Yield 2-1/2 cups salsa (80 chips).

Number Of Ingredients 11

1 cup finely chopped fresh strawberries
1 medium navel orange, peeled and finely chopped
3 medium kiwifruit, peeled and finely chopped
1 can (8 ounces) unsweetened crushed pineapple, drained
1 tablespoon lemon juice
1-1/2 teaspoons sugar
CINNAMON CHIPS:
10 flour tortillas (8 inches)
1/4 cup butter, melted
1/3 cup sugar
1 teaspoon ground cinnamon

Steps:

  • In a small bowl, combine the first 6 ingredients. Cover and refrigerate until serving., For chips, brush tortillas with butter; cut each into 8 wedges. Combine sugar and cinnamon; sprinkle over wedges. Place on ungreased baking sheets. , Bake at 350° for 5-10 minutes or just until crisp. Serve with fruit salsa.

Steps:

  • Chop fruit into equally bite-sized pieces. See blog post for lots of ideas, some of our favorite are: Strawberries, orange segments, pineapple, blueberries, mango, and kiwi. Sweeten with sweetener of choice. You can use granulated or powdered sugar, honey, or a low-calorie sweetener of choice. Salsa is great just like this, or feel free to try some of the flavor enhancers below!
  • Citrus Juice: Try the juice from a mandarin orange or a squeeze of lemon or lime.
  • Flavor if desired. Try a little grated ginger, or fresh chopped mint leaves, or a sprinkle of cinnamon, or top with shredded coconut.

2 tart green apples
1 kiwi fruit
1/2 cup red seedless grapes
1 cup fresh strawberries
1 small orange
2 tablespoons brown sugar
1 teaspoon Spice Islands® Ground Saigon Cinnamon
1/8 teaspoon Spice Islands® Ground Nutmeg
2 tablespoons apple jelly
1/4 cup sugar
2 teaspoons Spice Islands® Ground Saigon Cinnamon
10 (8-inch) flour tortillas
1 tablespoon melted butter OR margarine

Steps:

  • To prepare salsa: Finely chop apples, kiwi, grapes and strawberries and place in medium bowl. Grate orange peel to measure 1 teaspoon. Squeeze juice from orange. Add juice and grated peel to chopped fruit. Stir together brown sugar, cinnamon, nutmeg and apple jelly in small bowl. Add to fruit; toss gently to mix. Refrigerate 1 hour to mix flavors. To make cinnamon chips: Preheat oven to 400°F. Mix sugar and cinnamon in small bowl. Brush one side of tortillas with melted butter. Sprinkle cinnamon sugar mixture on tortillas. Cut each tortilla into 8 wedges (as you would a pie) and place on ungreased cookie sheet. Bake for 5 minutes, or until golden. Cool. Recipe Tip: substitute 1-¼ teaspoons Jamaican jerk seasoning for cinnamon and nutmeg in the salsa.

10 cups tomatoes, peeled,diced and drained
2 yellow sweet peppers, coarsely chopped
2 green sweet peppers, coarsely chopped
1 sweet red pepper, coarsely chopped
1 orange sweet bell pepper, coarsely chopped
2 large Spanish onions, coarsely chopped
5 hot peppers, seeded and finely chopped (Add more if you wish it hotter =0 !!)
2 tablespoons minced garlic
1/4 cup lemon juice
2 tablespoons cider vinegar
2 tablespoons canning salt
1/2 cup sugar
1/2 teaspoon cayenne pepper
1 teaspoon black pepper
1 tablespoon onion powder
2 tablespoons cumin
2 cups tomato sauce
2 (12 ounce) cans tomato paste

Steps:

  • Place ingredients in a large heavy bottomed pot and cook for 10 minutes until mixture is very hot.
  • Pack in hot pint jars.
  • Place in water bath for 10 minutes.
