2 carrots
1 red apple (Delicious, Fuji or Pink Lady)
1 inch fresh ginger, peeled 1-inch square (add more if you like it hot)

Steps:

  • Scrub carrots and apple, wash but do not peel.
  • Peel ginger.
  • Juice everything, stir gently and enjoy.

Another weapon in my war against high sodium store-bought juices. Drink it, or use it in veggie or tomato soup recipes.

4 lbs fresh tomatoes
1/2 cup celery
1/4 cup onion
2 ounces beets, chopped
1/2 apple, chopped
1/2 jalapeno pepper, sliced
2 ounces green peppers, chopped
3 ounces cucumbers, chopped
1 small zucchini
1 cup vegetable broth (or beef broth)
fresh parsley
2 tablespoons lemon juice
1 1/2 teaspoons sugar
1/2 teaspoon salt substitute
1/2 teaspoon mixed spice
4 teaspoons Worcestershire sauce
1/2 teaspoon Tabasco jalapeno sauce
2 whole allspice
2 cloves
1 teaspoon dry onion flakes
1 teaspoon mild chile, chopped
1 teaspoon finely chopped jalapeno pepper
1/2 teaspoon italian seasoning
1/4 teaspoon peppercorn
1/4 teaspoon celery seed
1/4 teaspoon marjoram leaves
1/4 teaspoon freshly ground dried garlic
1/4 teaspoon fennel seed
1/8 teaspoon dried bay leaf
1/8 teaspoon thyme leaves
1/8 teaspoon sage
1/8 teaspoon chopped basil

Steps:

  • Chop tomatoes, celery, and onion.
  • Place them in crock-pot.
  • Puree beets, apple, jalapeno, green pepper, cucumber, and zucchini.
  • Pour mixture into crock-pot.
  • Add broth and parsley.
  • Stir mixture gently, then cover and cook on low 8-10 hours.
  • Press mixture through a sieve.
  • Return the extracted juice to crock-pot, put spice bag in with the juice, and cook on high for half an hour.
  • If juice is too thin for your liking, thicken with 2 to 3 teaspoons cornstarch.
  • Add remaining ingredients and cook for 15 minutes.
  • Chill.
  • (Makes a terrific soup base, also).

2 medium sweet potatoes, about 260 grams
1 carrot
1 onion
1/2 cup water
1 tablespoon tahini or 1 tablespoon natural unsalted almond butter
1/4 teaspoon curry
1/4 teaspoon ground cumin

Steps:

  • COOK POTATOES:.
  • In a saucepan, cover potatoes with water and bring to a boil.
  • Simmer over medium heat until potatoes are soft when pierced with a knife (about 30 minutes). (During this period, prepare sauce.).
  • Remove from saucepan. When cool, remove skin.
  • PREPARE SAUCE:.
  • While potatoes are cooking, peel carrot and onion, and chop into small pieces.
  • Place chopped carrot and onion into another saucepan and cover with 1/2 cup of water.
  • Simmer carrots and onions until soft, about 8 minutes.
  • COMBINE IN FOOD PROCESSOR:.
  • Pureee sweet potato in a food processor with tahini or almond butter, curry powder, and ground cumin until just combined.
  • Add carrot-onion mixture and puree until smooth.

This is out of the Fall 2008 clean eating magazine...So I made this tonight...7/21/12...mine turned out very much like the photo in the magazine...it was a pale yellow like chicken broth...not sure what happen with the 1st reviewer...I used steamed broccoli and threw in a touch of sliced chili pepper for additional color and heat...I do think that a splash of lime would really bring all the flavors together...hope you enjoy it!

4 cups chicken broth, reduced sodium
1 bunch cilantro
2 inches ginger, fresh, peeled
2 garlic cloves
1 chili pepper, Thai
1 lb cooked shrimp, peeled and deveined
1 cup frozen asian-style vegetables (can use steamed fresh)

Steps:

  • Pour chicken broth into a microwave-safe bowl and microwave covered on high until broth is hot, approximately 3 minutes, depending on the power of your appliance.
  • Meanwhile, chop cilantro, including stems.
  • Reserve 1 cup of chopped leaves for garnish.
  • Thinly slice ginger.
  • Crush garlic cloves with the flat side of your knife.
  • Cut chili pepper in half: remove seeds if you want less heat in your soup.
  • When broth is hot, pour into a medium saucepan.
  • Add chopped cilantro stems and leaves (except reserved cup) ginger, garlic and chili pepper and cover.
  • Simmer over medium heat for 5 minutes.
  • Strain broth into the microwave-safe bowl, then return strained broth to saucepan.
  • Add shrimp and vegetables.
  • Cook for 3 minutes.
  • Garnish with cilantro leaves you've set aside and discard the rest.

  • Crumble sausage into large skillet.
  • Add potatoes, peppers and onion, and cook over low heat until sausage is browned and potatoes are fork-tender, stirring occasionally.
  • Drain off any drippings.
  • Whisk eggs and milk in small bowl until blended.
  • Add to sausage mixture; scramble until eggs are set but not dry.
  • Serve hot, and refrigerate leftovers.
