1/4 head white cabbage, finely sliced
1/4 head red cabbage, finely sliced
2 cups sauerkraut
1 tablespoon mustard
2 cups salad dressing
1/4 cup sugar
1 tablespoon celery seed
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Simmer sauerkraut, mustard, salad dressing, sugar, celery seeds, salt and pepper about 10 minutes, stirring frequently.
  • Pour over white and red cabbage slices and mix.
  • Season with additional salt if necessary.
  • Serve hot.

1 lb cabbage (1 small cabbage, finely shredded)
2 bell peppers (red, yellow or green or a combination, julienned)
1 carrot, shredded
1 onion (Oso Sweet quartered, sliced thinly)
1 lemon, juice and zest of
1/4 cup apple cider vinegar
1 teaspoon sugar
1 teaspoon salt
1/2 teaspoon fresh ground black pepper
1/2 cup olive oil

Steps:

  • Mix vegetables in a large bowl.
  • Thoroughly combine lemon zest, lemon juice, vinegar, sugar, salt, and pepper; whisk in oil.
  • Fold into vegetables.
  • Season to taste with salt.
  • Store up to 12 hours in the refrigerator to marry flavors.
  • Return to room temperature before serving.

6 cups shredded cabbage (about 1/2 head)
1 cup shredded carrot (about 1 medium)
1 cup chopped green bell pepper (about 1 medium)
1/2 cup chopped red onion
1/2 cup sugar
1/2 cup white wine vinegar
2 tablespoons olive oil
1 teaspoon dry mustard
1/2 teaspoon celery seed
1/2 teaspoon salt

Steps:

  • Combine first 4 ingredients in a large bowl; toss well.
  • Combine sugar and remaining ingredients in a small bowl, stirring with a whisk.
  • Pour vinegar mixture over cabbage mixture, tossing gently to combine. Cover; chill 1 hour.

6 slices bacon
2 tablespoons chopped onions
1/2 cup brown sugar
1 teaspoon cornstarch
1 teaspoon salt
1/2 cup vinegar (red wine vinegar is good)
1/4 cup water
6 cups finely shredded red cabbage

Steps:

  • Cook bacon until crips; crumble.
  • Measure 3 teaspoons of bacon fat into skillet.
  • Stir in remaining ingredients,leaving out cabbage.
  • Cook mixture over medium heat,stirring constantly,until mixture is smooth and clear.
  • Cool to room temperature.
  • Put cabbage into salad bowl.
  • Pour cooled dressing over it.
  • Add crumbled bacon.
  • Chill.

2 cups water
2 cups sugar
1 1/2 cups walnut halves
1/2 teaspoon salt
1/2 teaspoon cayenne pepper
1/2 teaspoon smoked paprika
1 head napa cabbage, chopped
1 head romaine, chopped
1 1/2 cups bean sprouts
2 oranges, cut into supremes
1/2 cup dried cherries
1/2 cup Gorgonzola cheese, crumbled
Lemon-Thyme Vinaigrette, recipe follows
1 lemon, juiced
2 tablespoons reserved walnut simple syrup
1/4 teaspoon dry mustard
2 tablespoons freshly chopped thyme leaves
1/4 cup olive oil
Pinch salt
Pinch cracked black pepper

Steps:

  • Preheat the oven to 250 degrees F.
  • In a medium-sized saucepan, bring the water, sugar and walnuts to a boil. Boil for 1 minute, then drain the liquid from the walnuts. Reserve 2 tablespoons of the walnut syrup. Transfer the walnuts to a sheet pan lined with parchment paper and sprayed with cooking spray. Season the walnuts with salt, cayenne and smoked paprika. Bake for 15 minutes until toasted and dry. Remove from the oven and set aside to cool.
  • In a large serving bowl, add the cabbage, romaine, bean sprouts, oranges, cherries and cheese. Top with the walnuts and toss with the desired amount of Lemon-Thyme Vinaigrette.
  • In a medium bowl add the lemon juice, simple syrup, mustard and thyme. Whisk in the olive oil and season with salt and pepper.
