This turkey salad is a blend of diced turkey and colorful veggies, all tossed in a savory creamy dressing. A super easy and delicious way to use up leftover turkey with plenty of options to customize the flavors!

4 cups cooked turkey (diced)
1/2 cup celery (finely chopped)
2 tablespoons red onion (finely chopped)
2 tablespoons fresh parsley leaves (finely chopped)
1/2 cup mayonnaise
2 tablespoons sour cream
2 teaspoons lemon juice
1 teaspoon Dijon mustard
1/2 teaspoon sugar
salt and pepper to taste

Steps:

  • Place the turkey in a large bowl.
  • Add the celery, red onion and parsley to the bowl.
  • In a medium bowl, whisk together the mayonnaise, sour cream, lemon juice, mustard, sugar, salt and pepper.
  • Pour the dressing over the turkey mixture. Toss gently to coat, then serve.

2 cups cooked turkey or chicken, shredded or cut in chunks
2 stalks celery (about 1 cup), chopped
1/4 cup fresh parsley, chopped
1 cup dried cranberries
1 cup pecans, chopped
1/2 cup mayonnaise
1/2 cup plain yogurt (unsweetened and unflavored)
salt to taste
1/2 tsp ground black pepper
1 tsp dry thyme
1 tsp dry marjoram
3/4 cup purple cabbage, finely chopped

Steps:

  • Add all ingredients to a large bowl and mix thoroughly. Refrigerate or serve right away. Can be made up to 3 days ahead of using. Can be stored up to 3 days after making.
  • Serve over a bed of lettuce, on bread or crackers, or by itself.
