Roasted Butternut Squash with Brown Sugar image

This sweet, savory, and simple recipe for roasted butternut with brown sugar makes a wonderful side dish for your holiday or everyday table.

8 cups cubed butternut squash (1-inch)
2 tablespoons extra-virgin olive oil
2 tablespoons brown sugar
1 teaspoon Himalayan sea salt
½ teaspoon ground cinnamon
1 pinch cayenne pepper
¼ cup coarsely chopped candied pecans

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line a large baking sheet with aluminum foil.
  • Combine squash, olive oil, brown sugar, sea salt, cinnamon, and cayenne pepper in a large bowl; toss until squash is evenly coated. Spread squash in an even layer onto the prepared baking sheet.
  • Roast in the preheated oven, turning midway through, until edges are lightly browned and centers are tender, 40 to 45 minutes. Transfer to a serving dish and garnish with nuts.

My new favorite way to make butternut squash! I was recently craving something sweet and salty. Instead of snacking on something I would later regret, I added the flavors to my veggies and it was a huge hit!

1-2 pound(s) butternut squash, cubed
2-3 tablespoon(s) olive oil
2 pinch(es) red pepper flakes (adjust to taste)
1/4 cup(s) honey
1 pinch(es) salt & pepper (adjust to taste)

Steps:

  • Preheat oven to 425 degrees Costco sells organic cubed butternut squash. I use it all the time and its a great time saver.
  • Place cubed squash in your roasting pan and drizzle with olive oil. Bake for about 15 min, then remove from oven to add honey and red pepper. Give a toss and return to oven until tender. (If you prefer a bolder flavor, add more honey and red pepper after about 10 minutes)
  • Roasting time will vary, depending on what size pan you have and how much is in it. My pan was a 9x9 roaster, so it took about 35-40 minutes to cook. If were in a larger pan and more spread out, it would have cooked a little faster. Check periodically to see if the squash is tender.

2 tablespoons olive oil
1 medium onion, chopped
2 tablespoons minced garlic
1 pound ground beef
1 pound cubed butternut squash
1 (16 ounce) package frozen mixed vegetables
2 (10 ounce) cans diced tomatoes with green chile peppers
1 (14.5 ounce) can diced tomatoes
1 cup chicken broth
1 (7 ounce) can chipotle peppers in adobo sauce, chopped
1 (6 ounce) can tomato paste
1 tablespoon chili powder
1 tablespoon ground cumin
1 teaspoon garlic powder
½ teaspoon cayenne pepper, or to taste
1 tablespoon brown sugar, or to taste

Steps:

  • Heat olive oil in a large pot over medium heat. Stir in onion and garlic; cook and stir until onion is translucent, about 5 minutes. Add beef and cook and stir until browned and crumbly, 5 to 7 minutes.
  • Transfer beef mixture to the bottom of a slow cooker and add butternut squash and frozen mixed vegetables. Stir in diced tomatoes with green chilies, diced tomatoes, chicken broth, chipotle peppers in adobo, tomato paste, chili powder, cumin, garlic powder, cayenne pepper, and brown sugar; mix together.
  • Set heat to High; wait to bring to a simmer. Cover, set heat to Low and cook, 8 hours to overnight.

1 large butternut squash, peeled, seeds removed and diced (about 6-8 cups)
1 -2 tablespoons olive oil
1 1/2 teaspoons chili powder
1/2 teaspoon ground cumin
Kosher salt and fresh ground black pepper to taste
1 tablespoon honey
2 tablespoons toasted pepitas
Chopped cilantro (optional)

Steps:

  • Preheat 400° F. and line a baking sheet with foil. Place the diced butternut squash onto the baking sheet and drizzle with olive oil. Sprinkle on the chili powder, cumin, salt and pepper. Toss everything together with your hands until coated.
  • Roast for 20-25 minutes or until the squash is tender. Toss the squash halfway during the cooking time. Remove the squash from the oven, drizzle with honey and toss to coat.
  • Put the squash into a serving bowl and top with toasted pepitas and chopped cilantro.

Spicy Caramelized Squash With Lemon and Hazelnuts image

This ultimate sweet-and-salty squash recipe can be done with most hearty orange vegetables, like sweet potatoes or even carrots (no need to peel any of these). The vegetables are tossed simply with olive oil and something sticky, like maple syrup or honey, and roasted until tender and caramelized. To add some texture back into the mix, the vegetables are finished with toasted nuts and plenty of fresh lemon zest for some perkiness.

1 (3- to 4-pound) winter squash, such as kabocha, red kuri or butternut
1/3 cup olive oil, plus more for drizzling
1/4 cup maple syrup, plus more for drizzling
1 tablespoon hot smoked paprika
2 teaspoons red-pepper flakes
Kosher salt and freshly ground black pepper
3/4 cup hazelnuts, coarsely chopped (no need to remove the skins)
Flaky sea salt
1 lemon

Steps:

  • Heat oven to 425 degrees. Cut the squash in half lengthwise. Remove pulp and seeds, if you like. Continue to cut squash into 1 1/2-inch wedges.
  • Toss squash on a rimmed baking sheet with olive oil, maple syrup, paprika and red-pepper flakes. Season with kosher salt and pepper, and roast, turning each piece once, until both sides are evenly browned and squash is completely tender, 40 to 45 minutes.
  • Meanwhile, toast hazelnuts in a small skillet over medium heat, tossing frequently until they're evenly browned, about the color of a good piece of toast, and smell almost like popcorn, 4 to 6 minutes.
  • Remove from oven and transfer squash to a large serving platter. Drizzle with olive oil and a bit more maple syrup. Sprinkle with hazelnuts, flaky salt and more black pepper. Zest lemon over everything and halve lemon to squeeze over before serving.
