Grilled Hot and Sweet Sausage Tacos with Apricot-Jalapeno Glaze, Grilled Pepper and Red Onion Salsa image

Number Of Ingredients 19

1 grilled poblano pepper, peeled, seeded and finely diced
1 grilled red bell pepper, peeled, seeded and finely diced
1 yellow bell pepper, peeled, seeded and finely diced
1/2 red onion, cut into 1/4-inch thick rounds, grilled and finely diced
3 tablespoons red wine vinegar
2 tablespoons olive oil
1/4 cup chopped fresh cilantro leaves
1/4 cup honey
Pinch salt and freshly ground black pepper
1 cup apricot preserves
2 jalapenos, grilled
2 limes, juiced
3 Italian hot sausage links
3 Italian sweet sausage links
Canola oil
Salt and freshly ground black pepper
Flour tortillas
Corn tortillas
Grated Monterey Jack cheese

Steps:

  • Salsa: Combine all the ingredients in a bowl and let sit at room temperature for at least 30 minutes before serving.
  • Sausage tacos: Combine the preserves, jalapeno and lime juice in a food processor and process until smooth. Season with salt and pepper, to taste.
  • Heat a grill to high. Brush the links with oil and season with salt and pepper, to taste. Grill until lightly golden brown. Cut the sausage in half lengthwise and brush the apricot glaze mixture on both sides. Grill until dark golden brown, then remove to a cutting board and slice.
  • Grill the tortillas quickly on each side just to heat through, about 5 seconds per side. Fill with some of the hot and sweet sausage and top with some of the cheese and some of the salsa.

1 large orange
1 large ripe mango, peeled, pitted, cut into 1/4-inch pieces

2 tablespoons fresh lime juice

1 (4 ounce) jar pimientos, drained
2 tablespoons minced parsley
2 tablespoons minced green onions
1/2 teaspoon grated lime rind
1 1/2 tablespoons lime juice
1 1/2 tablespoons sugar
1/4 teaspoon crushed red pepper flakes
1/2 papayas (can sub cantelope, if you must) or 1 ripe mango, pared, seeded, chopped (can sub cantelope, if you must)
48 Nabisco Triscuits (or other crackers)

Steps:

  • Pare and halve cucumber, remove seeds, discard, chop cucumber finely.
  • Mix cucumber with pimentos, chopped as necessary to make a finely textured salsa, the parsley, green onion, lime rind, lime juice, sugar and red pepper flakes.
  • Stir in papaya or mango for a tropical taste, cantaloupe will do in a pinch.
  • Cover and chill until serving time.

SWEET & HOT PEACH SALSA

We had an overabundance of peaches this year so I tried a couple of different salsa recipes and came up with my own version....posting for safe keeping. My peaches were sweet and very ripe, so depending on your ingredients, taste this as you go and modify it for heat and sweetness. I started out adding 1/4 cup sugar at a time until it was what I liked. Same with jalapenos. Adjust to your personal taste. After figuring out that we liked salsa sweet and hot, we have four batches and worried how we are going to make it this winter!

6 cups peeled pitted and chopped peaches
1 1/2 cups chopped sweet onions
5 medium jalapenos, finely chopped
1/2 cup finely chopped cilantro
1/2 cup white vinegar
3/4 cup sugar
2 garlic cloves, minced
1 1/2 teaspoons cumin
1/2 teaspoon cayenne pepper
1/2 tablespoon salt

Steps:

  • In a large stainless steel or enamel pot combine all ingredients and bring to a boil.
  • Stir constantly to prevent scorching.
  • Boil gently for 5 minutes. This is where I add the sugar and taste for preference.
  • Ladle into clean hot jars leaving 1/4 inch head space.
  • Process in a water bath canner for 10 minutes at altitudes up to 1000 feet.

1 small cucumber, peeled and chopped (1 cup)
1 small carrot, shredded (1/3 cup)
1 small jalapeño chili, seeded and finely chopped
1 tablespoon lime juice
1 tablespoon white vinegar
1/2 teaspoon sugar
1/4 teaspoon salt

Steps:

  • Mix all ingredients in glass or plastic bowl. Cover and refrigerate at least 4 hours to blend flavors but no longer than 2 days. Stir salsa before serving.
