1 (16 ounce) bag dried black beans
1 (16 ounce) bag brown rice
1 red onion (chopped)
3 jalapeno peppers (seeded and chopped)
7 cups water
1/4 cup lime juice (or lemon)
1 cup cilantro (chopped)
2 (8 ounce) cans diced tomatoes with green chilies
1 (16 ounce) bag frozen corn
1 (16 ounce) bag four-cheese Mexican blend cheese

Steps:

  • Rinse and sort beans. Mix beans, rice, onion, jalapenos, and water into crock-pot. Cook on low for 8.5 hours.
  • Add lime juice, cilantro, tomatoes, corn, and cheese. At this time also add 1/3 cup of desired cajun seasoning (Tony's, Emeril's, Luzianne, etc.). I use Lusianne, because it has less sodium. Continue cooking for another 30 minutes.
  • Serve warm by itself or, wrapped in a flour tortilla like a burrito, or serve with tortilla chips like a dip.
  • Add a dab of sour cream and/or guacamole for color, texture, and taste.

When I had my liver transplant in Denver, CO there was a Gunther Toody's Diner across the street from the hotel where I stayed. There was a Black Bean Soup on the menu that I just loved. After coming home to Oklahoma, I have searched, in vain, for a Black Bean Soup that came even close to what the diner served. I finally searched recipes and have come up with my version that best copies Gunther Toody's.

1 large onion, chopped finely
2 celery ribs, diced
2 carrots, diced
1 -2 jalapeno pepper, diced
1 red bell pepper, diced
3 -4 garlic cloves, minced
2 tablespoons olive oil
3 (15 ounce) cans black beans, drained
2 (14 1/2 ounce) cans diced tomatoes with green chilies, like Hunts
1 (11 ounce) can mexicorn, drained
1 cup instant rice
1 teaspoon Mexican oregano
1 teaspoon cayenne pepper
1 teaspoon cumin
2 cups water
2 chicken bouillon cubes
32 ounces low sodium chicken broth
1 teaspoon salt
1/2 teaspoon pepper
1 tablespoon fresh cilantro

Steps:

  • In Dutch Kettle, saute onion, celery, carrot, garlic, red pepper and jalepeno pepper in olive oil until soft.
  • Add beans, tomatoes, corn, water, boullion broth and spices. Simmer for 30-40 minutes.
  • Add instant rice to mixture. Mix well. Continue cooking 5 minutes or until rice is tender.
  • Chop fresh cilantro and stir into mixture before serving. Could top with a dollop of sour cream on top and a squeeze of lime.
  • Use Hunts diced tomatoes with green chilies or a similar brand. Rotel comes in a 10.5 oz can and is much spicer than Hunts. So if you use Rotel, pair it with a can of regular diced tomatoes.

1 tablespoon olive oil
1 small onion, finely chopped
1/2 red bell pepper, seeded and chopped
2 garlic cloves, minced
1 jalapeno, seeded and minced (any hot chile pepper okay)
1 teaspoon fresh ginger, peeled and minced
1/2 teaspoon ground cumin
1/2 teaspoon ground allspice
1/2 teaspoon dried oregano
2 (15 1/2 ounce) cans black beans, drained and rinsed
1 cup water
1/2 teaspoon light brown sugar
1/2 teaspoon salt
1/4 teaspoon black pepper, freshly ground
3 cups cooked long-grain brown rice (white rice okay)
2 mangoes, ripe, medium sized, peeled and flesh diced

Steps:

  • Heat oil in large skillet over medium heat.
  • Add onion, bell pepper, garlic and jalapeno, cover, and cook 5 minutes until softened.
  • Add in seasonings, mix well and cook for 1 minute.
  • Transfer mixture into a 3 1/2 to 4 quart slow cooker.
  • Add bean, water, brown sugar, salt and pepper.
  • Stir well.
  • Cover and cook on low for 6 to 8 hours.
  • Add the cooked rice and the mangoes.
  • Allow to cook another 10 minutes.
  • Serve and enjoy.

I served it over well-toasted garlic bread with a salad and sliced cantaloupe on the side. Healthy, low carb, simple and impressive.

8 chicken tenderloins
15 ounces white beans, drained and rinsed
4 cups baby spinach leaves, well-rinsed
15 ounces fat free chicken broth
1 cup red onion, sliced
2 tablespoons garlic, minced
1/2 cup parmesan cheese
1 teaspoon dried rosemary
1 tablespoon dried Italian seasoning

Steps:

  • Slice the onion.
  • Mince the garlic.
  • Drain and rinse the beans.
  • Clean the spinach.
  • Layer the onion, garlic, beans and spinach in the bottom of the crock pot.
  • Pour the chicken broth over the ingredients. Make sure the spinach is submerged in the chicken broth.
  • Place the chicken on top of the ingredients.
  • Season well with salt, pepper, rosemary and italian seasoning.
  • Sprinkle the parmesan cheese over all ingredients.
  • Cook on low for 6 to 8 hours.
  • Serve over toasted garlic bread.

7 garlic cloves, minced
1 tablespoon minced fresh ginger
1 medium onion, chopped
1 red bell pepper, diced
1 carrot, peeled and shredded
1/2 cup flaked coconut (to taste)
1/2 cup golden raisin
2 cups converted white rice
1 lb peeled and deveined cooked jumbo shrimp, thawed if frozen
2 ounces snow peas, cut into thin strips

Steps:

  • Mix chicken broth, water, coriander, cumin, salt, cayenne, lime zest, lime juice, garlic and ginger in crock pot.
  • Stir in onion, bell pepper, carrot, coconut, raisins and rice.
  • Cover and cook on low setting 3 1/2 hours, or until rice is just tender.
  • Stir in the shrimp and snow peas.
  • Cover and cook another 30 minutes.
