roasting tin, season and drizzle over half the oil. Toss well.
  • Put the peppers, fennel, garlic and onion in a second tin. Season, drizzle over the remaining oil and toss well. Put both tins in the oven and roast for 30-35min or until the vegetables are tender.
  • Whisk together the eggs, cream and cheeses and season with plenty of coarsely ground black pepper.
  • Line the base and sides of a 8in round, 3in deep cake tin with non-stick baking parchment.
  • Reduce the oven temperature to 325°F Layer the roasted vegetables in the tin with the spinach, adding a little egg mix as you go. Pour in any remaining egg mix and cook the tortilla in the centre of the oven for about 1hr 15min or until the egg is set and the top golden.
  • Serve warm or cold.

Sweet potato adds a different flavour to this healthy Spanish-inspired tortilla. It's perfect to prepare ahead of a tapas night.

300g bag baby spinach leaves
8 tbsp light olive oil
2 large onions , thinly sliced
4 medium sweet potatoes (800g/ 1lb 12oz), peeled, cut into thin slices
2 garlic cloves , finely chopped
8 large eggs

Steps:

  • Put the spinach in a large colander and pour over a kettleful of boiling water. Drain well and, when cooled a little, squeeze dry, trying not to mush up the spinach too much.
  • Heat 3 tbsp oil in a 25cm non-stick pan with a lid, then sweat the onions for 15 mins until really soft but not coloured. Add another 3 tbsp oil and add the potatoes and garlic. Mix in with the onions, season well, cover and cook over a gentle heat for another 15 mins or so until the potatoes are very tender. Stir occasionally to stop them catching.
  • Whisk the eggs in a large bowl, tip in the cooked potato and onion, and mix together. Separate the spinach clumps, add to the mix and fold through, trying not to break up the potato too much.
  • Add 2 tbsp more oil to the pan and pour in the sweet potato and egg mix. Cover and cook over a low-medium heat for 20 mins until the base and sides are golden brown and the centre has mostly set. Run a palette knife around the sides to stop it from sticking. 5 To turn the tortilla over, put a plate face down onto the pan, then flip it over. Slide the tortilla back into the pan and cook for a further 5-10 mins until just set and golden all over. (Don't worry if it breaks up a little on the edges as you're turning it - it will look perfect when it's cooked through and set.) Continue cooking on the other side until just set and golden all over. Again use a palette knife to release the tortilla from the sides. Allow to rest for 5 mins, then tip onto a board before cutting into wedges.

1/2 quinoa
10 stalks asparagus
1 sweet potato
1 cup boiling water
oil
garlic powder
cooking spray
sea salt
1 -2 ounce goat cheese

Steps:

  • Preheat oven to 400.
  • Peel and cube sweet potato in to small cubes. Also snap ends off asparagus and then chop into larger peices.
  • Spray cookie sheet and spread sweet potato in a single layer. Drizzle olive oil and sprinkle with sea salt.
  • Roast sweet potato for about 15 minutes until fork tender.
  • While sweet potato is roasting. Rinse quinoa and toast in a pan for about 5 minutes.
  • Remove quinoa from pan and add 1tbsp oil and add asparagus.

  • Remove asparagus and sweet potatoes and set aside.
  • Add quinoa and boiling water to pan and let simmer covered for 12-15 minutes.

Sweet Potato and Goat Cheese Gratin With Black Olives image

2 pounds sweet potatoes or yams
3 ounces butter, unsalted
1 large shallot, finely chopped
3 ounces creamy fresh goat cheese
Kosher salt and black pepper to taste
1/4 cup Niçoise olives, pitted
2 tablespoons olive oil
4-5 basil leaves, finely chopped

Steps:

  • Preheat the oven to 350 degrees. If you are using an aluminum baking sheet, cover the bottom with parchment paper or Silpat, so that the potatoes won't discolor and turn brown while baking. If you are using a ceramic or stainless-steel baking sheet, you don't need to cover the bottom. Slice each sweet potato in half, lengthwise, and place face down on the tray. Bake until they are soft, about 35 to 45 minutes. Remove and allow to cool.
  • Increase the heat in the oven to 400 degrees, place the pitted olives on a small baking sheet, and bake until they become hard and brittle, about 20 to 25 minutes.
  • While the olives are baking, place a medium-size sauté pan with a heavy bottom over medium heat. Add the butter and brown it until it turns a hazelnut color and has a nutty fragrance, about 5 to 6 minutes. Add the chopped shallots and allow to cook for about 3 minutes until translucent. Be careful not to burn the butter.
  • When the sweet potatoes are cool, scoop out the insides and place in a bowl. Pour the butter and shallot mixture over the sweet potatoes, and mix. Season with salt and pepper, to taste, going lightly on the salt since the olives, which are added at the end, are salty. Place the sweet potato mix in a baking dish so that the sweet potatoes are one-inch thick. Spread the creamy goat cheese, in shallow dollops, over the sweet potatoes so that the sweet potatoes are clearly visible, at the edges and elsewhere. Bake at 400 degrees until the cheese and potatoes start to brown in some spots, about 15 minutes. The gratin won't brown like a traditional potato gratin; the colors of the sweet potatoes and the goat cheese will still be very present, but the goat cheese will turn beige, and the potatoes will begin to brown a bit.
  • Once the olives are cool, chop them finely, and mix with the olive oil and the chopped basil. Spoon the olive mixture over the sweet potatoes and serve.

3 sweet potatoes
2 tbsp olive oil
100g baby spinach
6 large eggs
100g feta , crumbled

Steps:

  • Pierce the potatoes a few times on each side. Microwave on high for 5-8 mins until soft, then set aside to cool a little.
  • Heat the oil in a 20cm ovenproof frying pan and wilt the spinach for a minute or two (you might have to do this in batches). Cut each potato in half lengthways and use a spoon to scoop out the flesh, keeping it in big chunks. Whisk the eggs.
  • Add the sweet potato to the pan and stir to combine with the spinach - don't break it up too much. Pour in the egg and swirl around so it fills any gaps in the pan. Scatter over the feta and cook for 4-5 mins over a low heat until the bottom and sides are set.
  • Place under the grill for 1-2 mins to cook the top - poke a knife into the centre to ensure it's cooked through. Cool before slicing into wedges. Will keep chilled for up to a day.
