Lightly seasoned with just a touch of sweetness, these breakfast sausages are great addition to your breakfast plate. I make these in bulk for a quick grab-and-go weekday meal. They can be frozen, just thaw overnight in the fridge.

aluminum foil
1 serving cooking spray
1 pound lean ground pork
2 tablespoons maple syrup
1 teaspoon finely chopped garlic
1 teaspoon finely chopped fresh parsley
1 teaspoon dried marjoram
1 teaspoon salt
½ teaspoon freshly ground black pepper
¼ teaspoon dried thyme
¼ teaspoon ground paprika

Steps:

  • Set one oven rack to the middle position and another one 6 inches from the broiler. Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil and spray lightly with cooking spray.
  • Combine ground pork, maple syrup, garlic, parsley, marjoram, salt, pepper, thyme, and paprika in a bowl; mix gently until well combined. Divide mixture into 6 equal portions and form into patties. Place on the prepared baking sheet and press down with the palm of your hand to flatten.
  • Bake in the preheated oven on the middle rack for 8 minutes. Remove from oven and turn on the oven's broiler on low.
  • Broil sausage patties on the top rack until they are golden brown, about 5 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

1/4 cup buttermilk
1 tablespoon finely chopped onion
2 teaspoons rubbed sage

1/8 teaspoon garlic powder
1/8 teaspoon dried oregano

Steps:

  • In a bowl, combine all ingredients, mixing lightly but thoroughly. Shape into eight 1/2-in.-thick patties. Refrigerate 1 hour., In a large cast-iron or other heavy skillet, cook patties over medium heat until a thermometer reads 160°, 6-8 minutes on each side.

2 large sweet potatoes, peeled and cut into 1/2-inch pieces.
2 tablespoons olive oil, divided
1/2 teaspoon salt
1 pound bulk pork sausage
1 large tart apple, peeled and chopped
1 large carrot, cut into 1/2-inch pieces
1/2 teaspoon dried sage leaves
1/2 teaspoon ground cinnamon
1/2 teaspoon pepper
1/8 teaspoon pumpkin pie spice

Steps:

  • In a large microwave-safe bowl, combine potatoes, 1 tablespoon oil and salt. Microwave, covered, on high for 6-8 minutes or until tender, stirring every 2 minutes., Meanwhile, in a large skillet, cook sausage over medium heat 6-8 minutes or until no longer pink, breaking into crumbles; remove with a slotted spoon., In same skillet, heat remaining oil over medium-low heat. 3 cloves garlic, chopped
3 tablespoons chopped parsley leaves
1/4 cup grated Parmesan, Parmigiano-Reggiano or Romano
1 teaspoon fennel seeds, 1/3 palm full
1 teaspoon coarse black pepper, 1/3 palm full
3/4 teaspoon salt, eyeball it

2 pounds hot sausage
2 pounds sweet sausage
1/2 cup olive oil
8 red onions, cut julienne
6 garlic cloves, chopped
4 red bell peppers, cut julienne
4 green bell peppers, cut julienne
1/2 bunch basil leaves, chopped
1 bunch scallions, chopped

Steps:

  • Place sausage on a hot grill and cook until done. This may take about 45 minutes.
  • Heat oil in a saute pan placed on grill. Add red onions, garlic, red bell peppers, and green bell peppers and cook until translucent. Add basil and scallions and cook for a few minutes. 1 cup uncooked instant or quick cooking oatmeal
¼ teaspoon ground cinnamon
½ teaspoon white sugar
1 tablespoon canola oil
1/4 (1-pound) package Jimmy Dean Premium Pork Sausage
1 cup lightly sauteed spinach
1 large egg
2 teaspoons maple syrup

Steps:

  • In a small pot with a lid, bring the water to a boil with a pinch of salt.
  • Stir in oats and reduce heat to low. Cover and let cook until the desired consistency is reached.
  • Add cinnamon and sugar, and stir.
  • In a small frying pan, heat 1 tablespoon of oil over medium-high heat for about 30 seconds. Add Jimmy Dean sausage and cook 8 to 10 minutes until browned, stirring frequently to break up the sausage into small pieces, then drain. Remove the sausage and set aside.
  • Add the greens to the frying pan and saute for about 1 minute or until they begin to wilt. Remove from heat.
  • Add the greens and sausage to your bowl of oatmeal, plus an egg cooked to your liking, and maple syrup to your taste. Serve immediately.
