Quick and Easy Black Beans and Rice image

This Black Beans and Rice recipe uses canned beans as a shortcut and is SO quick and easy, vegan, healthy, and protein-packed, with phenomenal fresh flavor and texture. The whole family will love it!

1 cup short grain white rice
2 cups water
1/2 teaspoon kosher salt
juice of one lime
2 tablespoons fresh cilantro (roughly chopped)
1 tablespoon extra-virgin olive oil
1 small onion (finely diced)
28 oz. can black beans (drained and rinsed)
1 teaspoon cumin
1/2 teaspoon kosher salt
1 cup water
juice of one lime
2 tablespoons fresh cilantro (roughly chopped)

Steps:

  • To make the rice, bring water to a boil, add rice (1 cup) and kosher salt (1/2 teaspoon), stir, and simmer until cooked (about 15-20 minutes). When done, fluff with a fork, stir in the cilantro and lime juice, and adjust seasonings if necessary.
  • While the rice is cooking, make the beans. Sauté the diced onion in the olive oil (1 tablespoon) over medium-high heat in a medium pot until softened and beginning to brown (about 2-3 minutes).
  • Add drained and rinsed black beans, cumin (1 teaspoon), kosher salt (1/2 teaspoon), and water (1 cup). Stir, bring to a boil, and simmer uncovered for about 10 minutes.
  • Turn off the heat. Use a potato masher to mash the beans a few times, thickening the mixture, but leaving most of the beans intact. If you don't have a potato masher, you can use a fork on the side of the pot.
  • Stir in the lime juice and fresh chopped cilantro (2 tablespoons) and season with more salt if necessary.
  • Serve the beans on top of the rice as a side or meal.

1/4 cup olive oil
1 medium onion, minced
4 cloves garlic, minced
1 jalapeno, seeded and minced
2 teaspoons kosher salt
1 pound dry black beans, sorted for pebbles and rinsed
2 sprigs epazote or Mexican oregano
1/2 cup chopped fresh cilantro
Juice of 1 or 2 limes
4 cups cooked white rice
1/2 cup crumbled Cotija cheese

Steps:

  • In a 6-quart pressure cooker over medium-high heat, add the olive oil, onions, garlic, jalapeno and salt. Saute until the onions are translucent, 4 to 5 minutes. Add the beans, epazote and 6 cups water; stir well, and then lock the lid (following the manufacturer's instructions). Once the beans come up to pressure, turn the heat down to medium to maintain pressure; cook for 25 minutes. Remove from the heat and let rest for 5 minutes, then release the pressure. Remove the epazote, and taste and adjust the seasoning as needed.
  • Just before serving, fold the cilantro and lime juice into the cooked rice.
  • Garnish beans with the Cotija and serve alongside the rice.

1 onion, chopped
2 garlic cloves, minced
1 jalapeno pepper, seeded, chopped
1 red pepper, chopped
1 1/2 cups low sodium chicken broth
1 teaspoon cumin
1 teaspoon garlic powder
1 teaspoon crushed red pepper flakes
1/2 teaspoon cilantro
1 1/2 teaspoons oregano
1 1/2 tablespoons Splenda sugar substitute
2 (3 1/2 cup) cans canned black beans, semi drained
1 (14 1/2 ounce) can whole kernel corn, drained
1 (14 1/2 ounce) can diced tomatoes

1 small onion, chopped

2 cups water
1 (15.5 ounce) can black beans
1 teaspoon ground cumin
1 beef bouillon cube
1 cup rice
½ teaspoon Creole seasoning, or to taste
½ teaspoon dried cilantro

Steps:

  • Heat olive oil in a saucepan over medium heat. Cook and stir onion and garlic in hot oil until softened, 5 to 7 minutes.
  • Stir water, black beans, cumin, and beef bouillon cube into the onion and garlic mixture; bring to a boil, add rice, cover, and simmer until the rice is tender and the moisture is absorbed, about 20 minutes.
  • Gently stir Creole seasoning and cilantro into the beans and rice.

1 lb dry black beans
1/2 to 1 lb salt pork, or ham, diced
1 medium onion, diced
2 clove garlic, minced
1 medium celery stalk, diced
1 3/4 tsp salt
1/4 tsp crushed red pepper
1 1/2 c uncooked rice
2 Tbsp chopped parsley

Steps:

  • 1. About 4 hours before serving, rinse beans in running cold water and discard any stones or shriveled beans. In an 8-qt. Dutch oven over high heat, bring beans and 8 cups water to a boil; cook 3 minutes. Remove from heat; cover and let stand for 1 hour.
  • 2. After 1 hour, drain and rinse beans; set aside. In the same Dutch oven over medium heat, cook salt pork or ham until lightly browned. Add onion, celery, and garlic, and cook until tender, stirring occasionally.
  • 3. Return beans to Dutch oven; add salt, red pepper, and 5-1/2 cups water. Over high heat, bring to a boil. Reduce heat, cover and simmer about 2 hours or until beans are tender.
  • 4. Prepare rice as directed on package. To serve, spoon bean mixture into a deep dish. Arrange cooked rice around beans. Garnish with chopped parsley. Add a dollop of sour cream if desired.
  • 5. NOTE: Beans may be soaked in 8 cups water overnight if you don't have time to parboil. After they have soaked overnight, proceed to direction #2.

4 bay leaves
1 tablespoon ground cumin
2 cups long-grain white rice
4 (14-ounce) cans black beans, drained and rinsed
2 (14-ounce) cans diced tomatoes with green chiles drained
2 cups water
1/4 cup apple cider vinegar
Kosher salt and freshly ground black pepper

Steps:

  • Heat a large pot over medium-high heat and add the oil. Stir in the onions, peppers, garlic, bay leaves and cumin. Stir and cook for 8 minutes.
  • Stir in the rice, black beans, tomatoes, water, vinegar and salt and pepper. Bring to a boil, cover and reduce heat to low. Cook for about 40 minutes or until the rice is tender. Serve hot.
