Family recipe straight from Sweden. This is a favorite dish any time that I make it and is often requested by my foodie friends. Serve with mashed potatoes. Enjoy!

1 pound ground beef
½ pound bulk pork sausage
¾ cup bread crumbs
½ onion, diced
½ cup milk
1 egg
1 tablespoon chopped fresh parsley
1 ½ teaspoons salt
1 teaspoon Worcestershire sauce
⅛ teaspoon ground black pepper
1 teaspoon vegetable oil, or as needed
2 cups boiling water
¾ cup sour cream
½ cup all-purpose flour
1 teaspoon paprika
⅛ teaspoon ground black pepper

Steps:

  • Mix beef, sausage, bread crumbs, onion, milk, egg, parsley, salt, Worcestershire sauce, and pepper in a large bowl. Form into meatballs.
  • Heat oil in a skillet over medium-high heat. Pan-fry meatballs in batches, turning as needed, until browned and heated through, 6 to 8 minutes.
  • Mix boiling water, sour cream, flour, paprika, and pepper together in a deep saucepan over low heat. Add the meatballs and let simmer until thickened and heated through, 15 to 20 minutes.

My Swedish grandma has been making these meatballs forever, and they are my absolute favorite meal. I hope you like them as much as I do.

4 slices white bread
1/2 cup milk
2 eggs
1 lb ground beef
3 tablespoons parmesan cheese, grated
1 teaspoon dried parsley flakes
1/4 teaspoon dried oregano, crushed
1 teaspoon salt
1 dash black pepper
1/3 cup vegetable oil
1/2-1 lb fine egg noodles, cooked (Mrs. Grass recommended)
3 tablespoons salted butter
1/4 cup flour
1 (10 ounce) can beef broth
1/2 cup half-and-half
salt and pepper
1/4 teaspoon dill weed

Steps:

  • For the meatballs, tear bread into small pieces. Add the milk and let soak several minutes (stir around).
  • Add eggs and beat until mixed.
  • Add bread mixture to ground beef along with parmesan, parsley flakes, oregano, salt, and pepper.
  • Roll mixture into small balls 1 to 1 ½ inches in diameter.
  • Place 1/3 cup oil in a pan and sauté meatballs until brown.
  • Remove the meatballs from pan, discard the oil.
  • For the sauce, in the same pan over low heat, melt the butter and whisk in the flour and let cook for a few minutes but don't let it brown (should be glossy).
  • Whisk in broth and cream and cook stirring constantly until thick and satiny.
  • Add salt and pepper to taste. Stir in dill.
  • Add meatballs to sauce and simmer about 10 minutes, turning several times.
  • Serve over noodles.

1/2 cup chopped onion
1 lb ground beef
1 teaspoon salt
2 teaspoons sugar
1/2 teaspoon allspice
1/2 teaspoon nutmeg
1 egg, broken
1/2 cup milk
1/2 cup plain breadcrumbs
3 tablespoons flour
1 teaspoon sugar
1 dash pepper
1 cup water
1 cup heavy cream
1/2 cup milk

Steps:

  • Saute onion in oil/cooking spray. Set aside.
  • Mix ground beef, 2 tsp sugar, allspice, nutmeg & onions.
  • Mix egg with bread crumbs and 1/2 C milk until absorbed.
  • Add egg mixture to the meat mixture.
  • Form meat into 1" balls.
  • Fry meatballs in pan that onions were cooked inches.
  • Place cooked meatballs in 8x8 baking dish.
  • Heat frying pan with fat from meatballs to medium heat.
  • Add flour and slowly add 1 C water, 1 C heavy cream, 1/2 C milk, 1 tsp sugar and dash of pepper.
  • Stir constantly until it gets bubbly.
  • Pour cream mixture over meatballs.
  • Bake in oven at 350 degrees for 20 minutes.
  • Serve over rice.

This Swedish meatballs recipe has been passed down from a Swedish grandmother to her beautiful granddaughter. They are the best Swedish meatballs I've ever tasted! Even better than Ikea®! Easy to make, full of flavor, swimming in the most amazing creamy gravy sauce!

½ cup milk
⅓ cup dry bread crumbs
2 tablespoons heavy cream
1 teaspoon heavy cream
1 large egg
1 large clove garlic, minced
¼ teaspoon salt
¼ teaspoon ground black pepper
¼ teaspoon ground white pepper
¼ teaspoon ground allspice
1 pound ground beef
½ pound ground pork
½ medium onion, minced
2 tablespoons finely chopped fresh parsley
1 tablespoon salted butter
2 teaspoons olive oil
⅓ cup salted butter
¼ cup all-purpose flour
1 cup vegetable broth
1 cup beef broth
1 cup heavy cream
2 teaspoons soy sauce
1 teaspoon Dijon mustard
salt and ground black pepper to taste

Steps:

  • Mix milk, bread crumbs, 2 tablespoons plus 1 teaspoon cream, egg, garlic, salt, black pepper, white pepper, and allspice together in a large bowl. Set aside to soak until bread crumbs have absorbed the milk, at least 10 minutes.
  • Mix in beef, pork, onion, and parsley, using your hands to mix until well combined. Roll into about 24 small meatballs or 16 larger meatballs.
  • Heat butter and oil in a pan over medium-high heat. Fry meatballs in small batches until cooked through and browned on all sides, 10 to 12 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (71 degrees C). Transfer to a warm plate and cover with foil.
  • Add butter for gravy sauce to the pan juices. Melt over medium heat. Whisk in flour. Cook and whisk until flour dissolves and turns brown, about 5 minutes. Pour in vegetable broth, beef broth, cream, soy sauce, and Dijon. Bring to a simmer. Season with salt and pepper and mix to combine all of the flavors together. Continue to simmer until thickened, 5 to 7 minutes.
  • Add meatballs to the gravy. Toss gently to coat and serve.

When I was growing up my mother's side of the family would get together every Christmas Eve at my Swedish Grandmother house in NJ. My Grandma is long gone now, but whenever I make these it brings me right back to my childhood.

1 egg
1 lb lean ground beef
1/2 lb ground pork
1 medium onion, finely chopped
1/2 c plain breadcrumbs
1 c skim milk
1/2 tsp freshly grated nutmeg
1 1/2 tsp kosher salt
1/2 tsp freshly ground pepper
1/3 c flour
2 Tbsp margarine
1 c light cream or milk
1 Tbsp flour
1 c beef broth, reduced sodium

Steps:

  • 1. Mix milk and dry bread crumbs, set aside. Beat egg in bowl, add beef, pork, onion, bread crumbs (which have been mixed with dry bread crumbs), nutmeg, salt and pepper, mix thoroughly, Shape into balls 1" in diameter, roll balls in flour, in large skillet add 2 Tbls margarine and brown meatballs well on all sides, browning time about 10 minutes. Do not cook fully when browning, and brown in batches, so as not to crowd the pan.
  • 2. Take Tbls flour and gradually blend in broth and cream. Stir into skillet and simmer together with meatballs until sauce is thickened and meatballs are cooked through. Serve with egg noodles, rice, or pasta.

Our family's traditional Christmas recipe, frequently doubled and kept warm in a crock pot. Worth the effort, and the meatballs are even better the next day! Reserve brown gravy and add sour cream to it the day you serve the leftovers.

2 slices day-old white bread, crumbled
½ cup heavy cream
1 teaspoon butter
1 small onion, minced
⅔ pound ground beef
⅓ pound finely ground pork
1 egg
1 tablespoon brown sugar
1 teaspoon salt
¼ teaspoon ground black pepper
¼ teaspoon ground nutmeg
¼ teaspoon ground allspice
⅛ teaspoon ground ginger
1 tablespoon butter
¼ cup chicken broth
3 tablespoons all-purpose flour, or as needed
2 cups beef broth, or as needed
½ (8 ounce) container sour cream

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place the bread crumbs into a small bowl, and mix in the cream. Allow to stand until crumbs absorb the cream, about 10 minutes. While the bread is soaking, melt 1 teaspoon of butter in a skillet over medium heat, and cook and stir the onion until it turns light brown, about 10 minutes. Place onion into a mixing bowl; mix with the ground beef, ground pork, egg, brown sugar, salt, black pepper, nutmeg, allspice, and ginger. Lightly mix in the bread crumbs and cream.
  • Melt 1 tablespoon of butter in a large skillet over medium heat. Pinch off about 1 1/2 tablespoon of the meat mixture per meatball, and form into balls. Place the meatballs into the skillet, and cook just until the outsides are brown, about 5 minutes, turning the meatballs often. Insides of the meatballs will still be pink. Place browned meatballs into a baking dish, pour in chicken broth, and cover with foil.
  • Bake in the preheated oven until the meatballs are tender, about 40 minutes. Remove meatballs to a serving dish.
  • To make brown gravy, pour pan drippings into a saucepan over medium heat. Whisk the flour into the pan drippings until smooth, and gradually whisk in enough beef broth to total about 2 1/2 cups of liquid. Bring the gravy to a simmer, whisking constantly until thick, about 5 minutes. Just before serving, whisk in the sour cream. Season to taste with salt and black pepper. Serve the gravy with the meatballs.
