Breaded pork chops with mashed potatoes and salad (preferably a sauerkraut salad) is served regularly for Sunday dinner in Poland. Pound the meat as thinly as you can for best results.

2 boneless pork chops
salt and freshly ground black pepper to taste
1 tablespoon all-purpose flour
1 egg
5 tablespoons bread crumbs
2 tablespoons vegetable oil, or as needed

Steps:

  • Place pork chops between 2 sheets of heavy plastic on a solid, level surface. Firmly pound with the smooth side of a meat mallet, turning occasionally, until very thin. Season with salt and pepper.
  • Pour flour onto a large plate. Whisk egg in a wide, shallow bowl. Place breadcrumbs in a separate shallow bowl.
  • Dredge chops with flour. Dip in whisked egg. Coat with bread crumbs on both sides. Shake off excess coating.
  • Heat oil in a large skillet over medium-high heat. Add breaded chops; cook until golden brown, about 5 minutes per side.

1/2 teaspoon pepper
1/2 teaspoon ground ginger
2 tablespoons flour
2 tablespoons oil

  • In heavy skillet, brown chops lightly on both sides in hot oil.

4 pork chops
2 tablespoons oil
garlic salt
salt and pepper
1 onion, finely minced
6 slices Roquefort cheese (generous slices)

Steps:

  • Rub a little gqrlic salt into the meat. Season with salt and pepper. Saute the chops in the oil until well-browned. Remove to a hot platter, and pour on the juice from the pan.
  • On each chop, put a heaping teaspoonfull of the onion. Over that, put on the cheese (don't experiment with other cheeses).
  • Put in a hot (400 degree) oven for about 10 minutes. The cheese will melt; the cheese and onion will produce a very tasty sauce.

3 large sweet potatoes (about 1 1/2 pounds), peeled and cut into 3/4-inch pieces
2 poblano chile peppers or green bell peppers, roughly chopped
2 tablespoons extra-virgin olive oil
Kosher salt and freshly ground pepper
Cooking spray
1/4 cup mayonnaise
1/4 cup milk
1 tablespoon chili powder
2 cups panko (Japanese breadcrumbs)
1 1/2 pounds pork cutlets, about 1/4 inch thick
Salsa verde and lime wedges, for serving (optional)

Steps:

  • Position racks in the upper and lower thirds of the oven and preheat to 425 degrees F. Toss the sweet potatoes and peppers with the olive oil, 1/2 teaspoon salt, and pepper to taste on a rimmed baking sheet; spread in a single layer. Bake on the lower oven rack until tender and charred in spots, about 35 minutes. Meanwhile, set a wire rack on another rimmed baking sheet and coat with cooking spray. Stir the mayonnaise, milk, chili powder and 1 teaspoon salt in a large bowl. Place the panko in another large bowl. Add the pork to the mayonnaise mixture and turn to coat. One at a time, transfer each cutlet to the bowl of panko and turn to coat; arrange on the wire rack. Coat both sides of the cutlets generously with cooking spray. Bake the cutlets on the upper oven rack until golden brown and cooked through, 12 to 18 minutes. Serve the pork with the roasted vegetables, salsa verde and lime wedges.
