SWEET HOT PICKLES
This recipe is the result of playing around with several different recipes after trying and falling in love with a commercial brand of sweet hot pickles. If you don't want hot pickles, just omit the pepper and you will have something close to a real crispy bread and butter pickle. After opening a jar, remove the pepper as the pickles will keep getting hotter. You could experiment with a different kind of pepper however we tried jalapeno and the taste was not the same and was a little weird, to us anyway!

- Place sliced cucumbers in 1 gallon cold water and mix in 1 3/4 cups pickling lime. Refrigerate overnight. Next day, rinse 3-4 times until water is clear. Soak 3-4 hours in ice water then drain.
- Using 3-4 layers of cheesecloth, make a spice bag with the pickling spice and celery seed, tie bag well.
- Bring the vinegar, sugar, turmeric, spice bag and salt to a boil. Add cucumber slices and boil 30-40 minutes until cucumbers are mostly clear. Remove spice bag.
- Pack cucumbers and syrup into hot, sterilized jars. If using peppers, add 1 pepper to each jar. Adjust lids and bands. Put into enough boiling water to cover jars and boil for 15 minutes. Make sure jars seal.

HOT-SWEET CUCUMBER LIME PICKLES - 3 DAY
A sweet, crunchy pickle with a slightly tangy bite - but not really hot. These luscious pickles take 3 days from start to finish; however, total time spent on preparation and cooking is less than 1 hour per day - under 3 hours total. Their excellent flavor makes them well worth the effort. I have to hide them to make them last all year long! Labeled and wrapped with a pretty bow, they make great hostess gifts. NOTE: Pickling lime is a powdered food grade hydrated lime manufactured by Ball and other companies. It makes pickles crunchy/crispy.

Steps:
- DAY 1: Soak cucumbers in Soaking Solution of lime and water for 24 hours, making sure all cucumber slices are covered.
- Place a plate on top and weight it with a heavy, clean object, such as a gallon of water.
- DAY 2: Remove cucumbers, wash well until water runs clear.
- Soak in clear water for 3 hours.
- Drain cucumbers and wash again.
- Place cucumbers in the Pickling Solution and leave overnight.
- DAY 3: After soaking cucumbers in the Pickling solution overnight, pour the pickling solution (reserving the cucumbers) into a very large pot.
- Bring to a boil.
- Add cucumbers and bring to a boil again.
- Boil 35 minutes.
- Seal in hot, sterilized, pint or quart canning jars.
- Let jars cool and dry.
- Label and store.
- Chill before serving.
- HOUSE SPECIALTY APPETIZERS: Serve chilled, drained pickles slices in a small bowl.
- Surround with bowls of thinly sliced summer sausage, crackers, and thinly sliced cheeses (cheddar, swiss, havarti, etc).
- To assemble, place summer sausage, pickle slice, and cheese on top of each cracker.
- Enjoy!

HOT, SWEET, DILL PICKLES
This is so easy to do and it is great to have to put on a relish tray on a holiday or at a party. You do have to plan ahead a little though.

- 1. Drain the pickles, leaving the pickles in the original jar and saving the lid to reseal the jar with. Pour bottle of Tabasco sauce into jar with pickles. Dump the whole 5 lb. bag of white sugar over the Tabasco and pickles. Reseal the jar.
- 2. This takes several days to complete. Keep turning the jar upside down, sideways, just keep moving the jar every time you go past it. I store it on the counter top during this phase. Eventually the sugar will dissolve and it will seep into the pickles along with the Tabasco sauce.
- 3. Once the sugar has dissolved completely you can use the pickles. We cut them in chunks. Good to eat along with other cut vegetables, olives, cheese chunks, you get the idea. Enjoy!
SWEET & HOT DILL PICKLES

- Drain the pickles, discarding the juice. Slice the pickles into 1 to 2 inch chunks and return to pickle jar.
- Add the sugar and hot sauce to the pickles.
- Seal the jar and shake until sugar dissolves. Let stand at room temperature for 13 days, shaking the jar 1 to 2 times per day. On day 14 put the jar in refrigerator until ready to serve.
SWEET HOT CAJUN PICKLES
KEEP THESE IN THE FRIG AND USE FOR ANYTHING FROM SANDWICHES TO JUST TO EAT ALONE. THEY BECOME VERY CRISP AND MAKE GOOD GIFTS IN THE CLAMP DOWN LIDDED JARS. I HAVE PEOPLE ASK ME FOR THEM EVERY YEAR.

- 2. PUT WHOLE BAG OF SUGAR INTO THE BOWL WITH THE DRAINED PICKLE SLICES.

- Cut the pickles in long or round slices and drain in a colander with a towel over it overnight in sink.
- Mix sugar, minced garlic, and jalapeno slices in a large bowl.
- Use the gallon pickle jar and make alternating layers of sugar & pickles.
- You may have to shake the jar some and bounce it on a thick towel to make room for all of the pickles.
- Cover top with saran wrap or wax paper under the lid.
- Set on counter and turn jar every day for 6 days.
- Pack in sterile jars & refrigerate.
- The fridge makes them crunchy!
- Use glass jars for the better flavor.
- You can use the cut hamburger pickles too.

SWEET AND HOT CURRIED ZUCCHINI PICKLES
Wow, try this with your abundance of summer squash! Adapted from Quick Pickles: Easy Recipes for Bold Flavors, by John Willoughby, Chris Schlesinger, and Dan George(Chronicle Books, spring 2001).

- In a large nonreactive bowl, combine the zucchini, onions, chiles, and salt, and let them stand for 1 hour. Drain and rinse twice to remove the salt, then add the raisins and set aside.
- In a medium nonreactive saucepan, bring all the remaining ingredients, except the ginger, to a boil over high heat. Reduce the heat to low and simmer for 3 minutes, stirring to dissolve the sugar. Pour the hot liquid over the squash mixture; the squash should be totally covered. Add the ginger to the squash mixture, allow to cool to room temperature, then cover and refrigerate.
- These pickles will develop a wonderful flavor within a couple hours of being refrigerated and will keep well, covered and refrigerated, for 3 to 4 weeks. Enjoy!

Steps:
- Drain the whole Valistic Kosher Dill Pickles and slice them the desired thickness.
- Put half the sliced pickles into a gallown jar.
- Add Sugar.
- Add Tabassco Sauce.
- Add Garlic, crushed.
- Add the remaining half of the sliced pickles in the gallon jar.
- Cover with a lid.
- Turn jar twice (2 times) a day for 7 days.
