Baked Sriracha Buffalo Wings with Sweet Chili Mayo Dipping Sauce image

Make hot wings with sriracha and serve with a chili-lime dip.

3/4 cup Asian sweet chili sauce
1/2 cup mayonnaise
Juice of 1 lime
Kosher salt
Vegetable oil, for the oiling the baking sheets
4 pounds split chicken wings, wingtips removed
Kosher salt and freshly ground black pepper
2 sticks (1 cup) unsalted butter, melted
3/4 cup sriracha
Celery sticks, for serving, optional

Steps:

  • Whisk the chili sauce, mayonnaise, lime juice and 1/2 teaspoon salt together in a small bowl. Cover and refrigerate until ready to serve.
  • Preheat the oven to 425 degrees. Generously oil 2 rimmed baking sheets.
  • Toss the wings with 2 teaspoons salt and a few grinds of pepper in a large bowl and divide them between the 2 prepared baking sheets, spreading them out into a single layer. Bake until very crispy, about 55 minutes.
  • Whisk the melted butter and sriracha together in a large bowl. Transfer the baked wings to the bowl and toss to coat. Serve with the dipping sauce and celery sticks if using.

This is a recipe that I have improvised a little bit over the years. Everytime I bring these wings to potlucks or any type of party, I get lots of requests for my recipe.

18-20 chicken wings
worcestershire sauce
onion powder
garlic powder
12 oz bottle hot sauce
1/2 c brown sugar
1/2 c margarine
1 Tbsp sugar

Steps:

  • 1. Preheat oven to 400 degrees.
  • 2. Cut each wing into 3 parts, discarding the tips.
  • 3. Coat 13x9 pan with cooking spray. Place wing pieces in single layer in pan. Splash wings liberally with worcestershire. Sprinkle wings lightly with onion powder and garlic powder making sure to season each piece. Cover pan with foil. Poke holes in foil for ventilation. Place pan in oven and cook until done-about 45-50 minutes.
  • 4. While chicken is cooking, in medium saucepan, melt butter/margarine on medium heat. Once melted, add hot sauce and both sugars. Stir to mix. Remove from heat.
  • 5. Test wings for doneness-using fork, chicken should come away from the bone easily. When done, remove from oven. Remove foil and pour hot sauce mixture over the wings, making sure to cover each one in sauce. Turn oven up to 400 and place wings back in oven uncovered. Watch closely and cook until start to brown. Remove and enjoy with blue cheese or ranch sauce.

The secret to creating great fried chicken at home is par-boiling the meat before frying. Believe it or not, this actually produces a incredibly crunchy piece of chicken while keeping the meat tender and juicy. Using wings gives you a ton of surface area for more crunch and more of the special sauce. The sauce in this recipe is a twist on the traditional Buffalo wing sauce with the addition of molasses and Worcestershire sauce for a slightly sweet and 'umami' flavor. Frying with lard adds flavor and extra crunch.

1 gallon water
salt
2 tablespoons crushed red pepper flakes
2 tablespoons chicken bouillon granules
2 pounds chicken wings, cut apart at joints, wing tips discarded
¾ cup all-purpose flour
½ cup masa harina flour (Mexican corn masa mix)
1 tablespoon paprika
1 tablespoon garlic powder
3 tablespoons ground cayenne pepper
salt and ground black pepper to taste
2 cups canola oil for frying
2 cups lard for frying
½ cup butter
½ cup hot pepper sauce
⅓ cup molasses
1 tablespoon Worcestershire sauce
1 teaspoon garlic powder

Steps:

  • Pour the water into a large stock pot and stir in the salt, red pepper flakes, and chicken bouillon granules. Bring the mixture to a boil.
  • Cook the chicken wings to the boiling water until no longer pink inside and the juices run clear, about 10 minutes.
  • Drain the wings and set aside to cool until easy to handle, about 15 minutes.
  • Whisk the flour, masa harina, paprika, 1 tablespoon of garlic powder, cayenne pepper, salt, and black pepper in a large bowl. Press chicken wings into the seasoned flour until lightly coated; tap off excess flour.
  • Heat canola oil and lard in a deep-fryer or large saucepan to 350 degrees F (175 degrees C).
  • Working in batches of about 6 wings at a time, deep-fry the wings until deep golden brown, 10 to 15 minutes. Set the wings aside to drain on paper towels.
  • Melt the butter in a large saucepan over low heat, and whisk in the hot pepper sauce, molasses, Worcestershire sauce, and 1 teaspoon of garlic powder. Remove sauce from the heat.
  • To serve, stir the wings into the sauce, working in batches, until coated. Transfer wings to a serving dish to serve.

3 lbs chicken wings (12 to 14)
6 cups vegetable oil
1/2 cup unsalted butter
3/4 cup hot sauce
1 1/2 tablespoons apple cider vinegar or 1 1/2 tablespoons red wine vinegar
2 tablespoons brown sugar
1/2 cup honey
4 tablespoons cayenne pepper

Steps:

  • Season chicken over night with hot sauce and Cayenne pepper.
  • In a large (5- to 6-quart) deep heavy kettle heat 6 cups oil until a deep-fat thermometer registers 375°F Carefully lower wings into oil and fry, until cooked through, golden, and crisp, 5 to 8 minutes. With a slotted spoon transfer wings to paper towels to drain. Pat dry and fry remaining wings in same manner, returning oil to 380°F between batches.
  • If grilling, oil grill and cook 7 ot 10 minutes or until golden and crisp.
  • In a large skillet melt butter over heat and stir in hot sauce, vinegar, Honey, brown sugar. Cook until it starts to boil. Add fried wings and toss to coat.
