Great flavor! Easy to prepare. Good for potlucks....just keep warm in a crockpot. Serve over hot cooked rice.

2 lbs chicken breasts, cut into bite-size pieces
1 (8 ounce) bottle Catalina dressing
1 (14 ounce) can whole berry cranberry sauce, NOT JELLIED
1 (1 ounce) envelope dry onion soup mix
1/4 cup brown sugar

Steps:

  • In a 13" x 9" baking dish, place chicken pieces.
  • In a small bowl, mix together Catalina salad dressing, whole-berry cranberry sauce, onion soup mix and brown sugar until smooth. Pour evenly over chicken pieces.
  • Cover and bake at 350 for about 30-40 minutes.
  • Serve over hot cooked rice.

Quick and easy meal when your in a hurry. I know the idea of cranberries and BBQ sauce together does not sound very good but these 2 flavors really do compliment each other in this recipe. I have also used pork when making this dish.

2 lbs boneless skinless chicken breasts, cut into 1/2 inch pieces
1 teaspoon cooking oil
1/2 teaspoon salt
1/4 teaspoon pepper
1 (8 ounce) can pineapple tidbits, liquid drained and reserved
1 teaspoon cornstarch
1/2 cup barbecue sauce
1 cup whole berry cranberry sauce
1 medium green pepper, cut into strips
rice or chow mein noodles

Steps:

  • Combine pineapple liquid and cornstarch.
  • Stir in sauces and set aside.
  • Heat oil in a large fry pan over high heat.
  • Add chicken, salt, and pepper.
  • Stir-fry until no longer pink.
  • Add peppers and pineapple tidbits.
  • stir fry 2 minutes longer.
  • Stir the cornstarch mixture and add to chicken.
  • Cook and stir constantly, over med heat until thickened.
  • Server over rice or chow mien noodles.

4 cups shredded cooked chicken
1 (8 ounce) can pineapple chunks in juice
1 medium green bell pepper, cut into bite-size strips
1 medium red bell pepper, cut into bite-size strips
2 cups cooked white rice
2 tablespoons cornstarch
2 tablespoons packed brown sugar
1 (16 ounce) can whole berry cranberry sauce
3 tablespoons frozen orange juice concentrate, thawed
3 tablespoons rice vinegar or 3 tablespoons cider vinegar
2 tablespoons dry sherry
2 tablespoons soy sauce
1/2 teaspoon ground ginger
1/4 cup slivered almonds

Steps:

  • Place chicken in a large mixing bowl.
  • Drain the pineapple; reserve the juice (you should have about 1/3 cup juice).
  • Add pineapple, bell pepper strips, and rice to the chicken; stir to combine.
  • In a saucepan, combine the cornstarch and brown sugar; add in reserved pineapple juice, the cranberry sauce, orange juice concentrate, vinegar, sherry, soy sauce, and ginger.
  • Cook and stir over medium heat until thickened and bubbly.
  • Add sauce to chicken mixture; stir to coat.
  • Transfer mixture to an ungreased 2-quart casserole dish.
  • Bake, covered, at 350° for 30 minutes.
  • Sprinkle with almonds; bake, uncovered, 5 minutes.
