Basic Sweet Tea (Green Tea) image

This is a simple recipe, yes. However, I've had some British/Irish/Scottish friends in the past who've taught me what real tea tastes like, and I've found that I like this flavor to be present in both hot and cold forms of the beverage. Not to criticize, but many Americans don't understand the specifics of how to brew tea to its full potential and flavor. Some overbrew it, some underbrew it. I will be covering brewing both black and green teas for making sweet iced tea, in separate recipes.

4 (8 g) bags green tea leaves
40 ounces water
1 cup unbleached cane sugar
24 ounces ice cubes

Steps:

  • Put the ice aside in a container or pitcher that can withstand the hot tea without breaking and put it in the fridge while you're brewing.
  • Heat the 40 oz. of water in a pot, but not to a boil. It should be able to produce steam, but should not be boiling (boiling water overbrews green tea). Place the teabags in the hot water, and allow them to brew for 1 to 2 minutes while maintaining the current heat (hot but not boiling). Do not let the tea brew too long or it will end up too bitter.
  • Remove the tea bags from the pot, remove the pot from the heat and stir in the cup of cane sugar. It will dissolve almost instantly into the tea. Allow it to stand for a minute as your retrieve the container/pitcher.
  • Carefully pour the brewed tea into the container. It will melt most of the ice instantly, evening out the temperature so that the tea does not damage the container. Chill the tea further before serving.

GREEN TEA PANNA COTTA WITH SWEET ADZUKI SAUCE CHERRY BLOSSOM JAM AND TUILES



Green Tea Panna Cotta with Sweet Adzuki Sauce Cherry Blossom Jam and Tuiles image

1/2 cup strong green tea, cold - preferably Sakura (Cherry Blossom) Flavored Green Tea
1 tablespoon unflavored gelatin (1 envelope)
3/4 cup milk
3/4 cup heavy cream
1/2 cup sugar
2 teaspoons vanilla extract
8 pickled cherry blossoms
1 (16-ounce) can adzuki beans
1/4 cup sugar
2 tablespoons canola oil
4 (8 1/2-inch) square or 10 (1/2-inch) square spring roll wrappers (rice wrappers), cut into fourths with a pizza cutter
1/4 cup powdered sugar

Steps:

  • For the panna cotta, stir together the green tea and gelatin and set aside briefly. Combine milk and cream in a saucepan over medium heat and whisk in sugar. Heat to boiling and remove from heat. Add vanilla and gelatin/tea mixture and stir until sugar and gelatin are completely dissolved. Pour into the custard cups and refrigerate at least 4 hours until gelatin sets up completely.
  • Heat adzuki beans and sugar over medium heat stirring to dissolve sugar. Allow to cool and puree in a blender with canola oil. Strain into a bowl and set aside until needed.
  • Preheat oven to 375 degrees F. Line 1 baking sheet with a silicone baking mat and lay rice wrapper squares on mat. Top with another silicone baking mat and a second baking sheet as a weight. Bake for 15 minutes, then remove the baking sheet and top silicone mat and allow to further bake until brown, about 3 more minutes. Remove from mat with a thin spatula and allow to cool completely.
  • Sift powdered sugar over the tuiles. Spoon some sauce into the center of a dessert plate. Invert the custard from the mold into the center of the sauce. Slide 2 tuiles horizontally into the custard 1 on each side. Top custard with 1 cherry blossom. Serve with hot cherry blossom tea.

In Morocco, tea is served very sweet. Decrease the amount of sugar to your liking. Tea is served in glasses.

2 tablespoons green tea
5 cups boiling water
1 bunch of fresh mint
1/2-1 cup sugar, to taste

Steps:

  • Place tea in teapot.
  • Pour in boiling water.
  • Cover and steep 2 to 3 minutes.
  • Wash mint under running water and add to pot.
  • Steep for 3 to 5 minutes.
  • Add sugar as desired.
  • Serve in mint tea glasses or small cups.

Smoked Gouda Mac and Cheese with Green Tomato Chow Chow and Sweet Tea Chicken image

4 family-size tea bags, preferably Lipton
1/2 cup brown sugar
3 cloves garlic, smashed
3 sprigs thyme
1 Vidalia onion, thinly sliced
Kosher salt and freshly ground black pepper
3 cups ice cubes
Eight 8-ounce skin-on chicken breasts with drum attached
Vegetable oil, for frying
1 cup prepared sweet tea
12 cups roughly chopped green cabbage
3 cups roughly chopped onions
3 cups roughly chopped green tomatoes
2 cups roughly chopped roasted red peppers
3 cups sugar
2 cups white vinegar
1/4 cup pickling salt
1 tablespoon mustard seeds
1 teaspoon ground turmeric
Pinch of crushed red pepper
1 stick (8 tablespoons) unsalted butter
1/2 cup all-purpose flour
4 cups heavy cream
4 cups whole milk
2 teaspoons liquid smoke
1 teaspoon ground white pepper
18 ounces smoked Gouda, grated
2 cups grated Parmesan
2 teaspoons chopped fresh thyme
Kosher salt and freshly ground black pepper
24 ounces cavatappi pasta
Panko bread crumbs, for topping

Steps:

  • For the chicken: Bring 16 cups of water to a boil in a large pot and drop in the tea bags. Boil 2 to 3 minutes. Add the brown sugar, garlic, thyme, onion, 1/4 cup salt and several grinds of pepper and return to a boil; cook for 10 minutes. Add the ice cubes to the marinade and refrigerate it until cold, about 1 hour. Add the chicken to the brine and marinate at least 12 hours.
  • Heat enough oil to coat the bottom of a large nonstick skillet over medium-high heat for about 2 minutes. Working in batches, remove the chicken from the brine, pat it dry, and add it, skin-side down, to the pan; reduce the heat to medium. Cook until the skin is golden brown and crispy, about 3 minutes. Reduce the heat to low; flip the chicken and continue cooking until an instant-read thermometer inserted into the thickest part of the breast reads 165 degrees F.
  • Simmer the sweet tea over medium heat until it is reduced by half. It should be thick enough to coat the back of a spoon. Set aside.
  • For the chow chow: Working in batches, pulse the cabbage, onions, green tomatoes and roasted red peppers in a food processor until minced. Combine the minced vegetables with the sugar, vinegar, pickling salt, mustard seeds, turmeric and crushed red pepper in a large pot. Bring to a simmer and cook until the flavors are blended, about 10 minutes. Cool for 30 minutes at room temperature, then refrigerate for at least 5 hours.
  • For the mac and cheese: Preheat the oven to 350 degrees F.
  • Melt the butter in a large saucepan over medium heat. Add the flour and stir to incorporate, creating a blond (very light brown) roux. Add the heavy cream, milk, liquid smoke and white pepper. Cook over low heat, stirring occasionally, until the mixture is thickened and an instant-read thermometer inserted into the sauce reads 145 degrees F., 15 to 20 minutes. Slowly stir in the Gouda and Parmesan until melted. Stir in the thyme and season with salt and black pepper.
  • Meanwhile, bring a large pot of salted water to a boil. Cook the pasta for 7 minutes and drain. Immediately combine the pasta with 2 cups of the sauce in a large baking dish. (Reserve any remaining sauce for another use.) Top the pasta with some panko and bake until the bread crumbs turn golden, about 30 minutes.
  • Divide the chicken among 8 plates, placing it skin-side up. Top the chicken with some chow chow and drizzle with the sweet tea reduction. Serve with a scoop of mac and cheese.

1 fluid ounce melon liqueur (such as Midori®)
1 ½ fluid ounces sweet and sour mix (such as Mr and Mrs T's®)
2 fluid ounces apple juice

  • Fill a large glass with ice. Pour in the rum, blue curacao, melon liqueur, sweet and sour mix, and apple juice. Stir to combine.
