20 Minute Sweet and Spicy Noodles image

These Sweet and Spicy Noodles are a Thai inspired fast, easy weeknight dinner that can be ready and on the table in just 20 minutes!

16 oz linguine rice noodles (or regular pasta)
3 tablespoons soy sauce
3 tablespoons hoisin
4 tablespoons honey
2 teaspoons chili garlic sauce
2 -3 cloves garlic, minced
1/8 - 1/4 teaspoon red pepper flakes (to taste)
1/4 cup sesame oil*
2 cups shredded carrots (approximately 2 large)
1 cup roasted, salted peanuts
1/2 cup fresh cilantro, chopped
2 tablespoons green onion, chopped
Sriracha to taste

Steps:

  • Bring a large pot of water to a boil and cook noodles until al dente, approximately 6 minutes.
  • Meanwhile, prep your veggies / garnishes. In a small bowl mix soy sauce, hoisin, honey, chili garlic paste, and red pepper flakes.
  • A couple of minutes before the noodles are done, in a large saute pan, heat sesame oil over medium heat. Add garlic and cook for 30-60 seconds. Be sure it doesn't burn! Add sauce and stir.
  • When noodles are done, drain and add immediately to pan with sauce and stir until the noodles are well coated.
  • Top with carrots, peanuts, cilantro, green onion, and Sriracha. Mix and serve!

1 teaspoon sesame oil
1 garlic clove, finely chopped
2 teaspoons finely chopped ginger
1/4 cup natural chunky peanut butter
2 tablespoons low-sodium soy sauce
1 tablespoon hoisin sauce
1 tablespoon brown sugar
1 tablespoon rice vinegar
1/2 teaspoon Asian chile paste (or to taste)
6 ounces cooked linguine
1/3 cup sliced scallions

Steps:

  • In a small saucepan, heat oil over medium heat. Add garlic and ginger; cook, stirring, until just soft, 1 minute. Add 3 tablespoons water, peanut butter, soy sauce, hoisin, sugar, vinegar and chile paste; cook, stirring often, until sauce is thick, about 4 minutes. Toss in noodles and scallions; serve at room temperature.

Feel free to add to this versatile noodle dish to make a meal. Sugar snap peas are delicious here! Add rotisserie chicken and vegetables if desired. It does taste best at room temperature. And you can adjust the amount of heat by using less or more sambal.

1 tsp toasted sesame oil
2 clove garlic, minced
1 tsp ginger paste, (or fresh grated ginger)
1/4 c creamy peanut butter
2 Tbsp soy sauce
1 Tbsp hoisin sauce
1 Tbsp brown sugar
1 Tbsp rice vinegar
2 tsp sambal oelek (asian chile paste), to taste
1/4 c canned coconut milk (or to desired consistency)
6 oz linguine
1/3 c chopped green onions
1/3 c crushed peanuts

Steps:

  • 1. While linguine is cooking, in a small saucepan over medium heat, add sesame oil, garlic and ginger and cook, stirring, for 1 minute.
  • 2. Add peanut butter, soy sauce, hoisin, brown sugar, vinegar, sambal and coconut milk. Cook and stir until sauce is well combined and thickened, about 4 minutes.
  • 3. Add more coconut milk to make to your desired consistency and adjust seasonings, then add some of the green onions and pasta and toss.
  • 4. Allow to come to room temperature, then sprinkle with remaining green onions and crushed peanuts and serve.
