1-ounce unsalted butter

1 (15-ounce) can creamed style sweet corn
1 cup heavy cream
2 eggs
1 teaspoon baking powder
1/2 cup yellow cornmeal, whole grain, stone ground
1/2 cup shredded Parmesan cheese
1 teaspoon kosher salt
Ground black pepper to taste
2 cups French bread, cubed

Steps:

  • Heat oven to 350 degrees. Sweat onions with butter and herbs in an oven safe skillet until translucent.
  • Combine corn, cream, eggs, baking powder, cornmeal, Parmesan, salt, and pepper in a large mixing bowl. Add cubed bread and fold to combine. Pour batter into skillet, right on top of the onion mixture. Bake 50 minutes, or until set. Cool slightly before serving.

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Butter a 1 quart casserole dish.
  • In a large bowl, whisk together the sour cream, milk, sugar, eggs, baking powder, ginger and vanilla. Stir in the pears, pineapple and sweet potatoes just to coat, then add the bread cubes and mix until evenly distributed. Pour into the prepared baking dish. Set aside.
  • In a separate bowl, stir together the brown sugar, flour and orange zest. Briefly stir in the butter and pecans. Sprinkle over the top of the bread pudding.
  • Bake for 30 minutes in the preheated oven, until evenly puffed up and browned.

1 1/3 cups milk
1 cup chopped pecans
1/2 cup raisins
2 1/2 cups milk

1/4 cup butter or margarine, melted
1 tablespoon vanilla
1/2 teaspoon ground cinnamon

2 teaspoons cornstarch
4 egg yolks, beaten

Steps:

  • Heat oven to 450°F. In large bowl, stir Bisquick mix and 1 1/3 cups milk until soft dough forms. Drop dough by spoonfuls onto ungreased cookie sheet. Bake 8 to 10 minutes or until golden. Break up biscuits.
  • Butter bottom and sides of rectangular pan, 13x9x2 inches. Spread biscuit pieces in pan. Sprinkle with pecans and raisins. In large bowl, beat all remaining Pudding ingredients with electric mixer on low speed until blended. Pour over biscuits in pan. Cover and refrigerate at least 2 hours but no longer than 8 hours.

1 pound butternut squash, peeled, and cut into 3/4-inch pieces
4 parsnips, peeled, and cut into 3/4-inch pieces

1 (1 pound) loaf brioche, challah, or sourdough bread, cut or torn into 1-inch pieces
3 cups heavy cream
8 eggs, beaten
3/4 cup brandy

1 tablespoon fresh thyme leaves, chopped

Steps:

  • Set an oven rack in the center of the oven. Preheat the oven to 400 degrees F. Grease a 9 by 13-inch glass baking dish. Set aside.
  • In a large skillet, melt the butter over medium-high heat. Add the butternut squash and parsnips. Season, to taste, with salt and pepper. Cook, stirring occasionally, for 5 minutes until slightly softened. Set aside to cool.
  • Add the bread to a large bowl.
  • In another bowl mix together the heavy cream, eggs, brandy, vegetable oil, brown sugar, cinnamon and thyme. Pour the cream mixture over the bread and toss gently to coat. Steps:

  • Place the sweet potatoes in a large pot, and fill with enough water to cover. Bring to a boil over medium-high heat. Cover, and cook until potatoes can be pierced with a fork, about 20 minutes. Drain, and set aside to cool.
  • Preheat your oven's broiler.
  • Lightly grease 9x13 inch baking dish. Slice corn muffins into 1/2 inch rounds, trimming away tops and bottoms. Reserve trimmed pieces. Arrange corn muffin slices over the bottom of prepared baking dish. Place muffins under preheated broiler until toasted, about 2 minutes.

This is a recipe for a Thanksgiving side dish that I got from the Food Network in a show that featured Giada DeLaurentis preparing her family's traditional Thanksgiving dishes. Although she often uses a different bread each year (for flavor variety), this is her family's favorite version, using challah bread. If you can't find challah bread, Giada recommends using a loaf of brioche or sourdough bread.

  • 1. Pierce potatoes with a fork; place on a baking sheet.
  • 2. Bake at 400 for 1 hour and 15 minutes or until tender. Cool slightly, peel, and cut into quarters.
  • 3. Process potatoes in food processor with 1/2 cup half-and-half until smooth, stopping to scrape down sides. Whisk together potato puree, remaining 2 cups half-and-half, lightly beaten eggs, and the next 4 ingredients in a large mixing bowl until smooth.
  • 4. Arrange bread cubes evenly in a lightly greased 13- x 9-inch baking dish. Pour sweet potato mixture evenly over bread cubes. Top evenly with butter.
  • 5. Bake at 350 for 30-35 minutes or until set. Serve with Bourbon Sauce.
  • Bourbon Sauce:
  • Melt butter in a small saucepan over medium heat; whisk in flour and cook, whisking constantly 3 minutes. Stir in sugar, whipping cream, and ground nutmeg. Bring to boil over med heat, stirring constantly. Reduce heat, and simmer 5 minutes or until slight thickened. Remove from heat; stir in vanilla and bourbon. Serve warm over Sweet Potato Bread Pudding.

The bread pudding was made using Portuguese Sweet Bread and was absolutely AMAZING. This is my attempt to recreate this fabulous dessert for my self at home!

3 1/2 cups whole milk
1 cup sugar
1 vanilla bean, split lengthwise
7 large eggs
5 large egg yolks
2 1/2 cups heavy cream
6 cups portuguese sweet bread, cut into 1 inch cubes
3/4 cup semi-sweet chocolate chips

Steps:

  • Preheat oven to 350, and butter a 13x9 baking dish.
  • Whisk milk, heavy cream and sugar in a saucepan over medium heat.
  • Meanwhile scrape the seeds from the vanilla bean into milk mixture and add the pods.
  • Heat milk/cream mixture to just steaming, but not boiling!
  • Whisk eggs and yolks in a large bowl, and gradually add 2 cups of hot milk mixture to the eggs to temper.
  • Pour tempered egg mixture into the saucepan with the hot milk.
  • Strain mixture to remove any lumps and the vanilla pods.
  • Spread bread cubes in prepared dish and sprinkle with the chocolate chips.
  • Slowly pour custard over bread, being sure to saturate all of the bread. (If you can, it's nice to let it sit and soak evenly for 1/2 or so).
  • Bake in the center of the oven for about 1 hour or until a small knife inserted in the center of the pudding comes out clean.

10 slices bread, Diced large
1/4 cup raisins
2 eggs
1 cup heavy whipping cream
1/2 cup brown sugar
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 cup brown sugar
1/4 cup butter
1/4 cup heavy whipping cream
1/2 teaspoon vanilla extract

Steps:

  • DIce enough bread slices to fill two 16 to 20 ounce baking dish. Grease your baking dishes and add the diced bread and raisins.
  • In a mixing bowl mix together eggs, 1 cup of heavy whipping cream, 1/2 cup brown sugar, cinnamon, and nutmeg. Pour half of mixture over each bread bowl.
  • Bake, uncovered, at 350 degrees for 30 minutes. Check the center with a toothpick. If toothpick comes out clean remove from oven. If not, cover bowls and bake for another 10 to 15 minutes.
  • Sauce-- Mix 1/2 Cup brown sugar, 1/4 cup butter, and 1/4 cup whipping cream. Heat on low until melted and bubbley. Add Vanilla and stir.
  • Pour caramel sauce over each bowl, approximately 1/3 of the caramel per bowl. The other third is for later! Enjoy!

1/2 cup raisins
1/2 cup butter
2 cups milk
1 cup sugar
5 eggs, beaten
1 (21 ounce) can apple pie filling
cinnamon
1 teaspoon vanilla (optional)

Steps:

  • Grease a 9x12 pan.
  • Scald milk. Add sugar and butter. Mix until butter is melted. Cool.
  • Break sweet bread into pieces (not too small). Spread apple pie filling on top of the sweet bread. Sprinkle raisins over the filling.
  • Combine cooled milk mixture with beaten eggs. Pour liquid over the bread. Sprinkle with cinnamon.
  • Bake at 350 degrees for 25 to 30 minutes.

1 pound butternut squash, peeled, and cut into 3/4-inch pieces
4 parsnips, peeled, and cut into 3/4-inch pieces
Kosher salt for seasoning
Freshly ground black pepper for seasoning
1 (1 pound) loaf brioche, challah, or sourdough bread, cut or torn into 1-inch pieces
3 cups heavy cream
8 eggs, beaten
3/4 cup brandy
1/4 cup vegetable oil
3 tablespoons brown sugar
2 tablespoons cinnamon
1 tablespoon fresh thyme leaves, chopped

Steps:

  • Set an oven rack in the center of the oven. Preheat the oven to 400 degrees F. Grease a 9 by 13-inch glass baking dish. Set aside. In a large skillet, melt the butter over medium-high heat. Add the butternut squash and parsnips. Season, to taste, with salt and pepper. Cook, stirring occasionally, for 5 minutes until slightly softened. Set aside to cool. Add the bread to a large bowl. In another bowl mix together the heavy cream, eggs, brandy, vegetable oil, brown sugar, cinnamon and thyme. Pour the cream mixture over the bread and toss gently to coat. 3 tablespoons pumpkin pie spice
3 tablespoons vanilla extract
1 1/2 cups mashed sweet potatoes (from 1 large boiled, peeled and mashed sweet potato)
1/3 pound butter, melted
1 quart milk
1 cup (5 ounces) raisins
1 pound stale French bread cubes, cut into ½-by-½-inch cubes
1 1/2 cups pecan pieces

  • Note: Adapted from Zea Rotisserie and Grill in New Orleans. The restaurant bakes the pudding in a 3-inch-deep casserole dish; if using a dish this depth, the baking time can increase by as much as an hour. Sweet potato bread pudding 1. In the bowl of a stand mixer, or in a large glass or nonreactive bowl using a hand mixer, beat the eggs. Slowly beat in the sugar, then beat in the pumpkin pie spice and vanilla extract. Beat in the mashed sweet potatoes until thoroughly combined, then beat in the butter. Add the milk, beating until all of the ingredients are completely and thoroughly incorporated. 1 1/3 cups milk
1 cup chopped pecans
1/2 cup raisins
2 1/2 cups milk
2 1/2 cups half-and-half
1 1/4 cups mashed baked sweet potatoes
1 cup granulated sugar
1/4 cup butter or margarine, melted
1 tablespoon vanilla
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
4 eggs
2 cups powdered sugar
1 cup butter or margarine, softened
1/2 cup orange juice
2 teaspoons cornstarch
4 egg yolks, beaten

Steps:

  • Heat oven to 450°F. In large bowl, stir Bisquick mix and 1 1/3 cups milk until soft dough forms. Drop dough by spoonfuls onto ungreased cookie sheet. Bake 8 to 10 minutes or until golden. Break up biscuits.
  • Butter bottom and sides of rectangular pan, 13x9x2 inches. Spread biscuit pieces in pan. Sprinkle with pecans and raisins. In large bowl, beat all remaining Pudding ingredients with electric mixer on low speed until blended. Pour over biscuits in pan. Cover and refrigerate at least 2 hours but no longer than 8 hours.
  • Heat oven to 350°F. Stir mixture in pan. Bake about 1 hour or until top is golden and toothpick inserted in center comes out clean.
  • Meanwhile, in 2-quart saucepan, heat all Orange Sauce ingredients over low heat 5 to 10 minutes, stirring constantly with wire whisk, until slightly thickened and temperature reaches 165°F for 15 seconds. Serve warm over pudding. Store covered in refrigerator.
